CHRISTMAS POTATOES
This my go-to holiday side recipe whenever I roast a turkey. Wonderfully crispy with just a hint of chicken flavor.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until just barely tender, 10 to 12 minutes. Drain.
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine turkey drippings, paprika, salt, and pepper in a 9x13-inch baking dish. Add potatoes and toss to coat.
- Bake in the preheated oven, turning occasionally, about 40 minutes. Increase temperature to 425 degrees F (220 degrees C) and continue baking until golden, turning occasionally, 10 to 15 minutes.

BEST ROAST POTATOES
Simple as roast potatoes are, there's a handful of tiny, but important, details - picked up throughout my cooking career - that when combined give you this ultimate recipe, which I believe creates the perfect roast potato. What a luxury.

- GET AHEAD
- 1. Peel the potatoes, keeping them whole, and ideally all about the same size (8cm). Parboil them in a pan of boiling salted water for 15 minutes - this will ensure that the insides become really fluffy.
- 2. Drain in a colander and leave to steam dry for 2 minutes - this will help the fat to stick to the potatoes. Give the colander a few light shakes to chuff up the edges of the potatoes, giving you maximum surface area for a crispy exterior as they roast.
- 3. Place the goose fat or butter and 1 tablespoon of oil in your largest roasting tray. Tip in the potatoes, add a good pinch of sea salt and black pepper, then toss to coat, and spread out in one fairly snug, even layer but with small gaps between them.
- 4. Cover and pop in the fridge overnight.ON THE DAY
- 1. Preheat the oven to 180°C/350°F/gas 4.
- 2. Squash the garlic bulbs, then lightly crush each unpeeled clove and add to the tray - this gives you sweet, caramelised garlic and adds a gentle perfume to the potatoes.
- 3. Roast for 1 hour, or until the potatoes are crisp and golden all over.
- 4. Remove the tray from the oven. We're nearly there, but we've got one last application of love and care, which is the game-changer. Gently half-squash each potato with a fish slice or masher so they kind of push into each other and fill the tray.
- 5. Pick the sage leaves and - importantly - toss with a little oil (this will transmit the flavour and make them deliciously crisp). Sprinkle the sage over the potatoes and roast for a further 20 to 25 minutes, or until golden and amazing. Heaven - you could even serve these on their own in a restaurant, they're so good.

NORDIC SUGAR BROWNED POTATOES
Nordic sugar browned potatoes. These potatoes are often served during the Christmas time. Perfect together with a Nordic roasted duct.

- Clean the potatoes but leave the peel on. Boil the potatoes in lightly salted water for about 15 minutes. Don't boil them too soft.
- Peel the potatoes using a knife. Let the potatoes cool off before you proceed. You can with advantage do this the day before you actually need the browned potatoes.
- Pour the sugar in an even layer on a cold frying pan. Turn on the stove at medium heat and let the sugar melt without stirring in it. Try to avoid using a frying pan with Teflon coating.
- When the sugar is melted add the butter to the pan and turn up to high heat. Add the potatoes to the sugar/butter mixture.
- Fry the potatoes in the sugar/butter mixture for about 5-7 minutes. Turn the potatoes constantly. If you are making these potatoes for your Christmas dinner and you have some extra duck grease - then add 1 dl (1/2 cup) of the grease to the pan with the potatoes. This will give the potatoes a great taste and a nice look.
- When the sugar is sticking evenly to the potatoes they are done.
COMPANY POTATOES
This recipe came from my Nana (aka one of my best-friends) who has made it for every special occasion. It is so good but so bad but an absolute must for a comfort food recipe collection. Note: don't eat these first or you won't be able to finish your meal!

- Peel and chop potatoes and boil in water until fork tender.
- Drain and mash potatoes in large bowl.
- Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
- Beat with hand mixer until fluffy.
- Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
- Dot with butter and sprinkle with paprika.
- *Mixture may be refrigerated at this point until needed, let stand at room temperature 1 hr before baking*.
- Bake in preheated 350°F oven for 30 minutes or until peaks slightly brown.
- Enjoy *this dish really holds its heat so be careful*.

- Chop the potatoes into 2-inch cubes, leaving the skin on if you’re lazy like I am. (Conveniently, the skin also adds texture and depth of flavor, but feel free to ditch them if you’re not into the potato skin thing.) Add potatoes to boiling water. Allow to boil until you can easily skewer the chunks with a fork. Drain potatoes thoroughly and return to the pot.
- Immediately add the butter to the potatoes and stir well to get the butter melting. Add cheese, salt, and pepper. Mash with a potato masher until everything is melted and well incorporated. Taste the potatoes, adding more salt or pepper as you prefer.
- Scoop the potatoes into an 8-inch by 8-inch baking dish and slide into the oven. Bake until the top is a nice golden color in places. Serve immediately, sprinkled with chopped parsley or chives.

- Wash and dry the potatoes then place them on a cutting board on their flattest side. Working one at a time place a potato between two chopsticks, this will prevent you from slicing all the way through.
