Make the ultimate simple homemade chili sauce (red chilli sauce) with just 4 ingredients, a few minutes, and tons of ways to flavor it!

1 pound red chilies (choose a variety based on the heat level you'd prefer (check notes))
2 Tbsp salt
1/3 cup olive oil
1/2 cup vinegar (I used apple cider vinegar)
Sugar, just a pinch to taste (OPTIONAL)

Steps:

  • First, wash the chili peppers, patting them dry with a little paper towel.
  • Then, cut off the stem ( green tops). It's best to wear gloves and avoid touching your face while dealing with the chilies!
  • Next, roughly chop the peppers, keeping the seeds. You don't need to be too precise with your chopping as everything will be blended.
  • Add the peppers and the rest of the ingredients to a food processor or blender and blitz into a sauce.Taste the sauce and adjust seasonings as necessary.
  • Then, transfer the sauce to a sterilized jar and enjoy it immediately or store it in the fridge for longer-term storage.Optionally, you can reduce this sauce down to thicken it slightly over a hob. Read the recipe notes for more on that.
  • Store the homemade chili sauce in a glass jar (plastic will stain), for up to 1 month in the fridge and for up to four months in the freezer.If it begins to taste sour or moldy in any way (or has physical signs of mold), then discard it.Also, you may be able to hot water bath can this red chili sauce (and then store it for months in the fridge) - however, it depends on its' pH balance and using the correct method. If this is something you'd like to do, it's best to consult reputable sources regarding canning items.

2 pounds tomatoes (chopped)
1 small white onion (chopped)
2 jalapeno peppers (chopped - use Serrano peppers for a bit more heat!)
2 cloves garlic (chopped)
¼ cup chopped cilantro
Juice from half a lime
2 tablespoons olive oil
¼ teaspoon cumin ((optional, not traditional, more Tex-Mex))
Salt to taste

Steps:

  • Add tomatoes, onion, peppers, garlic, cilantro and lime juice to a food processor. Process until fairly smooth.
  • Heat a large pot to medium heat and add olive oil. Add the salsa and it will sear quickly.
  • Add cumin and bit of salt.
  • Bring to a quick boil and reduce heat to a simmer. Simmer for 15-20 minutes.
  • Season with salt if needed and stir.
  • Cool and refrigerate until ready to use.
  • Serve it up in a squeeze bottle like they do in Mexican restaurants for fun!

Red chile is a staple of the New Mexican and West Texan diet, and this recipe is my grandmother's recipe. When I make it, it reminds me of the smells of her cooking in her kitchen, fresh corn tortillas, beans, and red chile peppers. You can kick up the spiciness by adding more arbol chile pods.

2 tablespoons canola oil
20 New Mexico dried red chile pods, stemmed and seeded
10 dried chile de arbol peppers, stemmed and seeded
1 large yellow onion, chopped
3 cloves garlic, chopped
1 quart chicken stock, or more if needed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 tablespoon honey

Steps:

  • Coat the bottom of a heavy saucepan with oil; add chile pods. Toast over medium heat until aromatic, about 3 minutes.
  • Stir in onion and garlic; cook and stir until fragrant, about 5 minutes. Add enough chicken stock to allow pods to float; simmer until they develop the texture of wet leather, 5 to 7 minutes.
  • Fill blender halfway with chile-stock mixture. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour into a bowl; repeat with remaining mixture. Strain sauce through a fine mesh strainer into a saucepan over medium heat. Discard solids.
  • Stir cumin, coriander, and oregano into the saucepan; add honey. Cook until sauce is thick and evenly coats the back of a spoon, about 10 minutes.

Steps:

  • Heat oil in heavy saucepan over medium heat, add flour and stir until well blended into a roux (about 1 minute). 2 ounces whole dried New Mexico chiles (6)
1 ounce whole dried guajillo chiles (6)
4 cups boiling-hot water
3 tablespoons finely chopped white onion
3 garlic cloves, minced
1 1/2 teaspoons ground cumin
3/4 teaspoon dried oregano, crumbled
2 tablespoons vegetable oil
1 tablespoon all-purpose flour
1 tablespoon kosher salt, or to taste
2 teaspoons Sherry vinegar, or to taste
1 teaspoon sugar, or to taste

Steps:

  • Rinse chiles and split open, discarding stems, seeds, and ribs.
  • Heat a well-seasoned cast-iron skillet over moderate heat, then toast chiles, skin sides up, in batches, about 30 seconds (be careful not to burn them, or sauce will be bitter). Transfer chiles as toasted to a heatproof bowl and pour boiling water over them. Cover bowl and soak chiles, stirring occasionally, until softened, about 15 minutes.
  • Purée chiles with three fourths of soaking liquid, reserving remainder, in a blender until smooth (use caution when blending hot liquids). Pour purée through a coarse sieve into a bowl, pressing on solids, and discard solids. Whisk reserved soaking liquid into chile mixture.
  • Cook onion, garlic, cumin, and oregano in oil in a large heavy saucepan over moderately low heat, stirring, 2 minutes. Add flour and cook, stirring, 2 minutes. Whisk in chile mixture and simmer, partially covered, whisking occasionally, until reduced to about 2 1/2 cups, about 30 minutes. Season with salt, vinegar, and sugar.

1 medium onion, red or white
1 medium garlic clove
1 or 2 medium jalapeno or serrano chile
1/3 bunch(es) fresh cilantro, leaves only
1 teaspoon(s) coarse sea salt
1 dash(es) ground black pepper
1 dash(es) lime juice

Steps:

  • Peel tomatillos, wash thoroughly to remove sticky residue, and place tomatillos in food processor
  • Peel and quarter onion and add to food processor
  • Peel garlic clove and add to food processor
  • Cut chiles in half, remove stems, membrane and seeds. Add chiles to food processor. NOTE: If you like "heat" leave the seeds in.
  • Remove stems from cilantro and add leaves only to food processor.
  • Pulse food processor until ingredients at at your desired coarseness. We like ours a little chunky. You may have to stop the processor and wipe the sides down to get everything diced.
  • Transfer to serving dish; add salt, pepper and lime juice; stir to blend.
  • This is better if you allow it to set in fridge covered for an hour or longer before serving. It improves with age. Will last refrigerated for at least a week. (As if around here)

3 tablespoons canola oil
1 medium Spanish onion, coarsely chopped
3 cloves garlic, coarsely chopped
3 tablespoons ancho chile powder
1 1/2 teaspoons ground cumin
1 28-ounce can whole plum tomatoes, pureed with their juices
Kosher salt and freshly ground pepper
1 tablespoon honey

Steps:

  • Heat the canola oil in a medium saucepan over high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook 30 seconds. Stir in the chile powder and cumin and cook 30 more seconds.
  • Add the tomatoes, season with salt and pepper and cook over medium-high heat, stirring, until reduced to a sauce-like consistency, about 25 minutes. Transfer to a food processor and puree (add water if necessary). Add the honey and more salt and pepper, if needed.

1/2 pound plum tomatoes (4 to 6)
10 dried New Mexico red chiles
2 dried ancho chiles
10 dried cascabel chiles
4 cups water
1 tablespoon olive oil
1 onion, chopped
1 canned chipotle pepper in adobo
1 garlic clove, chopped
1/2 teaspoon ground cumin
2 teaspoons oregano
1 to 2 teaspoons salt
1 tablespoon vegetable oil

Steps:

  • Cut off stem ends of tomatoes and roast them in a cast-iron skillet over high heat until their skins blacken. Transfer to a blender or food processor. Dry skillet and return to high heat. Add dried chiles and roast them, stirring, until they begin to release their aroma, about 3 minutes. Transfer chiles to a bowl and pour water over. Leave to soften and rehydrate, 10 to 15 minutes. Add softened chiles to tomatoes. Taste chile water; if it is not bitter, add 1 cup to food processor and reserve remaining water separately, or use plain water. Wipe out skillet, heat olive oil over high heat, add onion and saute over medium heat until browned, about 10 minutes. Transfer onions to food processor along with chipotle pepper with its sauce, garlic, cumin, oregano and salt to taste. Puree to a fine paste, stopping once or twice to scrape down sides of workbowl with a rubber spatula. If needed, add a little more water to processor.
  • In a large skillet heat vegetable oil until just smoking, add chile puree and heat until sizzling. Fry sauce, stirring continuously, 3 to 5 minutes. If sauce becomes too thick, thin it with a little more chile water.
  • Serve warm with tamales or grilled meats. Or cool and refrigerate for up to 1 week.

8 cups dried whole New Mexico red chile pods (medium hot)
Water, to cover
2 teaspoons salt
1/2 teaspoon ground or leaf Mexican oregano
6 cloves minced garlic, or 2 to 3 teaspoons granulated garlic
1 (8-ounce) can tomato sauce, optional

Steps:

  • Remove stems and seeds from dried chile pods. Rinse and place in 4-quart pot. Cover with water and bring to a boil. Remove from heat, cover, and let pods steep for 30 minutes.
  • Drain pods in a colander and reserve juice. Place softened pods into a blender or food processor, adding just enough reserved juice to barely cover. Blend to a fine consistency. Pour the resulting pulp into a fine sieve or colander and allow the extra juice to drain out, stirring occasionally.
  • Return this pulp to the 4-quart pot and add the salt, oregano, and garlic. Bring to a boil, then simmer uncovered for 10 minutes, stirring occasionally. Taste to adjust seasonings. If the sauce tastes bitter, add the tomato sauce. Simmer for 5 more minutes.
  • Use red chile sauce over enchiladas, chile rellenos, or as a side or sauce for any other Mexican entree.

4 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
2 dried red chilies (such as Guajillo or New Mexican Red)
2 cloves garlic, chopped
1 small onion, chopped
2 corn tortillas
1 1/2 cups chicken stock
1 teaspoon sea salt
1/2 cup shredded monterey jack cheese
1/2 cup fresh cilantro stem

Steps:

  • Preheat oven to 350º.
  • Heat olive oil in frying pan and brown chicken breasts on both sides.
  • Remove from pan and place in oven proof baking dish.
  • Open dried chiles, remove and discard seeds and stem.
  • (Seeds are removed to prevent burning) Cut chiles into pieces.
  • Melt butter in frying pan.
  • Lightly sauté chiles in butter.
  • Add chopped onions and garlic.
  • Tear tortillas into pieces and add to pan.
  • (The tortillas help to thicken sauce.) Sauté until ingredients are lightly browned.
  • Add chicken stock and salt and simmer until ingredients are soft.
  • Remove from heat and cool sauce to room temperature.
  • Transfer cooled sauce to blender and blend until smooth.
  • Pour sauce over chicken breasts.
  • Bake at 350º for 20-25 minutes or until chicken is done.
  • Remove from oven, top with shredded jack cheese and garnish with sprigs of cilantro.
  • Bake a few additional minutes to melt cheese if necessary.

15 large dried chilies (such as Anaheim, New Mexico, California, or pasilla)
4 -5 garlic cloves
2 teaspoons ground cumin
1 teaspoon salt
2 teaspoons all-purpose flour
2 teaspoons olive oil or 2 teaspoons melted shortening

Steps:

  • Remove stems and seeds from dried chili peppers.
  • Place peppers in a single layer on a baking sheet.
  • Roast in 350°F oven for 2 to 5 minutes or until you smell a sweet roasted aroma, checking often to avoid burning.
  • Remove from oven and soak in enough hot water to cover for about 30 minutes or until cool.
  • Put peppers and 2 1/2 cups of the soaking water into a blender (save the remaining soaking water).
  • Add garlic, cumin and salt.
  • Cover and blend until smooth.
  • In a 2-quart sauce pan, stir flour into oil or melted shortening over med heat until browned.
  • Carefully stir in blended chili mixture.
  • Simmer uncovered for 5 to 10 minutes or until slightly thickened. (If sauce gets too thick, stir in up to 1 cup of the remaining soaking water until you reach the desired thickness) Use this sauce for traditional tamales, recipe #15286.
  • Note: When working with chilies, use rubber gloves to protect your skin, and avoid contact with your eyes. Wash hands throughly with soap and water to remove all of the chili oils.

An authentic Mexican red sauce without the tomatoey taste found in Tex-Mex food. Try it once, and you'll throw rocks at canned sauces. No serving amount is provided, because you can use it in a lot of ways.

6 dried red chilies (a mixture of New Mexico, and Passillas gives great depth)
3 garlic cloves, smashed
2 teaspoons dried oregano
2 tablespoons ground cumin
4 cups boiling water (broth may be used, but is quite unnecessary)
4 tablespoons lard or 4 tablespoons bacon drippings
3 tablespoons all-purpose flour
salt

Steps:

  • Remove stems and seeds from dried chiles, and break chiles into smaller pieces.
  • Place chiles in a blender cup with garlic, and cover with boiling water. Let stand for 30 minutes to an hour.
  • In the mean time in a heavy sauce pan use the lard and flour to make a roux, and let cook for a couple of minutes to remove any raw taste.
  • When the chiles have rehydrated, blend on "liquify' until smooth.
  • Add to sauce pan with oregano,cumin,and salt. Simmer for 15 minutes.
  • If you can make this a few hours, or a day, ahead it is even better.

  • 1. Remove stems and seeds from chiles. Place in heavy saucepan and cover with water. Boil for 30 minutes at medium low temperature Remove from heat Puree in food processor or blender until smooth and set aside
  • 2. Add lard to heavy skillet and saute onions and garlic until translucent. Add flour and stir to make a smooth paste Add red chili pulp to flour mixture and stir to blend
  • 3. Add salt, oregano and toomato sauce Simmer for 1/2 hour on low heat.
  • 4. Store in airtight jar in refrigerator.
