Baked Brie image

Serve a creamy, runny-centered, pastry-wrapped baked brie at your next party and watch your guests cluster around it, slicing off bits until it completely disappears. Don't be tempted to use a fancy, artisan brie from a cheese shop here. This recipe works best with the regular kind of brie you find at the supermarket; fancier bries may leak out of their pastry. Choose any flavor jam for the topping. Orange or ginger marmalade will give you something tangier than, say, raspberry and cherry jam, which are sweeter, more mellow options. While a wedge of brie will work in this recipe, a round of brie looks prettiest.

1 piece of brie, 4 to 8 ounces, cold
1 sheet puff pastry, chilled but not frozen
2 tablespoons thick jam or marmalade, any flavor
1 egg beaten with 1 tablespoon water
1 tablespoon demerara sugar (optional)

Steps:

  • Heat the oven to 400 degrees. Using a large chef's knife, cut the white rind off the brie and discard (this works best when the cheese is very cold).
  • Roll the chilled dough to about 1/8-inch thick. Transfer the rolled dough to a baking sheet covered with parchment paper. Place the brie at the center of the dough square and then spread the jam over the top of cheese. Drape the four corners of the dough, one at a time, across the brie to enclose it. If there is too much overlapping dough, trim the sides before draping. You want the dough to just cover the brie.
  • Brush the egg wash over the brie, making sure it does not pool where it meets the tray or it will stick. Sprinkle with the sugar if using. Bake on the middle rack of the oven for 35 to 45 minutes, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

1 round loaf sourdough bread (1 pound)
1 tablespoon butter, softened
1 teaspoon chili powder
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon ground mustard
1 round (8 ounces) Brie cheese, rind removed

Steps:

  • Preheat oven to 350°. Cut top third off loaf of bread; hollow out enough bread from bottom to make room for cheese. Cube removed bread; set aside. Using a knife, make 2-in. cuts into loaf around edge of bread at 1-in. intervals. Spread inside of bread with butter., Combine chili powder, sugar, garlic powder and mustard; sprinkle 2 teaspoons into loaf. Top with cheese; sprinkle with remaining spice mixture. Replace bread top., Transfer to an ungreased baking sheet. Bake 25-30 minutes or until cheese is melted. Let stand 10 minutes. Serve with bread cubes.

1 brie wheel (8- or 9-oz)
1/2 to 2/3 cup pepper jelly

Steps:

  • Preheat oven to 350 degrees. Remove top rind of cheese; leave rind on sides and bottom. Place brie cut side up in brie baker; top with pepper jelly.
  • Place brie baker in center of hot oven for 15 minutes. DO NOT place lid on baker while in oven.
  • Remove from oven and place brie baker cover on top to keep brie warm and soft until ready to serve.

8 oz wheel brie, top rind cut off (I used double crème brie)
1 scant tbsp truffle honey
1 tbsp turbinado sugar
8 oz wheel brie (I used double crème brie)
1 ½ slices prosciutto, torn
olive oil, for drizzling
pepper, to taste
fig and sesame crackers
sea salt artisan flat crackers
parmesan crisps
prosciutto
grapes
marcona almonds
lightly salted whole almonds

Steps:

  • Make the Truffle Honey Brulee Brie: Preheat oven to 350 degrees. Place brie in a 6.5 inch mini cast iron skillet, cut side up. Spread truffle honey over the top of the brie. Bake for 8-10 mins until cheese is soft but not overflowing. Sprinkle sugar over the top of the brie. Use a kitchen torch to caramelize the sugar. Serve hot.
  • Make the Pepper Prosciutto Brie: Preheat oven to 350 degrees. Score the top of the brie by making vertical cuts (about half inch apart) then horizontal cuts (about half inch apart) over the surface of the brie, making sure not to cut any more than half way through the center of the brie. Place the brie in a 6.5 inch mini cast iron skillet. Drizzle the top with olive oil until just coated. Sprinkle with a pinch of black pepper. Top with torn prosciutto. Bake for 8-10 mins until cheese is soft but not overflowing. Serve hot.
  • While the brie is baking, use the brie container to mark approximately where the brie will sit on the board. Arrange remaining items on the board, making sure to alternate colors, shapes, and textures on the board. Add baked brie to the board right before serving. Enjoy!
  • Plan to serve about 1-2 oz brie and 2 oz of meat per person. Serve crackers, nuts, parm crisps, and fruit, as needed (these are easy to have on the side for refills).
