MAID-RITE SANDWICHES
This is a very TASTY, JUICY, LOOSE MEAT sandwich filling. In reading thru this recipe you will notice the use of both fresh and dried onion.....please use the onion type specified in the recipe step you are on for maximum flavor. Although traditionally served on hamburger buns, this filling can be messy for young children trying to keep filling in. Try using hotdog rolls for the youngsters. Mustard & Onions are the seasonings of choice for this recipe. Added 11/12/2008 Maid Rite sandwiches are made across the country. One would think as a franchise all would be made and served the same way. This is not the case.... we have Maid Rites being served that are boiled or steamed, with water, chicken broth, beef broth, coke, or beer. There are those that add vinegar or sugar to the mix. Some top with mustard, onions, ketsup, and pickles......well, move over McDonalds! This is the way I made my Maid Rite sandwiches....faux or real....the name stands. As they say,,,variety is the spice of life. You can make changes to suite your tastes, share your changes here with me, I will try them all...unless we have some bazarre ingredients. Chocolate syrup will not intice me no matter how much I love chocolate.

Steps:
- Soak the dried onions in the water.
- Crumble ground beef into a hot skillet and cook over medium high heat.
- When the soaked onions have begun to soften and expand, add it and any remaining water (if any) to the beef.
- Stir frequently as the meat browns, using a wooden spoon to break the meat into small crumbles.
- When the meat has browned, add the chicken broth, salt and pepper.
- Cook until liquid is ALMOST gone, about 10 minutes.
- Serve meat on buns with mustard and fresh chopped onions.
- ENJOY!

- Slice onion into med slices, spread mayonnaise or miracle whip onto both slices of bread add the salt and the pepper to the mayonnaise add onions and enjoy.
ONION SANDWICH
James Beard took this recipe from his colleagues Irma and Bill Rhode over 60 years ago, but there's something delicate, fresh and unfussy about the sandwich even now. There isn't much to it, so each component really matters: Slice the onions thinly and evenly, season well, and be gentle so you don't squish the bread as you press each sandwich shut. Rolling the edge of the sandwich in chopped parsley (or a mix of parsley and other fresh herbs), gives it a retro styling touch, but it's crucial for flavor, too.

Steps:
- Using a 1 1/2-inch cutter, cut 24 rounds from the bread and arrange in 12 pairs. Spread each round with mayonnaise.
- Slice the onions through the equator, evenly and thinly, and put a slice that fits the bread on half the bread rounds. Salt lightly, then cover with a second round of bread.
- When sandwiches are assembled, spread remaining mayonnaise on a piece of parchment paper, and have the chopped herbs ready in a bowl.
- Hold a sandwich, and roll the edge in mayonnaise, then in the chopped herbs, covering the edge. Cover and chill for about 1 hour and up to 6 hours before serving.
MAIDA HEATTER'S ONION SANDWICHES
These are delicious little "hors d'oeuvre" sandwiches. Not only do they taste good, but they look beautiful too! These are perfect to serve at a party, luncheon, etc.

Steps:
- Take your bread slices and butter each of them on one side, and then put a thin layer of onions over the butter on 8 of the slices.
- Sprinkle a small amount of sea salt over the onions just to lightly season them, and then put the sandwiches together by topping with the remaining bread slices.
- Using a 1 3/4 inch round cookie cutter, cut out 2 small rounds from each sandwich, making 16 small sandwiches in all (discard trimmings, or use for whatever you wish).
- Spread some of the mayonnaise around the outside rim of each sandwich, and then roll the rims in your finely chopped parsley to coat completely.
- Serve these immediately, or cover and refrigerate (no more than) a few hours before serving.
