Steps:
- Heat the milk in a large saucepan over medium-low heat to 185 degrees F.
- In a separate large pot over medium heat, make the roux by melting the butter and slowly whisking in the flour and onion powder. Once the milk has reached temperature, add the roux and the cheese. Using an immersion blender, carefully blend all ingredients until smooth. Season with salt and pepper. Stir in the macaroni.
SMOKED GOUDA CHEESE MACARONI
Steps:
- Preheat the oven to 375 degrees F. Put the water, 1/2 teaspoon of the salt, and the oil in a large, heavy saucepan over high heat and bring to a boil. Add the macaroni and cook, stirring occasionally, until tender, about 8 minutes. In a small, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. Remove the white sauce from the heat and stir in the cheese. Continue stirring until the cheese melts. Lightly grease a 6 1/2 by 10-inch casserole dish with the remaining 1/2 teaspoon butter. Combine the cheese sauce and macaroni in a large mixing bowl and mix well. Pour into the prepared casserole and bake until lightly golden on top, about 20 minutes. Remove from the oven and serve hot. Garnish with parsley.
SMOKED GOUDA MAC AND CHEESE
This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch casserole dish.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Melt butter in a small saucepan over medium heat. Stir in the flour and cook until a roux forms. Stir in the milk, salt and pepper; cook, stirring constantly, until sauce is smooth and thick and coats the back of a spoon. Remove from heat and stir in cheese.
- Combine cooked pasta and cheese sauce; transfer to prepared dish.
- Bake in preheated oven for 15 minutes, or until heated through.

CAULIFLOWER "MAC" WITH BACON AND SMOKED GOUDA
Swap out the pasta in macaroni and cheese for golden roasted cauliflower, and you'll be able to justify having seconds (and thirds).

- Preheat the oven to 400 degrees F. Line a baking sheet with foil and lay the bacon out on top. Bake until crispy, 15 to 20 minutes.
- Meanwhile, cut off the green leaves from the cauliflower. Using your hands or a knife, cut the florets away from the core.
- Remove the bacon from the baking sheet and set aside. Put the cauliflower on the baking sheet and, using a heatproof spatula, toss with the bacon fat left behind. Spread out in an even layer, sprinkle with 1/4 teaspoon salt and some pepper and roast until golden brown, about 20 minutes.
- Meanwhile, in a saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, until a thick paste forms and turns golden brown, about 2 minutes. Add the milk 1/2-cup at a time, whisking well between each addition, and bring to a bare simmer. Whisk in two-thirds of the smoked Gouda until melted. If the sauce is too thick, add more milk, 1/4-cup at a time, until the desired consistency is reached.
- Place the roasted cauliflower in 13-by-9-inch baking dish or large oval casserole. Crumble the bacon over the cauliflower, then pour the cheese sauce over the top, making sure all the florets are covered. Sprinkle with remaining Gouda and bake until the cheese is bubbling and the top is golden brown, 30 minutes.
SUPER DELUXE OLD FASHIONED MACARONI AND CHEESE
Steps:
- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

- Preheat oven to 350°. Cook macaroni according to package directions. In a Dutch oven, whisk flour, milk and cream until smooth. Don't be tempted to use anything less than extra sharp cheddar cheese. For this dish to have the cheesy flavor expected, it requires a VERY sharp cheese combined with the smoked gouda.

- Fry bacon in a large skillet until crisp, remove to paper towels to drain. Add panko bread crumbs and toast in skillet until golden. Remove from heat and crumble bacon into bread crumbs, toss to combine.
- Using salted water, cook the pasta according to package directions, but do not rinse; set aside.
- Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in the milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese (note: add cheese about a cup at a time, stirring to incorporate so as not to cause graininess).
- In a large bowl combine cooked pasta and cheese sauce. The sauce will be thin, but will thicken once baked.
- Pour the pasta mixture into a lightly greased 8 x 11 x 2 baking dish. (Use a spatula to scrape out every ounce of that saucy goodness.) Sprinkle the top with the remaining cup of cheese and sprinkle with the prepared bacon/panko topping. (note: a layer of shredded parmesan cheese may be added prior to the sprinkling of the crumb topping, if desired.).
- Bake at 400° for 20-30 minutes or until bubbly. Remove from oven and allow to rest about 10-15 minutes.

- Preheat the oven to 350º.
- In a large pot of boiling salted water, cook the pasta until al dente, about 11 minutes (or as directed on package).
- Meanwhile, heat a large, heavy-bottomed saucepan over medium-high heat.
- Add the sausage and cook, stirring and breaking up the meat with a wooden spoon, until no longer pink, 3 to 4 minutes.
- Transfer the sausage to a large bowl and wipe the saucepan clean.
- Add the pasta and 1 cup caramelized onions to the sausage and stir to combine.
- In a medium saucepan or a microwave oven, heat the milk until steaming.
- Return the large saucepan to the stove, add the butter and melt over medium heat.
- Add the flour and cook, whisking constantly, for 3 minutes.
- Whisk in the hot milk, 1/4 cup at a time, and continue whisking until the sauce is smooth and thick and comes to a simmer.
- Add 2 1/2 cups cheese, remove from the heat and whisk until the cheese is melted, about 2 minutes; season to taste with salt and pepper.
- Add the cheese sauce to the pasta mixture and stir to combine.
- Butter a 9-by-13-inch baking dish and add the pasta mixture in an even layer. Sprinkle the remaining 1/2 cup caramelized onions and 1 1/2 cups cheese on top.
- Bake until golden and bubbling, about 40 minutes.
- Remove from the oven and let rest for 10 minutes before serving.

- Cook the noodles. Bring a large pot of salted water to a boil and cook macaroni noodles according to package directions and drain.
- Make the sauce. Heat a 12 inch cast iron skillet over medium heat. Melt 1/2 cup of butter and whisk in the flour until a smooth, thin paste forms. Then whisk in the mustard powder.Carefully pour in the half and half and bring the mixture up to a boil while whisking. Reduce the heat and whisk in the cream cheese until smooth. Whisk in the cheddar cheese and Gouda cheese and stir until melted.
- Combine the noodles and sauce. Turn off the heat and pour in the cooked macaroni noodles. Stir gently until the noodles are coated by the cheese sauce. Serve immediately.

- Toast the bread slices until golden brown and crispy: place the bread slices on a baking sheet and broil for several minutes, turning a few times, or use a toaster oven or toaster. Tear the bread into pieces and process in a food processor until the bread becomes the consistency of bread crumbs. Then add the mustard powder, thyme, and salt and pulse a few times to combine.
- Bring a large pot of water to a boil, adding about 1 tablespoon of kosher salt to liberally salt it. Add the pasta and cook until al dente (start tasting the pasta a few minutes before the package instructions and stop cooking once the pasta is just tender but still firm). Then drain the pasta in a colander and rinse it quickly with warm water.
- Meanwhile, grate the smoked gouda and measure out the butter, flour, milk, salt, onion powder, and garlic powder.

Heat the mixture for several minutes, stirring constantly. Immediately when the color starts to turn light brown, reduce the heat to low. Add the salt, onion powder, and garlic powder, and continue cooking on low heat for about 2 minutes to thicken slightly, whisking frequently.
