1 cup pink-grapefruit marmalade, such as Stonewall Kitchen
12 ounces gin
1/2 cup fresh lemon juice (from 3 to 4 lemons)
24 ounces seltzer
Pink or Ruby Red grapefruit wedges, for serving

Steps:

Stir together marmalade, gin, and lemon juice in a pitcher to combine. Divide among ice-filled glasses, top with seltzer, and garnish with grapefruit wedges. Serve immediately.

Ingredients

1 cup sugar
1 cup water
1/2 cup sliced fresh gingerroot
1/2 teaspoon whole peppercorns
1/4 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup coarse sugar
3 cups fresh grapefruit juice, chilled
Ice cubes
4 cups sparkling water, chilled

Steps:

In a small saucepan, bring the first six ingredients to a boil. Reduce heat; simmer 10 minutes. Refrigerate until cold. Strain syrup, discarding ginger and peppercorns., Using water, moisten rims of eight cocktail glasses. Sprinkle coarse sugar on a plate; hold each glass upside down and dip rims into sugar. Discard remaining sugar on plate., In a pitcher, combine grapefruit juice and syrup. Pour 1/2 cup into prepared glasses over ice; top with 1/2 cup sparkling water.

2 Persian cucumbers (or 1/2 English cucumber), thinly sliced into rounds, plus more slices for serving
12 ounces gin, such as Hendrick's
8 large ice cubes, or regular ice cubes
3 12-ounce bottles grapefruit soda, such as Spindrift

Steps:

Place cucumbers in a small pitcher. Mash with a muddling tool or a wooden spoon until cucumbers release juices and break down into small pieces. Add gin, cover, and refrigerate at least 12 hours and up to 3 days.
Place ice in each serving glass. Pour 1 1/2 ounces cucumber-infused gin into each and top with soda. Stir once, garnish with cucumber slices, and serve immediately.
