CARRABBA'S SAUSAGE AND LENTIL SOUP
I've gone to Carrabas many times just for this soup. A lady from my supper club happened to bring this in for our soup theme and it tasted exactly like Carrabas! I've substituted Italian turkey many times and you would never notice the difference. You might also want to sprinkle some fresh basil and Parmesan cheese on top. Its good with a crusty piece of bread!

Steps:
- Brown sausage; drain off fat.
- In a large pot combine all ingredients bring to boil.
- Reduce heat,cover.
- Simmer for about 1 hour or until lentils are tender. Add water if necessary, for desired consistency. I like to puree about 1 cup of the soup and add back to pot to give it a thicker consistency.
- Sprinkle with Parmesan cheese and serve.

LENTIL AND SAUSAGE SOUP

Steps:
- Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
- Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.

SAUSAGE AND LENTIL SOUP

- Heat a 5 quart or larger stock pot or cast iron dutch oven over medium high heat.
- Remove any casings from your sausage if they are in links and add to the pan. Cook, breaking up the meat until no pink remains. About 7 minutes. Do not drain the fat.
- Add all remaining ingredients and stir to combine. Bring to a boil, then reduce heat and simmer covered for 1 hour or until the lentils soften. Serve warm with a sprinkle of parmesan cheese.

I found this recipe at The Joy of Soup website. It is very similar to Carrabba's Sausage and Lentil soup. It was so good I just had to share. I put the veggies all in the food processor and diced the fine. Everything was about the size of the lentil

Steps:
- Dice the first four ingredients and sauté them in a large pot with the oil. Sauté until tender.
- Remove vegetables from the pan and add the Italian sausage, removed from the casing, to the pan. Brown then drain off fat.
- Pour 8 cups for chicken broth, the vegetables back into the pot.
- Add tomatoes and lentils.
- Add remaining ingredients.
- Simmer until the lentils are tender, 30-45 minutes.
- Remove 1/3 of the soup and puree. then return it to the pot.
- Correct the seasonings and remove bay leaf.

- In a large pot, sauté the onions, carrots, garlic, and celery with the salt in either butter or olive oil until the onions are translucent.
- Add the sausage and cook until browned, breaking it apart as it cooks. Drain any excess oil from the pot.

- In a medium stockpot, heat up 2 tsp avocado oil over medium high heat. Add in ground Italian sausage and cook until it begins to brown.
- To the pot, add tomato paste, garlic, onion, carrots, celery, zucchini, oregano, thyme, basil salt and pepper. Saute over medium high heat until vegetables are softened and sausage is fully cooked through.
- Add in beef or vegetable stock, lentils and bay leaves. Stir until fully combined.
- Cover stock pot with lid and bring soup to a boil. Let boil for 5 minutes then turn down heat to a simmer for 20-20 minutes or until lentils are tender.

Steps:
- Remove sausage from casings and brown. Heat olive oil. Break up the meat while browning in the pan. Do not drain the fat from the meat or it will loose some of the Italian sausage flavor. Add veggies and cook until tender.
- In a pot, combine all other ingredients and bring to a boil on high heat.
- Once soup begins to boil, reduce heat and cover.
- Simmer for about 1 hour or until the lentils are tender.
- Add water (more broth if necessary) for desired consistency.
- Makes 8, 12 oz servings
- Sprinkle with parmasean cheese and serve.

- Brown the sausage in your stock pot over medium heat. Get a good sear on both sides, cut it into small bite sized pieces. 8-10 minutes
- While the sausage is browning, chop the onion and peel and dice the yam into small half inch pieces. Also mince the garlic and set aside.
- When the sausage is browned, remove from the stockpot to a plate and set aside. If you need additional oil in the stock pot, add 1 tablespoon olive oil and then the onion & yam and sauté for about 5 minutes, season with salt & pepper. Add the garlic & sauté another minute before adding back in the sausage. Add the chicken stock and 1 cup of water. Loosen all the brown bits in the bottom of the pan by scraping them with your spoon. Give everything a good stir.
- Increase the heat to medium high and bring it to a boil. Reduce to a simmer and continue to cook for about 20-25 minutes or until the lentils and yams are cooked. Keep an eye on the soup and stir it a couple of times. If the soup is too thick, add in an additional cup of water.
