Homemade dumpling wrappers for water boiled dumplings, steamed dumplings or pot-stickers

Number Of Ingredients 3

420 g all-purpose flour ( ,{unsifted, dip and sweep 3 cups} + more for dusting)
210 ml to 220ml water ( ,room temperature or just boiled hot water (note1))
1/2 tsp. salt ( ,2g)

Steps:

  • Mix a small pinch of salt with flour, dig a hole in center and then stir the water in. Mix the flour with water with chop-stickers during the process so you can adjust the water amount if necessary. Then knead the dough for 8-10 minutes with a stand mixer or by hand until the dough is almost smooth. Cover and rest for 15 minutes. Then re-knead the dough for 2-3 minutes so we can get a very smooth dough. Cover and continue resting for 1 hour.
  • Dig a small hole in the center of the ball. Shape it to a large circle round. Cut so we will end up a long log.
  • Shape the log around 3cm in diameter. Divide the long log into small dumpling dough pieces (each around 10g). Dust each of them so they will not stick together.
  • Before rolling out your dumpling wrappers, dust your working surface again. Take one piece of dough and press it to a round disc. Rotate the wrapper when moving your rolling pin. Repeat the process, rotate the wrapper-roll and rotate the wrapper-roll. The wrappers will have thicker center and thinner edges naturally. You can refer to this video for the process.
  • This process might be quite difficult at the very beginning. Just keep trying. You will end up with perfect homemade dumpling wrappers.

You can buy premade Chinese dumpling wrappers from any Asian grocery store, and in most cases they work as well and taste as good as homemade wrappers. However, Shanghai Soup Dumplings should be made with homemade wrappers or they will not hold their soup when steaming. If you are making wrappers for Shanghai Soup Dumplings, try to keep the center of the wrappers thicker than the edges when rolling the dough disks.

3 cups all-purpose flour
1 cup boiling water
3 tablespoons cold water

Steps:

  • To make the dough in an electric mixer, place the flour in the work bowl of the mixer and slowly mix in the boiling water with a dough hook and then add the cold water to form a dough. Transfer the dough to a lightly floured work surface and knead for an additional 5 minutes by hand, or until it is soft and smooth. Divide the dough in half and then roll into 2 cylinders (about 1 inch in diameter). Cover the cylinders with plastic wrap and let rest for 30 minutes. Alternatively, to make the dough by hand, place the flour in a large bowl and slowly stir in the boiling water. Then add the cold water and mix until well combined. Turn out the dough onto a lightly floured work surface and knead for 10 minutes, or until the dough is soft and smooth. Divide the dough in half and then roll into 2 cylinders (about 1 inch in diameter). Cover the cylinders with plastic wrap and let rest for 30 minutes.
  • Use a sharp knife to cut each of the cylinders into 26 rounds, and cover the rounds with plastic wrap when not working with them so that they don't dry out. Roll each round into a ball. Then on a lightly floured work surface, flatten each ball into a 3-inch-wide disk, first with the palm of your hand and then using a mini rolling pin and working in a circular motion. The wrappers will keep in the refrigerator wrapped in plastic wrap for up to 2 days.

This is an authentic recipe given to me from a friend from Malaysia. It is her Grandfather's recipe who had a store. You'll probably want to double (or triple) the recipe; they are that good. The first four ingredients are for the dough. You can use wonton wrappers instead, just roll them out a little thinner.

2 cups flour
2 eggs, large
2 tablespoons vegetable oil
1/2 cup cold water, divided
3/4 cup chinese chives (find these in an asian market, you could substitute regular chives or scallions, but it won't be qui)
1 lb ground pork
1 teaspoon soy sauce
1 tablespoon cornstarch
1 teaspoon ginger juice (I grate some ginger and press it in a garlic press)
1/2 teaspoon chicken bouillon powder
1 teaspoon sesame oil
1/2 teaspoon finely minced garlic
salt & pepper

Steps:

  • For Dough:.
  • Place flour in a bowl and make a well.
  • Crack eggs in a separate bowl and lightly whisk.
  • Add eggs, oil, and half the water and mix together to make a dough.
  • Add more water as needed. The dough should not be sticky (similar to pasta dough).
  • Knead dough on a floured surface for about 10 minutes.
  • Cover and set dough aside to rest for 1/2 hour.
  • For filling:.
  • Mix the rest of the ingredients in a bowl to combine. Do not overwork the meat.
  • Cover filling and put in the refrigerator for 1/2 hour for flavors to blend.
  • To assemble:.
  • Roll out dough into sheets, as thin as you can but won't break. I use a pasta roller, it makes it so much easier.
  • Use a large round cookie cutter (about the size of a tuna can or a little larger) to cut out the rounds.
  • Fill 1 round with 1 tablespoon of the meat mixture and dampen the edges of the round with water and then seal.
  • Do the rest of the rounds.
  • To cook:.
  • Steam the dumplings for 12 minutes.
  • You can serve them as is or you can then:.
  • Stir-fry them in a little peanut oil just until they get a little crispy.
  • Serve them with your favorite dipping sauces.
  • Enjoy.
  • If you're not going to eat them right away, after you steam them let them cool off and place them in a zip top bag and refrigerate for up to 3 days.

1 tablespoon finely chopped Chinese chives
1 tablespoon sesame seeds
1 teaspoon chile-garlic sauce (such as Sriracha®)
1 pound ground pork
3 cloves garlic, minced
1 egg, beaten
2 tablespoons finely chopped Chinese chives
2 tablespoons soy sauce
1 ½ tablespoons sesame oil
1 tablespoon minced fresh ginger
50 dumpling wrappers
1 cup vegetable oil for frying
1 quart water, or more as needed

Steps:

  • Combine 1/2 cup soy sauce, rice vinegar, 1 tablespoon chives, sesame seeds, and chile sauce in a small bowl. Set aside.
  • Mix pork, garlic, egg, 2 tablespoons chives, soy sauce, sesame oil, and ginger in a large bowl until thoroughly combined. Place a dumpling wrapper on a lightly floured work surface and spoon about 1 tablespoon of the filling in the middle. Wet the edge with a little water and crimp together forming small pleats to seal the dumpling. Repeat with remaining dumpling wrappers and filling.
  • Heat 1 to 2 tablespoons vegetable oil in a large skillet over medium-high heat. Place 8 to 10 dumplings in the pan and cook until browned, about 2 minutes per side. Pour in 1 cup of water, cover and cook until the dumplings are tender and the pork is cooked through, about 5 minutes. Repeat for remaining dumplings. Serve with soy sauce mixture for dipping.

small bunch chives
250g pack pork mince
100g raw prawn , finely chopped
½ a 220g can water chestnut
1 - 2 tbsp soy sauce , to taste
knob of ginger , peeled and finely grated
18 wonton wrappers (see Know-how)

Steps:

  • Mix half of the chives and all of the filling ingredients together. Spread 1 heaped tbsp of filling onto each wonton skin and spread out a little.
  • Bring the wrapper up and around the pork until you have a small, firmly-packed dumpling with an open top. Repeat with the rest of the mix. Can be made up to a day ahead.
  • Steam the dumplings for 10 mins until the wrappers are translucent. Top with remaining chives and serve with dipping sauce.

This is a nice simple vegetarian dumpling with very few ingredients. They taste nice and fresh. All the spicing is in the sauce, which you can adjust to your own taste. If you can't find dumpling wrappers, you can make your own or you can substitute ravioli or won ton wrappers. The amount of filling will vary according to the size of your wrapper. Don't put too much in, or the dumpling will burst.

20 -24 dumpling wrappers
6 green peppers
1 tablespoon salt
1/4 cup Chinese wine
1/4 cup balsamic vinegar
2 in piece ginger
1/2 cup soy sauce
1/4 cup oil (optional)
1/4 teaspoon red chili pepper flakes (optional)

Steps:

  • Break green peppers into large pieces, removing seeds and stems.
  • Place peppers in boiling water and parboil.
  • Remove from water and mince, adding salt in 3 batches as you mince. The idea is to get the water & juices out of the green peppers.
  • Squeeze juices from the green pepper, so they are dry. If you squeeze the juice into a bowl, you can use them in stock or to moisten other food, etc.
  • Put 1 heaping Tablespoon of green pepper into a dumpling wrapper and seal. You may need more or less depending on the size of your wrappers.
  • Cook according to package directions.
  • Make the sauce by peeling ginger and cutting into thin matchsticks. Add the soy, wine and balsamic vinegar to the ginger.
  • Put chili peppers in a small bowl, Heat oil in a small pan and add it to a bowl with the chili peppers in it. Let it sit until the oil is cool. This makes chili oil. Add as much as desired to the rest of the sauce. Portion sauce into small shallow individual bowls/saucers.
  • Dip dumplings into sauce just before you put them in your mouth. Yum.
