Steps:

  • Bobby's Perfect Patty
  • Shape 6 ounces of 80 percent lean ground beef chuck into a uniform patty, no more than 3/4 inch thick (don't overwork the meat). Make a depression in the center with your thumb so the burger won't bulge; the indent will rise as the patty cooks. Preheat a grill or cast-iron grill pan to high. Brush the burger with canola oil and season with salt and pepper. Grill until golden brown and slightly charred, turning once (7 minutes for medium-rare). Avoid pressing with a spatula! Add cheese for the last minute of cooking.
  • Provolone
  • Oozy cheese makes this burger: Two slices of aged provolone are added during the last minute of grilling.
  • Hot Peppers
  • Bobby likes his Philly cheesesteaks with lots of pickled hot peppers, so he loads them on here, too.
  • Roasted Peppers
  • In place of classic griddled bell peppers, Bobby uses roasted red peppers, sliced into strips.
  • Onions
  • Bobby sautes thin rings of Spanish onion in canola oil until soft and golden to top off the burger.

1/4 cup Dijon mustard
1/2 cup balsamic vinegar
2 cloves garlic, chopped
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 (2 pound) flank steak
1 red bell pepper, halved and seeded
1 red onion, cut into 1/4-inch slices
BBQ sauce
1 loaf French bread
1 pound fresh mozzarella cheese, sliced

Steps:

  • Combine the mustard and balsamic vinegar in a small bowl. Add the garlic and drizzle in olive oil while stirring. Season with salt and pepper, to taste.
  • Put the steak in a resealable plastic bag. Pour in 3/4 of the marinade and seal the bag. (Reserve the remaining marinade for the bread.) Let the steak marinate at room temperature for at least 30 minutes.
  • Put the peppers and onions on the grill. Coat the onions with BBQ sauce. Once the peppers and onions are charred, move them to the top rack to keep them warm.
  • Remove the steak from the marinade and put on the grill. After 5 minutes turn the steak over to sear the other side, about 12 minutes total cooking time, for medium-rare. Transfer the steak to a cutting board and let rest for 10 minutes before slicing.
  • Cut the bread lengthwise and toast on the grill.
  • Brush the remaining reserved marinade on both sides of the bread. Arrange the steak on the bottom half of the bread, then cover with the peppers and onions. Top with the cheese and cover with the other half of the bread. Cut into 4 pieces and serve.

1 cup sea salt
1 cup maple syrup
3 pounds chuck roast
6 ciabatta rolls
3 cups sliced bell peppers
3 cups sliced onions
12 slices American cheese
Japanese mayonnaise, such as Kewpie

Steps:

  • Mix salt, syrup and 1 gallon water thoroughly to make a brine. Place chuck roast in a container with a lid, cover completely with brine and refrigerate for 10 days.
  • Remove roast from brine. Rinse thoroughly under cold running water. Pat dry. Place roast directly in smoker preheated to 220 degrees F and smoke over hickory wood for 12 hours, spritzing the roast every hour. Remove from smoker once center of roast reaches 135 degrees F. Allow roast to rest, then refrigerate overnight. Slice meat as thin as you can using a chef's knife of deli slicer.
  • To assemble the cheesesteaks, place ciabatta rolls on a grill or griddle and lightly toast on both sides. Place slices of chuck roast, peppers and onions on a griddle. Sprinkle with 2 tablespoons water and cover the meat, peppers and onions using a grill lid; heat for 1 minute. Remove lid, add 2 slices of American cheese for each sandwich, cover again and cook until cheese is melted. Place grilled rolls on plates and spread both sides with Japanese mayonnaise. Remove meat and vegetables from the griddle, layer into ciabatta rolls and serve.

This recipe is from Bobby Flay's Throwdown. He went up against Tony Luke and lost, but this sauce sounds very tasty. I love provolone on my cheesesteaks so i can't wait to try it. This is a very basic cheese - Bechamel sauce that's great on cheesesteaks. I pretty sure the provolone can be substituted with almost any cheese you wish.

1 tablespoon unsalted butter
1 tablespoon all-purpose flour
2 cups whole milk, heated
1 cup aged provolone cheese, grated
1/4 cup parmigiano-reggiano cheese, grated
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Melt butter in a medium saucepan over medium heat.
  • Whisk in the flour and cook for 1 minute.
  • Slowly whisk in the warm milk, and cook.
  • Whisk constantly until thickened, about 4 to 5 minutes.
  • Remove the mixture from the heat and whisk in the provolone and Parmesan until combined. Season with the salt and pepper.

1 lb good quality cut steak, cut into thin 2 inch strips
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 1/2 teaspoons italian seasoning (finely grind with your fingers)
3 tablespoons olive oil
1/2 onion, sliced thin (1/4"inch)
1 -2 green bell pepper, julienned
3/4 cup sliced mushrooms
3 ounces swiss cheese, thinly sliced
4 hoagie rolls, split lengthwise

Steps:

  • Place the sliced beef in a large bowl.
  • In a small bowl, mix together salt, pepper, paprika, cayenne pepper, onion powder, garlic powder and italian seasoning.
  • Sprinkle over beef and stir to combine.
  • Heat half the oil in a skillet over medium-high heat.
  • Saute beef to desired doneness, and remove from pan, keep warm.
  • Meanwhile heat remaining oil in skillet, and saute the onion, green peppers and mushrooms until tender, with green peppers still somewhat crisp.
  • Add steak to veggies and keep warm.
  • Preheat oven to broil.
  • Butter hoagie buns and lay a slice of cheese, (torn in half) over the bottom of each bun.
  • Divide steak and veggies over buns, add another slice of divided cheese.
  • Lay on foil lined cookie sheet (keep top bun to the side so that it broils also) Broil just until cheese melts, remove from broiler, cover with top half of bun.
  • ENJOY!
