CRISPY BAKED CEREAL CHICKEN
This is a great recipe for those that like the crispiness of fried chicken, but don't want all of the greasiness!

Steps:
- Preheat an oven to 375 degrees F (190 degrees C); grease a 9x12 inch baking dish.
- Place the cereal in a large plastic zipper bag and crush the cereal into crumbs. Add the garlic salt and seasoned salt; shake the mixture together in the bag to combine. Pour the cereal crumb mixture out into a shallow bowl.
- In another shallow bowl, beat the egg with the milk. Dip each chicken breast half into the milk mixture, then into the crumb mixture, coating the chicken well with crumbs. Place the coated chicken breasts into the prepared baking dish.
- Bake in the preheated oven until the cereal coating is golden brown, the chicken is no longer pink in the center, and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CEREAL-BREADED BAKED CHICKEN TENDERS
Two bowls and a pan--not much of a mess! Probably want to double the recipe since there will be NO leftovers!! Everyone loves these little crunchers!

Steps:
- Preheat oven to 400; grease an 11x7 baking pan; set aside.
- Pour Ranch dressing into Bowl 1.
- Combine Bowl 2 ingredients, set aside.
- Toss chicken in Bowl 1, then Bowl 2; fluffing artistically :-) .
- Place chicken cubes in single layer on baking pan.
- Bake for 12-15 minutes.
- Serve with additional Ranch dressing.
- VARIATION: Use Bleu cheese dressing instead (much more yumm-o for the grown-up palate!).
- VARIATION #2: There's always the honey-mustard salad dressing route, too.
WAFFLE CHICKEN FINGERS

- Make the dipping sauce: Whisk the maple syrup and hot sauce in a bowl.
- Make the chicken fingers: Whisk the egg, buttermilk, mustard and 1/2 teaspoon each salt and pepper in a large bowl. Add the chicken and toss to coat.
- Pulse the waffles in a food processor to make fine crumbs. Transfer the crumbs to a baking sheet.
- Heat 1/2 inch of vegetable oil in a large skillet or heavy-bottomed pot until hot but not smoking. Remove the chicken from the egg mixture, shaking off any excess, and coat with the waffle crumbs, pressing firmly to adhere. Fry the chicken in batches, adjusting the heat if necessary, until golden brown and cooked through, about 2 minutes per side. Transfer to a rack set over a baking sheet to drain. Serve with the dipping sauce.
BUTTERMILK FRIED CHICKEN FINGERS
Steps:
- Flatten chicken breasts and slice into large strips. Place in a large bowl and cover completely with buttermilk. Refrigerate 4 to 6 hours.
- Fill a pie plate or large shallow bowl with flour, season with salt and pepper. Heat two skillets with about a 1/2-inch of oil. While the oil is heating, coats the chicken fingers with the seasoned flour.
- Fry chicken in the oil until done (oil should not cover the top of the breasts), about 10 minutes per batch.
BRAN FLAKE CHICKEN FINGERS
Fiber doesn't have to taste like cardboard and tree bark!!! This is a great recipe to let younger chefs help with!

Steps:
- Rinse & pat chicken dry (with paper towel). Preheat oven to 400F and, using Becel spray, lightly grease cookie sheet. Cut each chicken breast into 5 strip's and set aside on plate/cutting board.
- In a food processor pulse bran flakes until partly crumbled, then add parm and seasonings. Grind the mix until it resembles fine bread crumbs. (fyi: you can add more or less seasonings depending on your preference!).
- Dump crumb mix into the Zippy bag and set aside. In a bowl lightly beat together the egg whites and milk, just until blended (should not get to frothy stage).
- Next, dunk all chicken pieces into egg/milk bath then drop into bag of crumbs. Seal the bag tight and shake, shake, shake till the chicken pieces are coated in crumb mix. Arrange on cookie sheet and bake in oven 10 min's, flip pieces and bake another 5-8 min's.
- Serve with fav. dipping sauce or eat "as is" -- Enjoy!

PARMESAN-CRUSTED CHICKEN FINGERS
These Parmesan-crusted chicken fingers have all the flavour and appeal of the greasy fast-food classic but are baked using an "oven frying" technique that used hardly any oil. Adding Parmesan cheese and tangy Dijon mustard to crunchy Japanese-style breadcrumbs (panko) gives these easy-to-prepare chicken fingers a sophisticated coating the whole family will enjoy. Look for panko breadcrumbs in the Asian section of your market. For even more kid appeal, serve the chicken fingers with a homemade honey mustard sauce, or a sweet-and-sour sauce made from apricot jam, cider vinegar, salt and pepper and a drop of hot sauce.

- Place a rack in the top third of the oven. Heat oven to 425°F Set a wire rack on a baking sheet and coat rack lightly with cooking spray.
- In a shallow bowl, stir together breadcrumbs, Parmesan cheese, parsley (if using), and pepper. In another shallow bowl, whisk together mustard and egg whites until frothy and opaque. Dip each chicken tender in egg white mixture, then in breadcrumb mixture to coat all sides. Place on prepared rack.
