3/4 lb cooked medium shrimp
3 tablespoons butter
3 tablespoons onions, chopped
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 dash pepper
1 1/2 cups milk
2 dashes hot sauce
1 cup grated cheddar cheese
1 tablespoon butter
1/4 cup dry breadcrumbs

Steps:

  • Remove shells and tails from shrimp.
  • Cook onion in butter until tender; stir in flour and seasonings.
  • Add milk gradually and cook until thick, stirring constantly.
  • Add 3/4 cup cheese and heat until melted.
  • Stir in shrimp and mix well.
  • Pour into 4 to 6 individual well-greased ramekins.
  • Combine melted butter, bread crumbs and remaining 1/4 cup of cheese; sprinkle over top of each ramekin.
  • Bake in a 400 degree oven for 10-12 minutes or until bubbly and brown.

1/2 pound sea scallops
4 tablespoons butter, divided
2 tablespoons all-purpose flour

1/2 cup grated Parmesan cheese, divided
1/2 cup shredded part-skim mozzarella cheese, divided
1/2 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350°. Arrange fish and scallops in a greased 11x7-in. baking dish., In a small saucepan, melt 2 tablespoons butter. Stir in flour and pepper until smooth; gradually add broth and milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in 1/4 cup of each cheese; set aside. , In a small skillet, saute mushrooms in remaining butter until tender; stir into cheese sauce. Spoon over seafood. Sprinkle with remaining mozzarella, cheddar and Parmesan cheese. Cover and bake 15-20 minutes or until bubbly and fish flakes easily with a fork. If desired, top with chives to serve.

1 tablespoon extra-virgin olive oil, or to taste
1 tablespoon butter
2 tablespoons all-purpose flour
2 cups milk
1 pinch ground nutmeg

30 uncooked medium shrimp, peeled and deveined
4 teaspoons Italian seasoning, divided
1 cup shredded Cheddar cheese
1 shallot, thinly sliced
1 tablespoon chopped fresh parsley, or to taste
½ cup dry bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil and butter in a skillet over medium-high heat until butter melts. Reduce heat to medium, whisk in flour, and stir until a thick paste forms, about 5 minutes. Gradually whisk in milk and bring to a simmer. Cook and stir until the sauce is thick and smooth, 5 to 10 minutes. Season with nutmeg and salt.

1 onion, chopped
1 green bell pepper, chopped
1 cup butter, divided
1 cup all-purpose flour, divided
1 pound fresh crabmeat
4 cups water
1 pound fresh shrimp, peeled and deveined
½ pound small scallops
½ pound flounder fillets
3 cups milk
1 cup shredded sharp Cheddar cheese
1 tablespoon distilled white vinegar
1 teaspoon Worcestershire sauce
½ teaspoon salt
1 pinch ground black pepper
1 dash hot pepper sauce
½ cup grated Parmesan cheese

Steps:

  • In a heavy skillet, saute the onion and the pepper in 1/2 cup of butter. Cook until tender. Mix in 1/2 cup of the flour, and cook over medium heat for 10 minutes, stirring frequently. Stir in crabmeat, remove from heat, and set aside.
  • In a large Dutch oven, bring the water to a boil. Add the shrimp, scallops, and flounder, and simmer for 3 minutes. Drain, reserving 1 cup of the cooking liquid, and set the seafood aside.
  • In a heavy saucepan, melt the remaining 1/2 cup butter over low heat. Stir in remaining 1/2 cup flour. Cook and stir constantly for 1 minute. Gradually add the milk plus the 1 cup reserved cooking liquid. Raise heat to medium; cook, stirring constantly, until the mixture is thickened and bubbly. Mix in the shredded Cheddar cheese, vinegar, Worcestershire sauce, salt, pepper, and hot sauce. Stir in cooked seafood.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish. Press crabmeat mixture into the bottom of the prepared pan. Spoon the seafood mixture over the crabmeat crust, and sprinkle with the Parmesan cheese.
  • Bake in the preheated oven for 30 minutes, or until lightly browned. Serve immediately.

1 pound bay or sea scallops, rinsed and drained

½ cup white wine
1 pound cooked crab meat
2 cups shredded provolone cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly butter 8 small baking dishes.
  • In a large skillet, heat olive oil over medium high heat. Saute shrimp and scallops until firm, about 5 minutes.
  • In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth and raise heat to high. Stir until thickened. Mix in shallots, mushrooms and wine. Cook for 5 to 10 minutes.

6 Tbsp all purpose flour
2 c half and half
3/4 c shredded monterey jack cheese
1/2 c shredded parmesan cheese
1/2 tsp salt, or to taste
1 pinch ground black pepper, or to tate
2 - 3 dash(es) hot sauce, or to taste
3 c uncooked shrimp, peeled and deveined, slightly chopped
3 scallions, white and green parts, thinly sliced on the diagonal
3/4 c panko bread crumbs
3 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Over medium-low heat, melt butter. Add flour and cook, stirring constantly for one minute. Whisk in half and half until smooth and thick.
  • 3. In small bowl, mix together the cheeses, reserve ¾ cup to use for topping. Add cheese to half and half mixture and stir until melted. Add salt, pepper and hot sauce, taste and adjust seasoning.
  • 4. Remove from heat, stir in shrimp and scallions until well blended. Pour mixture into large oven proof baking dish, or 6 individual oven proof baking dishes.
  • 5. Mix bread crumbs and melted butter until well blended. Sprinkle reserved cheese over top of large dish or divide evenly over individual dishes. Top with bread crumbs.

1 cup seafood stock or clam juice
1 cup heavy cream
1/2 cup plus 3 tablespoons good white wine, such as Chablis, divided
3 tablespoons tomato puree
1/2 teaspoon saffron threads
8 ounces raw shrimp, peeled, deveined, and cut in half crosswise
8 ounces raw halibut, cut into1-inch chunks
8 ounces cooked lobster meat, cut into 1-inch chunks
7 tablespoons unsalted butter, divided
1 tablespoon all-purpose flour
Kosher salt
Freshly ground black pepper
3 cups julienned leeks, white and light green parts (2 large)
1 1/2 cups julienned carrots (3 carrots)
1 cup panko (Japanese dried bread crumbs)
1/3 cup freshly grated Parmesan
2 tablespoons minced fresh flat-leaf parsley
1 tablespoon chopped fresh tarragon leaves
1 tablespoon minced garlic (2 cloves)

Steps:

  • Preheat the oven to 375 degrees F. Place 4 individual gratin dishes on sheet pans. (If recipe is doubled serve it in a 14 by 9 1/4-inch oval gratin dish.)
  • Combine the stock, cream, 1/2 cup of the wine, the tomato puree, and saffron in a medium saucepan. Bring to a boil, lower the heat, and add the shrimp. After 3 minutes, use a slotted spoon to remove the shrimp to a bowl. Add the halibut to the stock for 3 minutes, until just cooked through, and remove to the same bowl. Add the cooked lobster to the bowl.
  • Continue to cook the sauce until reduced by half, about 12 minutes. Mash 1 tablespoon of the butter together with the flour. Whisk the butter mixture into the sauce along with 1 teaspoon salt and 1/2 teaspoon pepper. Simmer, stirring constantly, until thickened, about 5 minutes. Set aside.
  • Melt 3 tablespoons of the butter in a medium saute pan. Add the leeks and carrots and cook over medium heat for 5 minutes, until softened. Add the remaining 3 tablespoons of wine, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook for 5 to 10 minutes, until tender. Set aside.
  • Combine the panko, Parmesan, parsley, tarragon, and garlic. Melt the remaining 3 tablespoons of butter and mix it into the crumbs until they're moistened.
  • Divide the seafood among the 4 gratin dishes. Strew the vegetables on top of each dish. Pour the sauce equally over the seafood and vegetables and spoon the crumbs evenly on top. Bake for 20 minutes, until the top is browned and the sauce is bubbly. Serve hot.

  • 1. Preheat oven to 400F. Lightly spray a quiche pan with non-stick cooking spray.
  • 2. In a large skillet, heat the oil and 2 tablespoons of the butter over medium-high heat. Add the shallots and garlic and saute for 1 minute. Stir in the seasoning mix. Add shrimp and cook until just turning pink (shrimp will finish cooking in the oven), about 2 minutes. Stir in the chives. Remove mixture from pan into the prepared quiche pan.
  • 3. Add remaining tablespoon butter to pan and when melted, whisk in flour. Do not allow flour to brown. Whisk in the milk and cream and cook, whisking constantly, until mixture begins to thicken, 5 minutes. Add lemon juice and 1/2 cup of the jack cheese.
  • 4. Remove from heat and spoon sauce evenly over shrimp.
  • 5. Sprinkle remaining cheeses over top and then sprinkle Panko evenly over that. LIGHTLY spray Panko with cooking spray to help brown.
  • 6. Place in oven and bake 15 minutes or until brown and bubbly. Serve over rice or pasta.

4 medium white mushrooms
1/3 cup diced onion
4 minced garlic cloves

2 tablespoons dry sherry
Accent seasoning
1 tablespoon salt
1/2 tablespoon pepper
paprika, for good color on top
6 tablespoons butter

Steps:

  • Sauté onions and garlic in 1 T. butter over medium heat for 3 minutes. Salt to taste.
  • Add scallops, shrimp, mushrooms, Accent, salt & pepper, & 3 T. butter, stirring to mix well. Be sure to salt and pepper to your tastes. My amounts may be to heavy for some.
  • Start cream sauce by melting butter in medium sauce pan, mix in flour slowly; cook for 2 minutes.

4 to 5 ounces frozen artichoke hearts (1/2 a 9-ounce package) - see Note
3 tablespoons butter, divided use
4 ounces fresh mushrooms (white or cremini/baby bella), stems removed, caps sliced (larger mushrooms halved)
2 tablespoons finely chopped shallots
1 tablespoon all-purpose flour, preferably unbleached
1/2 cup whole milk
1 1/2 to 2 tablespoons dry sherry (or dry white wine)
1/2 cup grated sharp Cheddar cheese
1/2 cup grated Havarti cheese
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon dry mustard
1/8 teaspoon paprika
Kosher salt, to taste
Fresh ground pepper, to taste
8 ounces medium-sized shrimp, cooked, peeled (tails off), deveined and patted dry
8 ounces lump crabmeat, drained and flaked
1/4 cup fresh or panko bread crumbs
2 tablespoons chopped Italian (flat leaf) parsley

Steps:

  • Preheat oven to 375 degrees. Grease 4 (8 ounce) gratin dishes, ramekins or shell baking dishes.
  • Thaw artichoke hearts under warm running water. Gently squeeze dry with paper towel and coarsely chop. Set aside.
  • In a large heavy saucepan, melt 1 tablespoon butter over medium heat. Add mushrooms; cook, stirring occasionally, until mushrooms are soft and liquid evaporates. Remove from heat and set aside.
  • In the same pan, melt 1 tablespoon butter over medium-low heat. Add shallots and cook until softened, around 5 minutes. Reduce heat to low and whisk in flour; continue cooking, whisking, for 3 minutes. Whisk in milk and wine or sherry. Increase heat to medium, bring to a slow boil and cook, stirring, just until beginning to thicken.
  • Reduce heat to low and stir in both cheeses. Cook just until cheese melts, stirring. Remove from heat and stir in Worcestershire sauce, mustard and paprika. Season to taste with salt and pepper.
  • Gently fold artichoke hearts and mushrooms into cheese sauce. Fold in shrimp and crab. Divide evenly between prepared baking dishes (each one should be around 3/4 to 7/8 full).
  • Melt the remaining 1 tablespoon butter in a small mixing bowl and melt in the microwave. Stir in bread crumbs and chopped parsley. Sprinkle over top of seafood mixture.

The best part of a gratin is the crispy crust, and, here in this shallow sheet-pan version, there's more of it. Flaky panko bread crumbs - with a sprinkling of mozzarella and Gruyère - form a crisp, almost chiplike topping that tastes not unlike the edges of garlicky, cheesy Texas toast. In fact, the topping comes off in large, snackable pieces. As this bakes (for just 10 minutes!), the spice blend perfumes the kitchen, thanks to herbes de Provence. The shiitakes add earthy heft and incredible umami, but for a more delicately flavored gratin, you can leave them out. Serve this with a big green salad or eat it straight out of the pan.

1/2 pound peeled, deveined shrimp, tails removed, shrimp cut into 1/2-inch pieces
1 medium zucchini or yellow squash, thinly sliced crosswise into coins
3 1/2 ounces fresh shiitake mushrooms, tough stems removed, caps thinly sliced
1 large shallot, thinly sliced
2 large garlic cloves, finely grated
1 teaspoon sweet paprika
1/4 to 1/2 teaspoon red-pepper flakes
3/4 teaspoon herbes de Provence
Kosher salt (Diamond Crystal) and black pepper
3 tablespoons olive oil
1 cup panko bread crumbs
1/2 cup heavy cream
1/2 cup shredded low-moisture mozzarella
1/4 cup finely grated Gruyère
1 lemon, cut into wedges

Steps:

  • Heat oven to 425 degrees.
  • In a large bowl, toss together the shrimp, zucchini, mushrooms, shallot, garlic, paprika, red-pepper flakes, ½ teaspoon herbes de Provence, ¾ teaspoon salt, ½ teaspoon black pepper and 1 tablespoon oil until well combined. Transfer to a 9-by-13-inch sheet pan or shallow baking dish in a single layer.
  • In the now-empty bowl, toss the panko with a pinch of salt, the remaining 2 tablespoons oil and ¼ teaspoon herbes de Provence to combine. Evenly pour the cream over the shrimp mixture in the pan, covering all the nooks and crannies. Sprinkle the panko mixture over the shrimp, then top first with the mozzarella, followed by the Gruyère.
  • Bake until the cream is bubbling and the panko and cheese are light golden brown all over, 10 to 15 minutes. Remove from the oven and let rest for 5 minutes before serving with the fresh lemon wedges, which should be squeezed over the gratin just before serving.

1 1/2 pounds white fish fillets (cod, orange roughy, flounder, etc.)
1/4 cup dry white wine
1 tablespoon lemon juice
3/4 teaspoon salt
1/4 teaspoon Tabasco (or hot pepper sauce)
3 tablespoons butter or margarine (divided)
1 cup crabmeat (or 6 to 8 ounces cooked shrimp, halved lengthwise)
3 tablespoons flour
2 egg yolks
2 tablespoons half-and-half
2 tablespoons Parmesan cheese (grated)

Steps:

  • Arrange fish fillets in single layer in greased shallow baking dish.
  • Sprinkle with wine, lemon juice, salt, and hot pepper sauce. Dot with 1 tablespoon of the butter and cover dish tightly with foil.
  • Bake in a preheated oven, 400 F, until fish flakes easily with a fork; about 25 minutes.
  • Cool, then carefully drain off broth into a cup or bowl; measure 1 cup of fish broth and set aside.
  • Top the fish with crabmeat or halved shrimp.
  • In a saucepan over medium-low heat, melt remaining 2 tablespoons butter.
  • Stir in flour until smooth and bubbly. Stir in fish broth until thickened and smooth; remove from heat.
  • Beat together egg yolks and half-and-half, then beat in a few tablespoons of the hot sauce from the saucepan; return egg mixture to saucepan, whisking briskly.
  • Return to heat and cook, stirring, until slightly thickened, about 1 minute.
  • Pour sauce over fish and shrimps; sprinkle with Parmesan.
  • Broil about 5 inches from heat until fish is hot and the top is lightly browned about 10 minutes. Can be served with hot cooked rice or pastry shells.

  • Toss the shrimp, lime juice, and leaves of 1 sprig of fresh oregano in a large bowl. Let stand for about 10 minutes. Meanwhile, heat 1 tablespoon of olive oil over medium heat in a large skillet. Add the chopped onion and cook, stirring occasionally, for about 4 minutes or until softened. Add the minced garlic and cook for about 1 minute, stirring occasionally. Do not let brown!
