- Meanwhile, in a separate saucepan over medium heat, mix honey, butter, cinnamon, cardamom, and pineapple chunks and stir until butter has melted and sauce is heated through.
- Drain carrots and add to the honey sauce and mix to coat.
- Serve warm.

- In a saucepan, bring 1 in. of water to a boil; place carrots in a steamer basket over water. Cover and steam for 8-10 minutes or until crisp-tender. Drain pineapple, reserving juice; set pineapple aside., In a saucepan, combine cornstarch and cinnamon. Add the brown sugar, butter and reserved juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.

- Bring a medium pot of water to a boil over medium heat. Add the baby carrots along with some salt and cook until just tender, about 5 minutes. Drain and set aside.
- In a small saute pan, add the butter, whisky and maple syrup and bring to a boil over medium heat. Lower the heat to a strong simmer and let the mixture reduce until thick and syrupy, about 6 to 8 minutes. Add the carrots and saute them until well glazed and just starting to color, about 4 to 5 minutes. Transfer the carrots to a serving bowl and sprinkle with the salt and pepper, to taste. Serve immediately.

- If you are using organic carrots, no need to peel them. If not, peel them. Cut peeled carrots into large pieces.
- Pour 3/4 cup water in a blender jar or a mixer grinder jar. Add pineapple pieces.
- Add carrot pieces and juice from 1/4 lemon.
- Blend all ingredients in blender or mixer until smooth puree.
- Line cheesecloth (or muslin cloth) over a large bowl and pour prepared puree over it. You can also use a fine mesh strainer or a nut-milk bag to strain the juice.
- Gather all sides of cheesecloth and squeeze to get maximum juice out of the pulp. Fresh juice of pineapple and carrot is ready, fill up two glasses with it and serve immediately.
- Don't throw the pulp, you can use the pulp for making muffins or smoothies.

- Put carrots in a medium sauce pan, put enough water in pan to just cover the carrots.
- Turn heat to high and boil the carrots for about 5 minutes (or until heated through, while retaining their crispy texture). Drain and place in serving bowl.
