A Quick and Easy appetizer to prepare. Pretty presentation. Great for holidays as well as anytime. Cut out from a magazine some time back.

16 Ritz crackers
1/3 cup whipped cream cheese spread
1/3 cup seafood cocktail sauce
16 cleaned large raw shrimp, cooked
1/3 cup finely chopped green onion

Steps:

  • Spread each cracker with 1 teaspoon of the cream cheese spread.
  • Top evenly with the cocktail sauce, shrimp and onions.

6 ounces reduced-fat cream cheese
2 tablespoons fat-free sour cream
2 tablespoons minced fresh parsley
2 teaspoons dried minced onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon seafood seasoning
1 cup finely chopped cooked peeled shrimp
1/2 cup shredded part-skim mozzarella cheese
2 packages (1.9 ounces each) frozen miniature phyllo tart shells

Steps:

  • In a small bowl, beat cream cheese and sour cream until blended. Add the parsley, onion, Worcestershire sauce and seafood seasoning; mix well. Stir in shrimp and mozzarella cheese., Spoon filling into tart shells. Place on an ungreased baking sheet. Bake at 350° for 8-12 minutes or until shells are lightly browned. Serve warm or cold.

1 3/4 lbs raw large shrimp, peeled and deveined
1 (12 ounce) bottle beer
3 large garlic cloves, peeled and smashed with side of knife
1/4 teaspoon salt
3 chipotle chiles in adobo, seeded and minced, plus
1 tablespoon adobo sauce
1/3 cup light mayonnaise
2 tablespoons chili sauce
2 tablespoons minced red onions
1 teaspoon grated orange zest
1 tablespoon orange juice
1/4 cup chopped fresh cilantro
36 large restaurant style tortilla chips
finely shredded iceberg lettuce
diced avocado
cilantro leaf

Steps:

  • Place shrimp in large, deep skillet in a single layer; add beer, garlic and salt.
  • Turn heat to medium. Slowly poach shrimp 10 minute, turning shrimp after 5 minutes, until just cooked through. (Beer will be just reaching a simmer at this point). Remove shrimp with slotted spoon to bowl and cool. Bring beer and garlic to a boil; boil 8 minutes, or until reduced to 3 Tablespoons, skimming surface once or twice. Strain into a bowl. Add garlic and mash; cool.
  • Add chiles, adobo sauce, mayonnaise, chili sauce, red onion, orange zest and juice, and chopped cilantro to beer mixture; whisk dressing until blended.
  • Cut shrimp into 2 or 3 pieces each and add to dressing; toss to coat.
  • To serve top tortilla chips with shredded lettuce and shrimp mixture. Garnish with diced avocado and a cilantro leaf.

From Kraftfoods(dot)com website. I made these for a party and I've had so many people request the recipe. Kraft calls for using finely chopped onions but I skipped that just to make it an even faster appetizer to get on the table.

16 crackers (I have used Ritz & Cobblestone Wheat Crackers)
1/3 cup whipped cream cheese spread
1/3 cup seafood cocktail sauce
16 large fresh shrimp, cooked (or pre-cooked frozen shrimp that has been thawed)
1/3 cup finely chopped green onion (optional)

Steps:

  • Spread each cracker with 1 tsp of the cream cheese spread.
  • Top evenly with the cocktail sauce and one shrimp.
  • Sprinkle some of the finely chopped onions on top (if you desire).

  • Whisk together eggs and water and pour in a shallow dish. Soak Triscuits for 8-10 minutes in the mixture until they are just soft enough to press into mini muffin tins. After pressing all of the Triscuits into mini muffin tins sprayed with non-stick cooking spray. Bake the Triscuits for 30 min at 350°. Remove from the tins and allow to cool to room temperature. (You can make the Triscuit cups ahead a day or two in advance and store in an airtight container.)
  • In a medium bowl, add the cream cheese, Greek yogurt, Worcestershire sauce & lemon juice. Using a hand mixer, beat on high for 2-3 minutes until smooth. Scoop the mixture into a sandwich bag and snip the corner of the bag. Using the bag, pipe a Tablespoon of the cream cheese mixture into each Triscuit, top with 1/2 tsp. cocktail sauce and one shrimp.
