ORANGE-CRANBERRY BUNDT CAKE

Nonstick cooking spray, oil or butter, for greasing the pan
2 1/2 cups plus 1 tablespoon all-purpose flour, plus more for flouring the pan
2 1/2 tablespoons orange zest plus 3/4 cup fresh orange juice (from about 2 oranges)
2 teaspoons orange liqueur
4 large eggs, at room temperature
1 cup fresh cranberries
2 cups sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
2 1/4 sticks (18 tablespoons) unsalted butter, at room temperature

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a bundt pan.
  • Mix together the orange zest and juice, orange liqueur and eggs in a large bowl and set aside. In a smaller bowl, toss the cranberries with 1 tablespoon of the flour and set aside.
  • In a stand mixer with a paddle attachment, add the sugar, baking powder, salt, baking soda and remaining 2 1/2 cups flour and mix to combine. On low speed, slowly add the butter 1 tablespoon at a time and continue to mix until a pea-sized crumble texture is achieved. Turn the speed to medium and slowly stream in the egg/orange mixture until combined. Increase the speed to medium high and beat until light and fluffy, about 2 minutes. Gently fold in the cranberry mixture. Pour the batter into the prepared bundt pan and smooth out the top.
  • Bake until a cake tester inserted in the cake comes out clean, 50 to 55 minutes. Let cool in the pan for 20 to 30 minutes, then remove the cake and serve.

I don't like fruit cake but I love this. We grew up with this every Christmas. It's a little tangy, very moist, and can be dressed up for company or kept simple if you want. It freezes well, but we've never had leftovers when there was only one cake around! (And no one has ever complained about "fruitcake"!)

3 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
¾ cup jellied cranberry sauce
1 cup mayonnaise
½ cup orange juice
1 cup chopped nuts
1 ½ oranges, zested
¼ cup jellied cranberry sauce
¼ cup orange juice
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Mix together flour, sugar, baking soda, and salt for the cake in a large bowl. Add mayonnaise and cranberry sauce; mix until well combined. Add orange juice and mix well. Stir in nuts and orange zest and pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Cool on a wire rack for 5 minutes. Tap the pan a few times to loosen the cake and invert carefully onto a serving plate.
  • While the cake is cooling, combine cranberry sauce and orange juice for the glaze in a small saucepan over medium-high heat. Bring to a boil and cook, stirring occasionally, for 3 minutes. Remove from the heat and allow to cool.
  • Transfer cooled cranberry-orange mixture to a large mixing bowl. Gradually add powdered sugar and beat until glaze has a thin and pourable consistency; pour over cake.

3 1/4 sticks unsalted butter, cubed and at room temperature, plus more for the pan
3 cups cake flour, sifted, plus more for the pan
1 12 ounce bag fresh or frozen cranberries, thawed if frozen
2 1/2 cups granulated sugar
6 tablespoons whole milk
4 large eggs, plus 2 egg yolks
2 teaspoons vanilla extract
2 tablespoons finely grated Meyer lemon zest
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 cup plus 2 tablespoons Meyer lemon juice
1 1/2 cups confectioners' sugar

Steps:

  • Prepare the cake: Butter and flour a 10-cup fluted Bundt pan.
  • Heat the cranberries in a pot until they start to release their juices. Add 3/4 cup granulated sugar, and cook over medium heat until until juicy and the mixture reduces to 1 1/4 cups, about 15 minutes. Let cool completely.
  • Position a rack in the middle of the oven and preheat to 350 degrees F.
  • Whisk the milk, whole eggs and yolks, and vanilla in a medium bowl; set aside.
  • Whisk the 3 cups flour, the remaining 1 3/4 cups sugar, the lemon zest, baking powder and salt in a large bowl. Add the 3 1/4 sticks butter and beat with a mixer on low speed until moistened. Add half of the milk mixture, increase the speed to medium and beat 1 minute. Add the remaining milk mixture in two batches, beating between each addition. Scrape down the sides of the bowl and beat again, about 30 seconds.
  • Transfer 2/3 of the batter to the pan. Spoon the cranberry mixture in a ring around the middle of the batter (do not let it touch the pan). Top with the remaining batter and smooth evenly. Bake until a toothpick inserted into the center of the cake comes out clean, 55 to 60 minutes.
  • Meanwhile, make the syrup: Dissolve the 1/4 cup granulated sugar in 1/2 cup lemon juice in a saucepan over low heat. Remove the cake from the oven, poke the surface all over with a skewer and pour the syrup on top. Let cool in the pan for 10 minutes. Carefully invert the cake onto a parchment-lined rack to cool completely. Wrap tightly in plastic wrap and let sit overnight.
  • When ready to serve, whisk the confectioners' sugar and the remaining 2 tablespoons lemon juice until smooth. Spoon over the cake.

I didn't have cranberry juice so I used orange juice. This will be a regular for Thanksgiving from now on. I got the recipe from the December issue of Eating Well magazine.

1/2 cup packed dark brown sugar
1/4 cup 100% cranberry juice (or orange juice)
1/2 teaspoon ground allspice or 1/2 teaspoon pumpkin pie spice
1 1/2 cups white whole wheat flour
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups nonfat plain Greek yogurt
1 teaspoon vanilla extract
4 tablespoons unsalted butter, softened
1/4 cup canola oil
1 medium apples or 1 medium ripe but firm pear, shredded
1/2 cup chopped walnuts, toasted
1/2 cup packed confectioners' sugar
1 -2 tablespoon water

Steps:

  • Preparing filling:.
  • Combine cranberries, brown sugar, juice and allspice/pumpkin pie spice, in a small nonreactive saucepan. Cook over medium-high heat, stirring until the sugar is melted. Continue to cook, stirring occasionally until most of the cranberries have burst, 5 to 6 minutes. Set aside.
  • Preheat oven to 350 deg. F. Coat a 10-cup Bundt or tube pan with cooking spray.
  • Preparing Cake:.
  • Whisk whole-wheat flour, all purpose flour, baking powder, salt and baking soda in a medium bowl. Combine yogurt and vanilla in a small bowl.
  • Beat butter, oil and granulated sugar in a large mixing bowl with an electric mixer on medium-high speed until well combined. Add eggs, one at a time, beating after each addition until just incorporated. Scrape down the sides. Add the dry ingredients alternately with the yogurt mixture, starting and ending with the dry ingredients and beating on low speed just until incorporated after each addition, scraping down the sides as necessary. Fold in apple (or pear) and walnuts.
  • Spoon half the batter into the prepared pan. Spoon the filling on top of the batter leaving a little border of batter on both sides. Top with the remaining batter and smooth the top.
  • Bake the cake until light brown and toothpick inserted in the center comes out clean, about 1 hour (check at 55 min.). Let cool in the pan for about 15 minutes. Run a knife around the edges and center, then turn out onto a wire rack to cool completely for about 2 hours.
  • Preparing Glaze:.
  • Place confectioners' sugar in a small bowl. Add 1 tablespoon water and stir until smooth. Add more water as needed to achieve a thick glaze consistency. Paint the glaze over with a pastry brush.

Steps:

  • Preheat oven to 350, position rack in center of oven.
  • Grease and flour a 10-12 cup bundt or kugelhopf pan (or 12 1-cup mini bundt pans) Sift together the flour, baking powder and salt.
  • With a stand mixer (with paddle) or a hand mixer, beat butter and almond paste on medium speed until smooth and soft- 2 minutes.
  • Add sugar and beat until light and fluffy- 2 minutes.
  • Beat in eggs one at a time, scraping after each addition.
  • Beat in vanilla.
  • With mixer on low, alternate adding flour mixture and milk, beginning and ending with the flour.
  • Scrape down as necessary.
  • Beat about 20-30 seconds until batter os completely smooth.
  • Fold in cranberries with a rubber spatula.
  • Spoon batter into pan, spread evenly.
  • Run a knife through batter to eliminate air pockets.
  • Bake until wooden skewer inserted in the center of the cake comes out clean- 40-45 minutes (20 minutes for mini cakes), Set pan on rack to cool for 20 minutes, invert cake on rack to release cake, cool completely.
  • Serve at room temperature with a dusting of powdered sugar.
