Bring a bit of sweetness to the salty bite of bacon with a simple orange glaze.

8 slices slab bacon (1/4 inch thick) or regular bacon
2 navel oranges
1 tablespoon cane syrup or honey

Steps:

  • Preheat oven to 400 degrees. Lay bacon on a baking sheet. Juice oranges into a small saucepan, and add cane syrup. Cookover medium heat until glaze is thick enough to coat theback of a spoon, about 8 minutes.
  • Brush some glaze over the bacon, and bake for 10 minutes.Brush with more glaze. Continue to bake until golden,about 15 minutes more (10 minutes if using regular bacon).Brush bacon with remaining glaze, and transfer to a parchment-or paper-towel-lined plate to drain before serving.

HONEY-BOURBON GLAZED BACON

1/4 cup clover honey
2 tablespoons bourbon
12 slices double-smoked, thick-cut bacon
Coarsely ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
  • Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.

1 cup(s) packed brown sugar
1/4 cup(s) orange juice
2 tablespoon(s) dijon mustard

Steps:

  • Place bacon on a rack in an ungreased 15x10-inch baking pan. Bake at 350 degrees for 10 minutes; drain. Combine brown sugar, orange juice and mustard; pour half over bacon. Bake for 10 minutes. Turn bacon and drizzle with remaining glaze. Bake 15 minutes longer or until golden brown. Place bacon on waxed paper until set. Serve warm. Makes 8 servings.

MAPLE, BACON AND ORANGE ROASTED TURKEY BREAST

This recipe was a combination from several posts the last couple of weeks in Zaar regarding how to cook a turkey breast. Now, I have cooked many turkey breasts, but after reading some of the posts I thought I would try to come up with something new. So thanks to all the ideas. This was my end result which I made last week for my Dad and it was outstanding. Just a little different and the gravy is really great for this. For this one I made a cornbread stuffing with nuts, apples, dried cranberries which just seemed to go with the citrus flavor. Traditional potatoes and cranberry and the normal sides for us. But this was really a good way to make just a breast.

1 turkey breast, but use whatever you have (about 3 lbs)
1 orange, cut in thick slices
1 medium onion, cut in thick slices
8 slices hickory bacon (plain bacon would be just fine)
1 cup chicken broth
1/2 cup apple cider (apple juice will work)
1/4 cup orange juice
1 tablespoon maple syrup
1 tablespoon butter
1/2 tablespoon dried thyme
2 whole sprigs rosemary
1 bay leaf
salt
pepper
1/4 cup white wine
1 tablespoon cornstarch
1 tablespoon butter
salt
pepper

Steps:

  • Butter -- Mix the thyme with the butter and maple syrup, salt and pepper and set to the side.
  • Orange and Onions -- Just set those on the bottom on a small roasting pan. I actually just used my 9x9 square baking pan, but a small roasting pan would or even your 13x9 will work. Depends on the size of your turkey. Smaller the better for me.
  • Turkey -- Make sure to let your turkey set out 30 minutes to take the chill off while you heat up the oven to 400. Then rub the turkey well with you butter, maple, thyme, salt and pepper mix all over.
  • Now just set your turkey on the orange and onions. They make a great natural rack for the turkey and will flavor the gravy.
  • Bacon -- Just drape the bacon slices over the turkey, trying to cover as much as you can. a couple slices I cut in half to make sure everything was covered.
  • Gravy -- Just add the chicken broth, or stock whatever you have, apple cider and orange juice to the bottom of the pan. Throw in the rosemary sprigs and bay leaf.
  • Bake -- Just pop it in the oven and bake according to directions. Mine took about 2 hours. I baked mine 15 minutes at 400 and then reduced the temperature to 350 and cooked until the internal temp reached 160, removed and covered. By the time I served it was 165 and juicy.
  • Gravy -- Transfer your baking dish to the stove on medium heat. Remove the onions and oranges and then add the white wine and cook just a minute. I make a slurry which is just corn starch and a little water and slowly add a little at a time to the warm gravy. Make sure the heat it on medium and only add a little and wait until the gravy thickens. Keep adding a little at a time until it gets to the thickness you like. Now I take a couple of the orange slizes, since they have cooled a bit and squeeze some of the juice in the gravy. This gives great flavor. Strain the gravy and serve. It is wonderful.
  • Serve -- I remove the bacon and slice. I remove the bacon but keep a couple onion and orange slices from the gravy and of course add some fresh rosemary to let them know what the sauce was inches Well you know the rest. Stuffing, spuds, vegetables, cranberry. Anything you want. This is just a great moist turkey with a little flavor twist and it can be made for a nice weekend dinner. Mine served 4 people.
  • Dessert - I caramelized some pears and apples in brown sugar, rum and pumpkin spice and then just serve over vanilla ice cream.

  • Mixed the turkey with the butter maple syrup, salt and pepper and rubbed all over the breast. Sliced the orange and onion and put on a small 9x9 pan and set the breast on top of that. Add the broth, cider, orange juice and rosemary and then draped the bacon over the breast. Baked 425 for 15, then down to 350 until 155 or 160 removed and covered with foil. Gravy, I removed the orange and onion and just added 1/4 cup white wine and thickened with corn starch.

1 lb boneless chicken breast
20 bacon, slices
3 tablespoons honey
2 teaspoons coarse grain mustard
1 tablespoon fresh lemon juice
salt, to taste

Steps:

  • Cut the chicken breasts-or fillets, as we call them here-in thin strips. Not too thin, the bacon has to brown and if the chicken is too thin it'll get dry before the bacon gets crispy.
  • Grab a bowl and combine 3 tbsp honey with 2 tsp coarse mustard.
  • Squeeze in some lemon juice. Not too much, about a tbsp or so. I think orange juice will be great, too.
  • wrap the bacon around the chicken strips.
  • Place them in a roasting tray or on a cookie sheet. If you're afraid of cleaning up, line the tray or sheet with some tin-foil first.
  • Brush the chicken bites with half the marinade.
  • Bake them in a preheated oven at 425F (225C) for 10 to 13 minutes. Until the bacon is crispy.
  • As soon as one side is done, take the tray out of the oven.
  • Flip them over and brush them with the remaining marinade.
  • Put them back in the oven for another 10 to 13 minutes, until the other side is crispy as well. Keep an eye on them.

1 pound thick cut sliced bacon (about 12 pieces)
3/4 cup clover honey
2 tablespoons ancho chile powder
3/4 cup sorghum syrup
3/4 cup packed light brown sugar
1/3 cup finely chopped pecans

Steps:

  • Preheat the oven to 400 degrees F.
  • For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
  • For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the sorghum syrup.
  • For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
  • Let sit at room temperature for 10 minutes.

2 lb. fresh carrots with tops
4 slices OSCAR MAYER Bacon
1/4 cup orange juice
3 Tbsp. JELL-O Orange Flavor Gelatin (about 1/2 of 3-oz. pkg.)
1 tsp. orange zest

Steps:

  • Cut tops off carrots. Coarsely chop enough tops to measure 2 Tbsp.; reserve for later use. Peel carrots; cook in boiling water in Dutch oven 5 to 10 min. or until crisp-tender. Drain carrots, reserving 1/2 cup cooking water.
  • Cook bacon in large skillet on medium heat until crisp. Remove bacon from skillet; drain on paper towels. Discard all but 2 Tbsp. drippings. Wipe skillet with paper towel.
  • Bring reserved cooking water and orange juice just to boil in same skillet. Add dry gelatin mix; stir 2 min. until completely dissolved. Add reserved bacon drippings and carrots; cook 2 to 3 min. or until carrots are glazed and tender, stirring frequently. Stir in orange zest.

3/4 cup maple syrup
