Cinnamon Cream Cheese Cookies are a delightfully soft, fluffy cookie coated in cinnamon sugar. Serve these cookies for a light dessert, as a Christmas cookie, for a party or shower, or just to enjoy with a mug of tea in the afternoon.

1/2 cup (1 stick) butter (softened)
4 ounces cream cheese (softened)
1 1/2 cup powdered sugar
1 egg
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 3/4 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon ground cinnamon

Steps:

  • In a large mixing bowl, use an electric mixer to cream together the butter and cream cheese until light and fluffy. Add the powdered sugar and mix on low speed until combined.
  • Add the egg, baking powder, and vanilla extract and mix just until combined.
  • Mix in the flour, just until incorporated. Cover the bowl with plastic wrap and place in the refrigerator to chill the dough for 1 hour.
  • Heat the oven to 375ºF. Line cookie sheets with parchment paper.
  • Scoop the cookie dough into 1-inch dough balls and roll between your hands to create smooth dough balls. In a small bowl, combine the granulated sugar and cinnamon. Roll each dough ball in the cinnamon-sugar mixture, then place on the prepared cookie sheets with at least 1-inch of space between each.
  • Bake at 375ºF for 7-8 minutes, just until set. Do not over-bake.
  • Remove the cookies from the cookie sheet and cool on a wire cooling rack.

Freezing the cream cheese before stirring it into the dough makes it easier to cut into clean pieces and keeps the chunks from disintegrating when shaping the dough into balls.

2 3/4 sticks (1 cup plus 6 tablespoons) unsalted butter, at room temperature
1 teaspoon pure vanilla extract or vanilla bean paste
One 8-ounce package cream cheese, 6 ounces at room temperature, 2 ounces frozen
1 1/4 teaspoons kosher salt
4 cups confectioners' sugar, sifted
1 large egg yolk
3 1/2 cups all-purpose flour, plus more for flouring (see Cook's Note)
2 tablespoons whole milk, plus more if needed
Very finely grated lime zest or finely minced cranberries, for garnish, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.
  • Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. Remove the frozen cream cheese from the freezer and chop into 1/4-inch cubes. Add the cubes to the dough, quickly stirring with a rubber spatula to evenly incorporate them into the dough. Refrigerate the dough for 1 hour.
  • Using a 1-ounce ice cream scoop or 2 tablespoons, scoop 12 portions of dough, roll into balls and transfer to the prepared baking sheet, spacing them evenly apart. Lightly flour the bottom of a 1/2-cup measuring cup and use it to flatten each cookie into a disk about 1/2 inch thick, re-flouring the cup after each cookie.
  • Bake, rotating the baking sheet halfway through, until the cookies look set but are still pale and barely brown on the bottom, 20 to 24 minutes. Cool the cookies on the baking sheet for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining cookie dough.
  • Meanwhile, combine the remaining 2 ounces room-temperature cream cheese, 2 cups sugar and 1/4 teaspoon salt in a medium bowl and beat with an electric mixer on low speed until the mixture forms a thick paste. Add the milk and stir slowly until a thick glaze forms.
  • When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.

Imagine taking a bite of the edge of a cheesecake, with a chunky piece of crust on your fork and a thin layer of the sweet-and-sour cream cheese filling gracing the crust. Now imagine having that flavor in a bite-size version that you can pop into your mouth by hand. These sandwich cookies are like mini inverted cheesecakes (by "inverted" I mean more crust than filling). The cream cheese icing, which adds a tanginess to the cookie, can be made with or without cinnamon. The sugar in the cream cheese icing acts as a natural preservant, so the cookies can be left at room temperature in an airtight container for a week.

Yield makes about 2 dozen cookies

Number Of Ingredients 7

1 recipe Graham Cracker Dough (page 86)
4 tablespoons (1/2 stick) unsalted butter, at room temperature
4 ounces (one-half 8-ounce package) cream cheese, at room temperature
1/2 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350˚F. Line two sheet pans with parchment paper or spray lightly with nonstick cooking spray.
  • Remove the dough from the refrigerator and let it sit at room temperature for about 15 minutes. (The dough should be soft enough to roll without cracking, but not yet sticky.)
  • Place the dough on a piece of parchment paper or on a lightly floured flat surface. Lightly flour the top of the disk and begin rolling the dough (see Rolling Dough, page 10). Lift and rotate the dough between each roll to prevent it from sticking. Repeat the process until the dough is between 1/8 and 1/4 inch thick.
  • Using a 1 1/2-inch round cookie cutter, cut out cookies and place them about 1/2 inch apart on the prepared pans. Repeat until the pans are full. (The remaining dough can be kept in the refrigerator until ready to be used.)
  • Bake for 12 to 15 minutes, rotating the pans once halfway through, until the edges of the cookies are firm. Remove the cookies from the oven, let them cool slightly on the pans, then transfer them to a wire rack to cool to room temperature.
  • While the cookies are cooling, beat the butter and cream cheese together in a standing mixer fitted with a paddle attachment on high speed until light and smooth, about 3 minutes. Add the confectioners' sugar and mix on low speed until incorporated, about 30 seconds.
  • Add the vanilla, cinnamon, and salt and mix until the icing is smooth, about 2 minutes.
  • On a separate sheet pan or work surface, place half the cookies bottom side up. Fill a pastry bag with icing (no tip necessary) and pipe about 1 teaspoon of icing onto each cookie bottom.
  • Take the remaining cookies and gently press one on top of each iced cookie, bottom side down, to form a sandwich. Allow to set at room temperature for approximately 30 minutes before serving or packaging.
  • Serve the set cookies immediately, or keep them in an airtight container at room temperature for up to 1 week.
  • For this recipe, the Sandwich Cookies (page 58), or the S'mores Cookies (page 91), the filling can also be spread onto the bottom half of the cookies using an offset spatula. It will not be as neat or even as when you use the piping technique, but it is a good alternative if you don't have a pastry bag available.

2 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar, divided
1 teaspoon vanilla extract
1/4 cup butter, melted

  • Unroll one tube of dough and place in a lightly greased 13-in. x 9-in. baking pan. Seal seams and perforations; set aside. 1/4 teaspoon salt
1/2 tablespoon ground cinnamon
1/2 cup soft butter, plus a little for greasing pans
1 cup packed light brown sugar
1 egg
1/2 cup sour cream
1/2 teaspoon baking soda

Steps:

  • Sift the flour, baking powder, salt and cinnamon together and set aside.
  • Beat the butter with the sugar until well blended and creamy. Beat in the egg.
  • Mix the sour cream and baking soda together and add to the butter mixture. Add the dry ingredients and beat well to make a soft dough. It will be sticky, so cover and chill the dough for about 30 minutes until it is firm enough to handle. If the kitchen is hot you may need to chill the dough a little longer.
  • Lightly grease baking sheets. Preheat oven to 375 degrees.
  • Take walnut-size pieces of the dough and roll into balls. Arrange on the baking sheets about two inches apart to allow for spreading. Flatten the balls with the tines of a fork. Bake 10 to 15 minutes until the cookies are golden brown but still slightly soft in the center. Allow to cool for a couple of minutes on the pans, then transfer them to racks to cool completely.

I love orange and cinnamon together! Yum. You really don't need to chill these for as much time as the recipe calls for. 1 hour would be plenty. I chilled my dough overnight and had to wait for the dough to warm a little before it was able to be rolled out. Cut your cookies small. They do not spread as they cook. Nice shortbread-like cookie. Not too sweet and excellent with a cup of tea or hot chocolate. I double the zest and spices - it gives the cookies freckles. :)
