4 boneless skinless chicken breasts
salt & pepper
4 tablespoons olive oil
4 cups thinly sliced bell peppers (use a mix of colors)
1 medium onion, sliced thin
4 cloves garlic, chopped fine
1/4 cup chopped fresh basil
4 tablespoons balsamic vinegar

Steps:

  • Season chicken with salt and pepper.
  • In a large skillet, saute chicken in 2 tablespoons of oil over medium high heat, turning once for a total of about 8 minutes or until golden brown.
  • Transfer chicken to a plate.
  • Add 2 remaining tablespoons of oil to the skillet and cook peppers and onions, stirring often until just softened.
  • Add garlic and stir for about 1 minute.
  • Stir in basil and vinegar and return chicken and juices to the skillet.
  • Reduce heat to low and simmer until chicken is cooked through, about 3 more minutes.
  • Taste and adjust salt and pepper seasonings.

I invented this one night when these were the only ingredients I had on hand. It's the first time my husband ever raved--and I mean RAVED--about my cooking. He was still talking about it days later! Serve over noodles if desired.

1 tablespoon olive oil
1 onion, chopped
2 chicken leg quarters
4 cloves garlic, chopped
1 ½ cups chicken stock
½ cup balsamic vinegar
½ cup chopped sun-dried tomatoes
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, heat oil over medium heat. Add onion and reduce heat to low. Allow onion to caramelize, stirring only enough to prevent sticking and to be sure that all sides are fully cooked. Add garlic and saute briefly.
  • Increase heat to medium. Add chicken hindquarters to skillet and brown on both sides. Remove chicken, onion and garlic and place in a 9x13 inch baking dish.
  • Combine the stock and vinegar. Deglaze the skillet with this mixture, then bring to a boil and continue to simmer, stirring occasionally, until the mixture has thickened. Pour mixture over chicken and stir in the sun dried tomatoes. Cover dish tightly and bake in the preheated oven for 15 to 20 minutes, or until chicken is done and juices run clear.

4 boneless skinless chicken thighs
1 large red onion
2 tablespoons olive oil
3 tablespoons balsamic vinegar
1/4 teaspoon salt, divided
1/2 teaspoon ground pepper, divided
1/4 teaspoon dried marjoram
1/4 teaspoon dried oregano
1 sprig flat leaf parsley, fresh (optional)
lemon wedge (optional)

Steps:

  • Heat the oil in a large, non-stick pan, high heat.
  • Cut onion into thin rounds.
  • Add 1/4 tsp. pepper and 1/8 tsp. salt.
  • Saute, cooking about 5 minutes.
  • Reduce to med-high.
  • Add chicken, 1/4 tsp. pepper, 1/8 tsp. salt, marjoram and oregano.
  • Cook 2 minutes, and then add balsamic vinegar.
  • Stir and reduce heat to low, cover, and simmer for 25-35 minutes.
  • Cook uncovered for another 2-4 minutes, until sauce has reduced somewhat.
  • If you want to garnish the dish, sprinkle with chopped parsley and serve with lemon wedges.

  • Preheat oven to 375 degrees F (190 degrees C).

Steps:

  • Pour 3 Tbsp vinegar over chicken and marinate for several hours or overnight.
  • Preheat oven to 350 degrees.
  • Wash potatoes thoroughly and cut into ¼ inch slices. Steam in a vegetable steamer until almost tender (approx. ten minutes).
  • Meanwhile, in a small skillet, saute onion in olive oil on medium heat. Add a splash of water and cook until soft.
  • Mix in remaining tablespoon vinegar.
  • Mix in potatoes.

2 -2 1/2 lbs chicken, cut into pieces
2 teaspoons salt
2 teaspoons pepper
3/4 cup olive oil
3/4 cup balsamic vinegar
2 cups yellow onions, chopped
3 tablespoons fresh garlic, chopped
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh sage, chopped
3 tablespoons fresh parsley, chopped
3 tablespoons fresh basil, chopped
2 lbs red rose potatoes, peeled
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
2 (14 1/2 ounce) cans chicken stock
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Marinate The Night Before:.
  • Rinse and trim the chicken. Salt and pepper chicken pieces on both sides. Lay the pieces flat, skin side up, in a glass baking dish and sprinkle with the fresh garlic, herbs, and onion. Pour vinegar and oil over the chicken, cover with plastic wrap and refrigerate. Turn the pieces once or twice while in the marinade.
  • To Bake:.
  • Preheat the oven to 375 degrees.
  • Cut the potatoes 1 inch cubes for roasting. Sprinkle them with salt and pepper, coat them with olive oil. Set them aside.
  • Remove the chicken from the marinade, reserving the liquid. Strain the marinade through a fine sieve.
  • Reserve the liquid for making the gravy.
  • Put the potatoes on the bottom of a large roasting pan and place the chicken pieces skin side down on top of the potatoes. Bake for 30 minutes. Turn chicken skin side up and roast for an additional 45 minutes. The chicken will be golden brown with a crispy skin.
  • Remove chicken to a platter and cover with foil to keep warm.
  • Turn oven temperature up to 450 degees.
  • Continue to roast the potatoes in the pan for 15 -20 minutes until they are soft in the center when tested with a fork. Add the potatoes to the chicken platter. Cover with foil and keep warm.
  • Transfer the roasting pan to a burner on medium high heat. Deglaze the pan with the strained chicken marinade, loosening any browned bits on the bottom of the pan. Add the chicken stock and bring to a boil and cook for 5 more minutes.
  • Mix the cornstarch with the cold water until it is smooth and add to the sauce in the pan stirring well. Boil for 2-3 minutes, or until thickened . Ladle some of the sauce over the chicken and potatoes and place the extra sauce in a gravy boat. The masterpiece is ready to be served.
  • For an alternative way to thicken the sauce make a paste with 2 tablespoons of soften butter and 1 ½ TBSP of flour. Add it to the boiling sauce instead of the corn starch paste. Why should you do it? " because some time you feel like a nut, and sometime you don't !".

My aunt made this for Christmas Eve one year -- it's fantastic! I tweaked her recipe just a bit to my taste, and cooked this meal for a date night. We have been together ever since! Adjust the garlic and vinegar to your liking. I happen to believe that garlic should be included in every meal,so I tend to add more depending on my mood. Don't be put off by the smell of the vinegar. As it cooks down, it becomes sweet and not as strong. Your nose may tell you otherwise! I serve a Pinot Grigio and rice pilaf with this dish to round out the meal.

Remove the chicken breasts to a platter and keep warm.

1 kg chicken breast
1/2 cup flour
paprika, to taste
ground ginger, to taste
freshly ground black pepper, to taste
1 tablespoon brown sugar
olive oil (for frying)
2 medium onions, coarsely cut up
1/4 cup balsamic vinegar
1 cup water
4 tablespoons brown sugar

Steps:

  • Cut up the chicken into chunks, larger than bite size but not too large.
  • Mix the flour with the paprika, ginger, black pepper and 1 tablespoon brown sugar.
  • Coat the chicken with the flour mixture.
  • Fry the chicken in the olive oil in one layer, turning to brown both sides.
  • You may have to do this in batches, removing the browned chicken to a separate plate.
  • Add some fresh oil to the pot (you can leave in what's in there).
  • Fry the onions, constantly stirring, until caramelized.
  • Add the vinegar (stand back, the vapors can really get you).
  • Then add the water.
  • Keep cooking until the sauce is reduced to a jammy consistency.
  • Add the brown sugar and stir until dissolved.
  • Add the fried chicken pieces and stir to completely coat and heat through.
  • Serve with some plain rice or couscous.

6 pieces bacon, cut into 1/4 inch strips
1 chicken, cut into 8 pieces (or 8 pieces of your favorite cut)
1 lb onion, thinly sliced (or shallots)
1 head garlic, separated and peeled
1/4 cup balsamic vinegar

Steps:

  • Cook bacon in a deep heavy skilled until crisp.
  • Drain on paper towels, reserving bacon grease in skillet.
  • Pat chicken dry and season with salt and pepper.
  • Brown chicken in bacon grease, in 2 batches, over medium high heat, turning, about 8 minutes.
  • Transfer chicken to plate.
  • Pour off all but 2 tablespoons fat.
  • Lower heat, add onions to skillet and cook, covered, stirring occasionally, until soft and lightly brown, about 10 minutes.
  • Remove lid and continuing cooking until deep golden, about 10 minutes more.
  • Add garlic and 1 cup water to skillet and bring to a boil, stirring 1 minute.
  • Return chicken to skillet, turning pieces to coat, then arrange them skin side up and gently simmer, covered, until cooked through, about 30 minutes.
  • Transfer chicken to serving dish.
  • Add balsamic vinegar to sauce and boil, uncovered, mashing garlic, until slightly thickened.
  • Season with salt and pepper and pour over chicken, then sprinkle with bacon.
