These twice baked biscotti cookies are made with brown sugar, brown butter for that extra bit of nuttiness and limited edition Kahlúa Pumpkin Spice liqueur. Dipping them in pumpkin spice filled dark chocolate gives them an extra punch of Fall flavor. They go great with a steaming hot mug of coffee and a splash of Kahlúa Pumpkin Spice.

Number Of Ingredients 12

1/2 cup (115 g) unsalted butter
1 cup (220 g) brown sugar
1/4 cup Kahlúa Pumpkin Spice
1 teaspoon almond extract
2 teaspoon vanilla extract
3 large eggs
3 cups (420 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup (150 g) whole almonds
6 oz semi-sweet chocolate
1 1/2 teaspoon pumpkin spice blend

Steps:

  • 1. Place the butter in a medium skillet and bring the heat to medium. Cook until the butter melts and the solids start to brown and smell nutty and fragrant. Remove from heat and pour into the bowl of a stand mixer fitted with a paddle attachment, making sure scrape out all the brown bits into the bowl.

1 cup sugar
1/2 cup butter, melted
2 tablespoons Kahlua
1 teaspoon anise extract
3 eggs
1/2 cup almonds, chopped
2 1/4 cups flour
1 1/2 teaspoons baking powder

Steps:

  • In a large mixing bowl, mix sugar and melted butter.
  • Add Kahlua and anise extract.
  • Beat in the eggs and stir in the nuts.
  • Sift dry ingredients together in separate bowl.
  • Gently stir dry ingredients into sugar mixture until well blended.
  • Cover and chill about three hours.
  • Preheat oven to 375 F.
  • Shape dough into three loaves 2 inches wide and 1/2-inch thick.
  • Place loaves well spaced on greased cookie sheet.
  • Bake 20 minutes or until brown.
  • Cool 5 minutes, cut in diagonal slices 1/2-inch thick.
  • Arrange slices on cut sides.
  • Bake 8 minutes each side at 375F until lightly browned. Cool on wire racks.

2 1/2 c flour
2 c sugar
5 large eggs
1 Tbsp baking soda
1/2 tsp salt
2 Tbsp vanilla
2 Tbsp kahlua
1 c almonds (blanched)
DRIZZLE
1/2 c chocolate chips of choice (i used nestle's dark chocolate)
2 tsp vegetable shortening
3/4 c cocoa powder

Steps:

  • 1. Preheat oven to 350 degrees. In medium bowl mix dry ingredients and set aside.
  • 2. In a large bowl beat eggs until fluffy. Add sugar, vanilla and Kahlua. Blend until smooth.
  • 3. Slowly add dry ingredients. Blend well until dough forms. Fold in nuts. Mixture will be sticky.
  • 4. Refrigerate for at least 1 hour.
  • 5. Grease two pans or spray with non-stick cooking spray. Divide batter in half onto the two pans. Form batter into logs about 4 x 12 and 1/2 inch thick.
  • 6. Bake 20 minutes. Cool for about 20 minutes. Slice and bake another 20 minutes. Turn slices over and bake 15 minutes more. Cool completely and glaze to decorate.

2 cups flour
1 cup sugar
1/3 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
2 egg whites
3/4 teaspoon vanilla extract
2/3 cup whole almonds, toasted
1/3 cup chocolate chips

Steps:

  • In a standing mixer with a paddle attachment combine flour, sugar, cocoa powder, baking soda and salt. Mix together eggs, egg whites and vanilla extract. Gradually add egg mixture to flour mixture blending on low. Toss almonds with chocolate chips then add to flour mixture and blend just until combined.
  • On a well floured surface roll dough into 2 logs, 2 inches in diameter. Place on a greased sheet pan and brush with beaten egg. Bake at 350 degrees until light golden brown, about 30-35 minutes. Allow logs to cool 15 minutes then cut into slices on the bias. Place slices on a greased sheet pan and bake in a 350 degree oven until toasted, about 15-20 minutes. Cool. Store in an airtight container.

4 tablespoons unsalted butter
½ cup sugar, plus 1 tablespoon
½ teaspoon kosher salt
1 ½ teaspoons McCormick® Pumpkin Pie Spice
1 ½ teaspoons baking powder
1 large egg
1 teaspoon vanilla extract
½ cup pumpkin puree
2 cups all-purpose flour
½ cup toasted pepitas
½ cup dried cranberry
2 cups white chocolate chip
1 tablespoon coconut oil

Steps:

  • Preheat the oven to 350°F (180°C). Line a 9 x 13-inch (22 x 33 cm) baking sheet with parchment paper.
  • In a large bowl, combine the butter, ½ cup (100 G) sugar, the salt, pumpkin pie spice, baking powder. Cream with a hand mixer on medium speed until smooth.
  • Add the egg, vanilla, and pumpkin puree and beat to combine.
  • Add the flour and beat just to incorporate. Fold in the pepitas and cranberries with a rubber spatula.
  • Transfer the dough to the prepared baking sheet and shape into a 12 x 5-inch (30 x 12 cm) rectangle about ½ inch (1 ¼ cm) thick. Sprinkle the remaining tablespoon of sugar over the top of the dough.
  • Bake for 30 minutes, or until the dough is firm to the touch. Remove from the oven and let cool for about 15 minutes. The log should be just warm enough to touch. If it cools too much, it will be difficult to slice.
  • Line a baking sheet with parchment paper.
  • Slice the log into ½-inch (1 ¼ cm) thick pieces. Arrange the pieces, cut-side up, on the prepared baking sheet and return to the oven. Bake for another 15 minutes, or until the tops begin to crisp. Flip the biscotti over and continue baking for 15 minutes more, or until the other side crisps. Remove from the oven and let cool completely.
  • In a medium microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until completely melted and smooth.
  • Line a baking sheet with parchment paper.
  • Dip the bottom half of each biscotti in the melted white chocolate, then place on the prepared baking sheet and refrigerate until the chocolate is set, about 20 minutes.
  • Enjoy!

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture. Stir in almonds and chocolate chips. Cover and refrigerate for 2 hours. Divide dough in half. Shape into two 8-in. rolls; wrap each in plastic wrap. Refrigerate for 3 hours or until firm., Unwrap and cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 350° for 8-10 minutes or until set. Remove to wire racks to cool., Dip half of the cookies in white coating; allow excess to drip off.   • Preheat oven to 300°F (149°C). Line two large baking sheets with parchment paper or silicone baking mats. Spread almonds on one sheet (keep the other one set aside) and toast for 15 minutes, stirring twice during that time. Remove toasted almonds from the oven and turn the oven up to 350°F (177°C). Rinse/wipe off the one baking sheet so you can use it again for the biscotti.
  • Pulse the toasted almonds in a food processor or blender until very coarsely chopped. Set 1 cup of chopped toasted almonds aside. Pulse the remaining chopped toasted almonds until they are a little more fine. These will be what you sprinkle on top of the chocolate. Set them aside too.
  • In a large mixing bowl, whisk flour, brown sugar, baking powder, cinnamon, and salt together. Using a pastry cutter or 2 knives, cut in the butter until the mixture is crumbly. Gently toss in the 1 cup of coarsely chopped almonds. Set aside. In a medium bowl, whisk the eggs, oil, and vanilla together. Pour into the flour/butter mixture and gently mix with a large wooden spoon or rubber spatula until everything is just barely moistened.
