The easiest and most delicious recipe for a nutritious and filling breakfast! I refrigerate leftover oatmeal and microwave a 3/4 cup serving every morning for several days before making another pot of oats.

2 cups water
1 cup almond milk
1 cup steel-cut oats
2 tablespoons maple syrup
2 tablespoons flaxseed meal
1 apple, diced
1 teaspoon ground cinnamon
1 tablespoon chopped almonds, or more to taste

Steps:

  • Combine water, almond milk, oats, maple syrup, flax seed meal, apple, cinnamon, and almonds in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 15 minutes. Unlock and remove the lid. Stir oatmeal thoroughly and serve immediately.

3 1/2 lbs apples, peeled, cored and sliced
1/2 cup butter
1 cup brown sugar
1 cup all-purpose flour
3 (1 1/2 ounce) packets instant maple and brown sugar oatmeal
1 pinch salt
1/2 cup walnuts, chopped
1/4 cup maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place apples in a 9x13 inch baking dish. In a bowl, cream together butter and sugar. Stir in flour, instant oatmeal and salt. Fold in walnuts. Sprinkle oatmeal mixture evenly over apples. Drizzle with maple syrup.
  • Bake in preheated oven 50 to 70 minutes, until apples are tender and topping is golden.
