CREAM CHEESE/CHUTNEY APPETIZER
My neighbor shared this easy-to-make appetizer with me, and it's been a hit whenever I've served it. I took it to our family reunion last summer and it quickly disappeared! I love it because it's simple, yet tasty.

Steps:
- Press softened cream cheese into oiled mold of desired shape. (For easy removal, spray mold with cooking spray and line with plastic wrap if desired.) , Unmold on chilled plate. Pour chutney over mold; sprinkle with onions. Ring plate with crackers (buttery crackers are especially good with this appetizer). Serve immediately.

Steps:
- Heat oil in small saucepan over medium-low heat until hot. Add onion; cook 3 to 4 minutes or until softened, stirring frequently.
- Add cranberry sauce, vinegar, pumpkin pie spice, thyme, pepper and hot pepper sauce; mix well. Bring to a boil over medium heat. Cook 10 to 12 minutes or until thickened and reduced slightly, stirring frequently. Cool 20 minutes. Cover; refrigerate at least 4 hours or overnight.
- Just before serving, spread about 1 teaspoon cream cheese spread on each cracker. Top each with about 1 1/2 teaspoons cranberry mixture. If desired, garnish each with fresh thyme.

- In a small bowl, beat the cream cheese, sour cream and curry powder until smooth. Fold in the onions and peanuts. Spread about 1/2 in. thick on a serving plate. Chill. Just before serving, pour chutney over all. Serve with crackers.

MANGO CREAM DIP
This is my adopted recipe from Recipe Zaar's foundling children. But it's something I have been making for a long time. This is an appetizer that you can put together on a moment's notice with just two ingredients. But it tastes so good that it's hard to believe how easy it is to prepare! If it's too much work to blend the 2 ingredients, just plop the cream cheese on a plate & "frost" it with the chutney, and use it as a spread for crackers.

- Remove fruit chunks from chutney and cut fine.
- Place prepared chutney in medium bowl and add remaining ingredients.
- Mix well.
- Cover and chill one day before serving.

CILANTRO MINT CHUTNEY
This cilantro mint chutney is an easy versatile chutney recipe made with four ingredients namely fresh mint leaves, coriander leaves, green chillies and ginger.

Steps:
- Pluck the leaves and tender stems from the coriander bunch.
- Also pluck mint leaves from their stems. Make sure to use only mint leaves and not stems as the chutney can get bitter if stems are used.
- Rinse both the coriander leaves and mint leaves very well in a colander or strainer with water. Drain all the water.
- Roughly chop them. Keep the other ingredients required for the chutney also aside.
- In a mixer-grinder or blender, take all of the chutney ingredients. Add 3 to 4 tablespoons water and blend or grind to a smooth and fine consistency. Make sure there are no chunks of any ingredient in the chutney.
- Transfer the chutney to a small bowl or jar. Use as needed. If storing keep in an airtight container in the refrigerator for 3 to 4 days.
- You can serve this chutney as a dipping sauce with various varieties of pakora, samosa, kachori, vada varieties etc.
- You can also use to make spicy sandwiches. Simply make a thick chutney by adding less water and use as a spread on the sandwiches.
- Use the chutney to make various Indian chaat snacks like bhel puri, sev puri, ragda pattice, chana chaat etc.
