BON VOYAGE BAKED ALASKA

- For the cake: Preheat oven to 325 degrees F.
- Grease and lay parchment paper over the bottom of a jelly roll size baking pan (17 1/2 by 11 1/2-inches by 1-inch deep). With an electric beater, beat together the egg yolks, just 1/4 cup of the sugar (reserving the rest), and vanilla until the mixture becomes a pale yellow and thickens. Sift cake flour over the egg yolk mixture and set aside briefly. Wash and dry the beaters. In a separate metal bowl, beat the egg whites and cream of tartar together and gradually beat in the balance of the sugar until stiff peaks form. To the egg yolk/flour bowl, fold in 1/3 of the beaten egg whites until just barely combined. Repeat 2 more times with each of the remaining 1/3 of the beaten egg whites. Spread into jelly roll pan and bake in oven for about 15 minutes or until the surface is golden brown and springs back when touched. Let cake cool in pan.
- While the cake is cooling, it would be a good idea to make room in the freezer for the sheet cake and ice cream.
- When the cake is completely cool, peel off the browned surface of the cake. (You can do this simply by loosening it and rolling it off.) Firmly press a flat baking sheet without edges (which is the same size or larger than the baking tin) against the top edges of the baking tin and invert the cake so it is transferred to the flat sheet and remove the parchment paper. Then cut the cake in half lengthwise and in half crosswise. Two of these quarters will be dedicated to the top and bottom of the baked Alaska, respectively. Using a broad thin spatula, slide one of these quarters to a flat oven safe platter.
- Loosen the carton from the half-gallon of ice cream and place the entire brick onto the cake on the platter. Then slide the other quarter onto the top of the brick of ice cream and put the whole platter into the freezer.
- The remaining 2 pieces of cake will fit over the sides and ends of the brick of ice cream. Cut the cake to fit the dimensions of the sides and ends utilizing the most efficient positioning which will result in the fewest number of cuts. You will need 2 rectangles measuring approximately 8 inches by 3 inches and 2 rectangles measuring approximately 8 by 5-inches. Cover with plastic wrap if you are not using these immediately, to prevent them from drying out.
- Some of the meringue topping will be used to secure these rectangles to the sides of the ice cream.
- To make the meringue topping, make a slurry with 2/3 cup water gradually whisked into a small saucepan to which you have added cornstarch and sugar. Bring to a boil over medium heat, whisking constantly. As it thickens and becomes translucent, cover and remove it from the heat. In a scrupulously clean large metal or glass bowl, with scrupulously clean beaters, beat the egg whites (they must be at room temperature) until foamy. Add vanilla and cream of tartar and beat until soft peaks form. Very gradually beat in sugar on high until glossy and stiff peaks form, but do not allow it to get dry. Reduce the speed of the beater to low and gradually add the cornstarch slurry. When it has all been added increase speed to medium for about 10 seconds.
- This can be refrigerated with plastic wrap on top for a short while before use.
- Immediately before serving the Baked Alaska, make sure your oven rack is in a position to provide enough clearance for the meringue and pre-heat oven to 425 degrees F. Remove the sheet cake and ice cream from the freezer. Using some of the meringue as a "glue" position the pre-cut pieces of cake to fit the sides and the ends of the brick of ice cream. Then spread the rest of the meringue in a thick layer over the entire assembly, swirling it decoratively with the back of a spoon, and being sure to cover the lower edge of the cake on all sides so the meringue touches the pan base. Slide the Alaska into the oven and bake until the meringue browns, 5 or 10 minutes. Serve immediately with accompaniments of chocolate sauce, raspberry sauce, and caramel sauce.
BAKED ALASKA
Steps:
- Line a loaf pan with plastic wrap. Spread 1 pint softened vanilla ice cream in the pan; freeze until hard, 1 hour. Spread with 1 pint softened orange sherbet; freeze 1 more hour. Top with a layer of pound cake slices; freeze at least 1 more hour. Beat 4 egg whites and 1/2 teaspoon lemon juice with a mixer until frothy, then beat in 1/3 cup sugar until stiff. Invert the ice cream loaf onto a baking sheet, remove the plastic wrap and cover completely with the meringue. Bake at 500 degrees F until browned in spots, 3 minutes.
BAKED ALASKA
Steps:
- For the parfait: Whip the heavy cream to soft peaks. Set aside in the refrigerator.
- Put the egg yolks, sugar, 1 tablespoon water, vanilla seeds, and vanilla extract in the top of a double boiler over medium heat. Mixing continuously, cook the ingredients until the temperature reaches 140 degrees F. Put the mixture into the bowl of an electric mixer and mix on medium-high speed until it has doubled in volume and comes to room temperature. Separate the mixture into 2 bowls. In 1 bowl, mix in the coffee extract. Set aside. Fold half the heavy cream into the coffee mixture, and half into the vanilla mixture. Whip the egg whites to soft peaks. Fold half the egg whites into the coffee mixture, and half into the vanilla mixture.
- Lightly butter a 6-cup muffin tin; cut wax paper to fit in the bottom of each cup. Fill the cups halfway with the vanilla mixture. Tap the muffin tin lightly on the counter to make sure the cream mixture settles evenly. Fill the cups the remaining way with the coffee mixture. Place the tin in the freezer until firmly set.
- For the cookies: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Put the cookie crumbs, almond flour, and egg yolks in a bowl. Mix by hand until homogenous. Place the mixture between 2 large pieces of plastic wrap. Flatten with your hand, and then roll out with a rolling pin to 1/8-inch thick. Take the top sheet of plastic wrap off and flip on to the prepared baking sheet. Remove the bottom sheet of plastic wrap. Bake for 5 minutes. Remove from the oven and cut into circles with a cookie cutter a little larger that the top of your muffin cup. Set aside.
- When the cookies are cool and the parfait is frozen, invert the parfaits onto the cookie bases and place back in the freezer (make sure the parfaits are centered on the cookie).
- For the meringue: Put the eggs whites and sugar in the bowl of an electric mixer and whisk over a saucepan of simmering water until the sugar dissolves. Transfer the bowl to the mixer and whip on medium-high speed until you have firm glossy peaks. Place in a pastry bag with a 1/2-inch tip.
- Preheat the oven to 400 degrees F. Remove the parfaits from the freezer. Starting at the bottom of the cookie, working in circles, make meringue kisses until all of the parfait is covered. Put back in the freezer. When ready to serve, bake until golden brown. Drizzle with Rum Caramel Sauce and serve.
- Pour the cream into a 1-quart saucepan. Add the butter and bring to a simmer. Turn off the heat.
- Meanwhile, in a 2-quart saucepan, add the sugar and 2 tablespoons water. Swirl and let the sugar absorb the water. Heat over medium-high heat until it caramelizes (watching carefully) to a dark amber color. Turn off heat. Carefully pour the warm cream, a little at a time, being very careful to avoid any splattering caramel. Add salt, to taste. When all the cream has been added, mix well and pour into a container. Add rum, to taste.
VANILLA-RASPBERRY BAKED ALASKA
When a simple sundae just won't do, try Martha's individual ice cream bombes instead. Covered in a blanket of marshmallow-y torched meringue, these dome-shaped treats are made with a dacquoise base and a winning combination of vanilla ice cream and raspberry sorbet.

- Dacquoise: Preheat oven to 200 degrees. Use a pencil to trace six 3 1/2-inch-diameter circles on a piece of parchment. Turn over parchment and place on a rimmed baking sheet. Using a food processor, finely grind almonds. Transfer to a small bowl and whisk in confectioners' sugar. In a stand mixer fitted with the whisk attachment, beat together egg whites and salt until frothy. Continue beating on high speed while gradually adding superfine sugar until stiff peaks form, about 5 minutes. Remove bowl from mixer and gently fold almond mixture into meringue. Transfer to a piping bag fitted with a 1/2-inch plain round tip. Use a small amount of meringue to adhere prepared parchment to each corner of baking sheet. Pipe rounds of meringue using traced circles as a guide, starting at outer edge of each circle and moving toward center. Bake until firm and dry, 1 1/2 to 2 hours. Let cool completely on sheet.
- Filling: Line six 4-inch bowls with plastic wrap and freeze until chilled, at least 20 minutes. Spread about 6 tablespoons sorbet into each bowl, pressing firmly into bottom to create a smooth surface and prevent air pockets. Freeze until solid, about 1 hour. Spread about 1/2 cup ice cream evenly over sorbet in each bowl, pressing firmly to create a smooth surface and prevent air pockets. Place one dacquoise round, top-side down, on ice cream, pressing gently to adhere. Wrap overhanging plastic over the top and freeze until solid, at least 4 hours and up to overnight.
- Unwrap plastic on top of bowls (dip exterior of bowls in warm water to loosen, if necessary). Invert bowls onto a rimmed baking sheet, remove plastic wrap, and refreeze until ready to serve.
- Meringue Topping: Just before serving, combine egg whites and sugar in the heatproof bowl of a stand mixer set over (not in) a pot of simmering water. Whisk until sugar is dissolved and mixture is warm to the touch. Transfer bowl to mixer fitted with the whisk attachment and beat until stiff, glossy peaks form, about 5 minutes. Transfer to a piping bag fitted with a 3/8-inch plain round tip (such as Ateco #804); decoratively pipe meringue over each bombe to cover. Lightly brown meringue all over with a small kitchen torch. Serve immediately.
