THICK AND CHEWY PEANUT BUTTER CHOCOLATE CHIP BARS

Thick and Chewy Peanut Butter Chocolate Chip Bars image

A blondie lover's dream, these bars are moist, dense and chewy. Perfect for a bake sale or as a take-a-long. They can also be cut into 1-inch bites for a large party.

Categories     dessert

Time 45m

Yield about 24 bars

Number Of Ingredients 13

Cooking spray
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2/3 cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
  • Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
  • Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Use a ruler to cut it into 2-inch squares.

CHOCOLATE CHIP GRANOLA BARS

Chocolate Chip Granola Bars image

This recipe originates from the Whole Foods Market website. After a few tries, I tweaked the recipe slightly. Now these granola bars are a family favorite, and I feel good about feeding them the wholesome treat. Use organic ingredients if you can! (Preparation time includes toasting and cooling the oats.)

Provided by Jocelyn Villalon

Categories     Lunch/Snacks

Time 1h20m

Yield 16 bars, 16 serving(s)

Number Of Ingredients 6

4 cups quick-cooking oats
1/3 cup light olive oil
2/3 cup honey
1 teaspoon vanilla extract
1/2 cup mini chocolate chip
1 cup chopped nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spread oats onto an un-greased cookie sheet and bake for 15 minutes, stirring a couple of times.
  • Mix oil, honey and vanilla in a large bowl.
  • Add cooled oats, chocolate chips and nuts (if using) and mix well. (Note: If the oats are still warm at all, the chocolate chips will melt.).
  • Line a 9x13 baking dish with parchment paper and mist with oil.
  • Spread the mixture evenly onto the parchment.
  • Lay a sheet of waxed paper over the mixture and press to compact. (I use the palms of my hands to start, and then I use the bottom of a drinking glass to make the surface as smooth as possible.).
  • Remove the waxed paper and use a rubber spatula to press in any of the oats that may have "straggled" up the sides of the dish.
  • Bake for 20 minutes.
  • Cool completely and lift parchment from the dish.
  • Cut into 16 bars.

HOMEMADE CHOCOLATE CHIP CLIF BARS

Homemade Chocolate Chip Clif Bars image

A healthy allergy-friendly snack for kids and adults of all ages that won't break the budget. They're easy to customize based on your preferences or what you've got on hand. Store in the refrigerator for up to 2 weeks (if they last that long)!

Provided by The Real Food Dietitians

Categories     Snacks

Time 30m

Number Of Ingredients 8

1 1/4 cups sunflower seed butter (200 g)
1/2 cup honey (150 g)
1 teaspoon pure vanilla extract
Pinch of salt
3 1/4 cups crisp rice cereal* (85 g)
3/4 cup unsweetened shredded coconut (40 g)
2/3 cup raw or dry roasted unsalted sunflower seeds (60 g)
1/3 cup mini chocolate chips** (65 g)

Steps:

  • In a medium saucepan over low heat, combine the sunflower seed butter, honey, vanilla, and salt and stir constantly until melted together.
  • Remove from heat and in a large mixing bowl combine the cereal and sunflower butter mixture, stir until well combined.
  • Place bowl in the refrigerator and allow the cereal mixture to cool for about 10-15 minutes. This is important to prevent the chocolate chips from melting when added.
  • When the cereal mixture is cooled, fold the coconut, sunflower seeds, and chocolate chips into the cereal mixture. With clean hands is easiest.
  • Line a 9×13-inch baking pan or dish with parchment paper. Transfer the mixture to the pan and using your hands, firmly press the dough into the pan, spreading out evenly. For a thicker bar use an 11×7-inch or 9×9-inch pan or dish.
  • Place in the freezer and freeze for at least 30 minutes before cutting into bars.
  • Bars will keep up to two weeks in a covered container in the fridge (or freeze for longer storage).

  • Adjust oven rack to lower-middle position. Preheat oven to 325° F. Lightly spray a 9" x 13" metal baking pan with non-stick spray. Or, if you want really clean cuts, line the pan with heavy duty foil, letting the excess hang over the edges on the long sides of the pan. Then lightly spray the foil-lined pan with non-stick spray. This will allow you to pull up on the foil and lift the bars out of the pan.
  • In a large bowl, whisk together melted butter, brown sugar, and sugar until combined. Add egg, egg yolk, and vanilla, and whisk until well combined. With a rubber spatula, fold dry ingredients into the wet mixture. When about half-way combined, add chocolate chips and continue to fold until just combined. Do not over mix.
  • Transfer dough to prepared pan. Dough will be very thick. Press evenly into pan using a spatula and/or your fingertips. (Tip: Dough mixture can be sticky. Use the buttery side of the butter wrapper to press the dough into the pan - or simply rub your finger tips with a little butter, and then press the dough into the pan.) If desired, sprinkle a few more chocolate chips over the top, pressing them in a bit. It's also fun to sprinkle M&M's over the top - the mini M&M's are our first choice!

  • Preheat the oven to 350°F (177°C). Line the bottom and sides of a 9-inch square baking pan with aluminum foil or parchment, leaving an overhang on all sides to easily lift the bars out of the pan when cool. Set aside.
  • In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. Whisk in the egg, then the egg yolk. Finally, whisk in the vanilla extract. The mixture will be thick. Pour the wet ingredients into the dry ingredients and mix together until combined. The dough will be very soft, yet thick. Fold in the chocolate chips. The chips may not stick to the dough because of the melted butter, but do your best to combine them.
  • Transfer dough to the prepared baking pan and press/smooth into an even layer. Sprinkle the top with sea salt if desired. Also, I like to press a few more chocolate chips on top of the dough before baking (I do this just for looks!). Bake for 32-35 minutes or until lightly browned on the sides. Use a toothpick to test for doneness; if it comes out clean from the center of the pan, the bars are done.
