We make these quick easy homemade dinner rolls without yeast when we've run out of the baker's standby or don't have the time for yeast to work its magic. Slightly reminiscent of biscuits, they are easier to make and not as crumbly. Feel free to split the leftovers and use for sandwiches the next day.

Number Of Ingredients 6

1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled, plus more for the baking dish
4 cups all-purpose flour (see Cook's Note)
5 teaspoons baking powder
2 teaspoons sugar
2 teaspoons kosher salt
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Coat the bottom of a 9-by-13-inch baking dish with butter.
  • Whisk together the flour, baking powder, sugar and salt in a large bowl. Whisk together the milk and 1/2 cup of the butter in a medium bowl. Pour the wet ingredients into the dry and combine with a wooden spoon; do not overwork the dough. It should be wet.
  • Divide the dough into 12 pieces and shape each into a ball. Arrange the dough balls in the prepared baking dish. Pour the remaining 1/4 cup butter all over the dough and bake until golden brown, 35 to 40 minutes.

5 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
5 tablespoons sugar
1/4 cup warm (90 to 110 degrees F) water
1/2 ounce (2 packages) active dry yeast
1 cup (2 sticks) salted butter, cold, cut into small squares, plus 4 tablespoons, melted
2 cups buttermilk

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt and 3 tablespoons of the sugar.
  • In a small bowl, combine the warm water with the yeast and the remaining 2 tablespoons sugar; stir until the yeast is dissolved. Let stand until bubbles appear, 2 to 3 minutes.
  • Using your hands, mix the 1 cup cold butter into the flour, breaking the butter into small pebbles, until the mixture resembles coarse meal. Make a well in the center and add the buttermilk and the yeast mixture. Gently fold the flour into the wet ingredients. Keep mixing until a ball starts to form, then gently knead, 12 to 15 times, to create a smooth dough. Cover with a cloth or plastic wrap and let rise in a warm place for approximately 1 hour.
  • Transfer the dough to a lightly floured work surface and press out to 1- to 1 1/2-inches thick. Fold the dough in half, press again to 1- to 1 1/2-inches thick, and then fold again. Cut the dough using a 2- to 3-inch round biscuit cutter, depending personal preference. Brush the bottom of a cast-iron skillet with some of the melted butter. Place the biscuits in the skillet; brush the tops with melted butter.
  • Bake until golden brown, 18 to 22 minutes, depending on size. Brush again with melted butter and serve immediately.

3 cups flour
1 cup milk (Cold)
6 tablespoons butter (Frozen)
1 tablespoon sugar
1 tablespoon honey
1/4 teaspoon salt
1 tablespoon baking powder
2 tablespoons butter (melted)

Steps:

  • Pre-heat your oven to 450 degrees .
  • Prepare a baking dish with cooking spray and/or parchment paper.
  • Grate frozen butter with a box grater or use a potato peeler. * If you do do not have all your ingredients measured and ready, Place the butter back in the freezer so that it doesn't melt. It's important that the butter stay frozen to have soft fluffy biscuits.
  • Place flour, baking powder, sugar, honey in the bread machine basket. Give the ingredients a good stir . Add in the frozen butter.
  • Set the bread machine to the dough setting . Press start and let it go for five minutes.
  • Pour in the milk, and let it work for 30-45 seconds. Do not over mix.
  • Take out the dough, and put it on a floured surface. Pat the dough out to a 1 inch thick rectangle.
  • Using a 1 inch round cutter or a cup cut out 8 biscuits. Do not twist the cutter.
  • melt remaining butter in a bowl.
  • Place each biscuit in the bowl (separately) to coat the top with butter. Place on cookie sheet/baking dish.
  • Make sure the biscuits are touching and bake for 15-20 minutes or until golden brown.

Steps:

  • Grease a muffin pan and pre-heat the oven at 350.
  • Combine all of the dry ingredients in a medium-large bowl. Add the milk, mayo, and egg. Mix well.
  • Fill the greased muffin tins 1/4-1/2 full and bake for 12-25 minutes at 350 until they are golden-brown on the outside and a toothpick comes out clean.
  • Serve with butter or jam.

1/4 cup water
2 1/2 cups flour
1 teaspoon baking powder

1 cup buttermilk (OR 1 cup milk, soured with 1 tbsp vinegar added)

Steps:

  • Dissolve yeast in water, set aside.
  • Mix dry ingredients in order given; cut in shortening until the size of small Lima beans.
  • Stir in buttermilk and yeast mixture.
  • Cover bowl with towel and let sit until ready to use. (At least 1 hour, but it is fine if it sits for a couple hours.) Dough will be very sticky.
  • Scrape out onto well floured board.
  • Flip over and knead lightly (4-6 times).
  • Roll out and cut with biscuit cutter.
  • Place on greased pan and let raise slightly (10-30 minutes).
  • Bake at 400 F until light brown, 10-12 minutes.
