Pimento cheese is a southern thing. It is available in the dairy case almost everywhere here. Problem is, there are as many versions as there are cooks. Wait! I guess that isn't really a problem, but I just couldn't find one that suited our tastes perfectly until I started tweaking one my daughter liked a lot. The addition of shrimp makes it a bit more substantial and attractive to northerners, too! I recommend using Duke's mayo if you are lucky enough to be able get it. Cooking time is chilling time.

3 ounces cream cheese, softened
2 cups shredded extra-sharp cheddar cheese
1/3 cup mayonnaise
1/4 teaspoon garlic powder
2 ounces diced pimentos, drained
12 medium shrimp or 6 large shrimp, steamed, cooled, peeled and finely chopped

Steps:

  • Beat the cream cheese at medium speed with an electric mixer until creamy; add the cheddar cheese and continue beating until light and fluffy.
  • Beat in mayonnaise and garlic powder; stir in pimento and chopped shrimp.
  • Cover and chill for at least 1 hour.

2 1/2 lbs unpeeled large raw shrimp
1/4 cup diced sweet onion
2 tablespoons olive oil
4 ounces cream cheese, softened
4 green onions, finely chopped
1 celery rib, finely chopped
1 cup crumbled blue cheese
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons fresh parsley, chopped
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
assorted fresh vegetable
French baguette, slices

Steps:

  • Peel shrimp; devein, if desired.
  • Saute onion in hot oil in a skillet over medium-high heat 3 minutes or until onion is tender. Stir in shrimp and cookk, stirring occasionally, 3-4 minutes or just until shrimp turn pink. Transfer to a bowl, and let stand 15 minutes. Chop shrimp and return to bowl.
  • Stir in cream cheese and next 10 ingredients. Cover and chill for 4 hours. Store in an airtight container up to 2 days. Serve with vegetables and bread slices.

A wonderful festive sweet and tart Christmas spread recipe, from my 10 star dips and spreads folder...this is one that your guests will just love. (Note plan ahead, this needs to stay in the fridge for 3 or more hours).

1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
2 tablespoons honey
1/4 teaspoon cinnamon
1 (16 ounce) can whole berry cranberry sauce
1/3 cup slivered almonds

Steps:

  • In a small mixing bowl, beat the cream cheese, sour cream, honey and cinnamon until smooth.
  • Spread on a serving dish or plate.
  • In a bowl, stir cranberry sauce until it reaches spreading consistancy; spread over cream cheese mixture.
  • Sprinkle with almonds.
  • Cover and refrigerate for 2-3 hours.
  • Serve with crackers.

2 cans shrimp, rinsed and drained (4 1/4 ounces each)
1 (3 ounce) package cream cheese, softened
1/4 cup green onion, finely chopped
2 teaspoons sour cream
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon hot pepper sauce
to taste cracker (assorted)

Steps:

  • Finely chop the shrimp; place in a bowl.
  • Stir in the next six ingredients until well blended.
  • Cover and refrigerate for 8 hours or overnight.

This is another recipe from the Tasty Holiday Gifts cookbook SusieQusie spied for me on the bargain table at Half Price Bookstore in Dallas last month. It was on sale for $1 & we had a 15% off coupon, so it was an $.85 wonder! I modified their recipe to include shrimp + green & red peppers & then also added chili sauce for its flavor & color, but you can leave the latter out if you prefer. It was pictured in the book as a molded star shape, but I do not have one & have suggested alternatives below. I hope you enjoy this during the holidays, but it would be just as good during the rest of the year.

2 1/2 cups cheddar cheese (about 10 oz, finely shredded)
1 (12 ounce) carton cottage cheese
1 (8 ounce) package cream cheese (softened)
2 (4 1/2 ounce) cans shrimp (deveined, drained & finely chopped)
2 tablespoons dried onion flakes
1/2 teaspoon garlic powder
1/2 teaspoon ground red pepper
4 tablespoons chili sauce
4 tablespoons green peppers (finely diced)
4 tablespoons red peppers (finely diced)

Steps:

  • Use your food processor or immersion blender to combine all ingredients (except the shrimp & diced peppers) till the mixture is smooth.
  • Then, stir in the diced shrimp & peppers.
  • Decide your presentation, prepare for it accordingly & chill for at least 1 hr before removing to garnish as desired & serve (with crackers, bread or choice of vegetables/crudites).
  • Presentation #1: Use the Christmas mold of your choice or bowl and line with plastic wrap.
  • Form into a log or ball wrapped in plastic wrap - Use a 1-qt round tube mold lined w/plastic wrap (meant to resemble a holiday wreath).
  • Presentation #2: Prepare as bread or tortilla pinwheels and chill as directed above.
  • In Iceland, bread pinwheels are called brauðterta. They are very popular & are made w/an already cooked, flattened & rolled bread product from the freezer section.
  • It has a durable plastic sheet w/it to help you get a compact roll after you apply the filling.
  • I do not believe this product is available in the U.S., but I suppose you could get creative & make your own.
  • To Garnish: The recipe suggested using a combination of finely diced green & red peppers, cucumber, pimento or parsley.
  • I happen to think that plumped dried cranberries would be good for this & even added to the shrimp & cheese mix.
  • Bottom line: Use whatever suits your fancy to create your own desired holiday look.
  • Regarding pictures: I posted pictures of the brauðterta & tortilla version as it is a little late to go for a holiday look. In the tortilla pic, I made a stacker & cut wedges. I also got 7 2" tortilla rounds from each 8" tortilla using my cookie cutter.
