PUFF PASTRY CHICKEN RECIPE
Golden brown puff pastry stuffed with creamy garlic and herb Swiss cheese with chicken is a fantastic meal, but also wonderful for parties and potlucks, too.

Steps:
- Cook the minced onion in a skillet with the butter on low heat until they are translucent.
- Add the minced garlic and cook 1-2 minutes more.
- Turn up the heat to medium and add the diced chicken breast and stir frequently.
- Turn up the heat to medium and add the diced chicken breast and stir frequently. Season with salt and pepper to taste.
- Remove the skillet from the heat.
- Add the herb cheese to the chicken and combine well.
- Set aside the chicken mixture while you work with the puff pastry. Start by unrolling the puff pastry on a baking sheet.
- Cut off the excess paper and discard.
- Using a pastry cutter or knife, cut the puff pastry dough into three equal pieces.
- Cut each of the three pieces in half so you have six square pieces of dough.
- Add two tablespoons of the chicken mixture to the center of each square.
- Use your finger to add a little water to the edge of two sides of the dough.
- Fold the dough into a triangle and use a fork to crimp the edges.
- Repeat with each of the squares.
- Brush each triangle with the egg wash.
- Bake at 350-degrees F until the pastry is golden brown, about 20 minutes.

- Preheat oven to 400 degrees F.
- Season the chicken with salt, pepper and rosemary. Cut each piece of chicken in half across the breast giving you 8 equal portions. Heat the oil in a nonstick skillet over medium-high heat. Lightly brown the chicken on both sides, 5 minutes total. Remove from heat.
- Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves and the chicken pieces. Pinch and seal the dough up and over the meat and cheese, seal with egg wash, flip the pastry packets over and brush the tops with remaining egg wash. Bake 12 to15 minutes, until golden.
- For entree portions, simply leave chicken breast whole and cut the pastry into quarters. Trim off excess dough and use it to decorate the pastry with small cut outs such as heart shapes.

Steps:
- Season chicken with salt and pepper if desired. Melt butter in skillet. Add chicken and cook until browned. Remove chicken. Cover and refrigerate 15 minute or up to 24 hours.
- Thaw pastry sheet at room temperature 30 minute Mix egg and water. Preheat oven to 400*F.
- Unfold pastry on lightly flourd surface. foll into 14" square and cut into 4(7") squares. Spread about 2 tablespoons of the cheese spread in center of each square. Sprinkle with 1 tablespoon parsley and top with cooled chicken. Brush edges of squares with egg mixture. Fold each corner to center on top of chicken and seal edges. Place seam side down on baking sheet. Brush with egg mixture.
- Bake 25 minutes or until golden.
HERBED CHICKEN IN PASTRY

- Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
- Season the chicken with the black pepper, if desired. Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken to a plate. Cover the plate and refrigerate for 15 minutes or up to 24 hours.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Cut into 4 (7-inch) squares.
- Spread about 2 tablespoons cheese spread in the center of each pastry square. Top each with 1 tablespoon parsley and 1 chicken breast. Brush the edges of the pastry squares with the egg mixture. Fold the corners of the pastry squares to the center over the chicken and press to seal. Place the filled pastries seam-side down onto a baking sheet. Brush the pastries with the egg mixture.
- Bake for 25 minutes or until the pastries are golden brown. Let the pastries cool on the baking sheet for 10 minutes.
- Serving Suggestion: Serve Bibb lettuce wedges with tomatoes and basil and Italian dressing. For dessert serve coffee ice cream with butterscotch or whipped cream.
CHICKEN WELLINGTON (PUFF PASTRY-WRAPPED CHICKEN)
This is not at all hard to put together, it's an amazing dish to serve to dinner guests and I have done so many times over the years and have always receive rave reviews from everyone at my table and you will too! --- to save time saute the onion, garlic and mushrooms up to a day ahead, the cream cheese and Dijon mustard mixture may be increased slightly -- I always serve this with recipe#149547 drizzled over or on the side of the plate, you will *love* this!

Steps:
- Season the chicken breast with seasoning salt and pepper on all sides.
- Heat butter and oil in a skillet.
- Brown the breasts on all sides until almost completely cooked through; transfer to a plate.
- To the same skillet add in onions, garlic and sliced mushrooms; saute until the mushrooms lose their moisture and the onions are tender.
- Stir in parsley.
- On a floured surface, roll out each puff pastry sheet to a 14-inch square.
- Cut into four even 7-inch squares (you should have 8 squares total).
- Place each breast over each puff pastry square.
- Set oven to 375 degrees.
- In a small bowl combine the softened cream cheese with mustard, then spread over EACH breast.
- Then top with about 2-3 tablespoons mushroom/onion mixture.
- Brush the edges of each pastry square with water.
- Wrap pastry around the chicken breast, pressing edges to seal tightly.
- Place seam-side down on greased baking sheets.
- Brush the tops with egg wash.
- Bake for about 20 minutes, or until puffed and golden brown.
- Serve with mushroom sauce over the Wellington or on the side of the plate.
- Delicious!
GARLIC CHICKEN PARCELS

- Heat oven to 220C/200C Fan/gas 7. Cut a slit halfway in each chicken breast, then put each one between two pieces of baking parchment and bash with a rolling pin to flatten slightly.
- Cut your sheet of pastry in half widthways and put both halves on a baking tray. Sit a chicken breast on top of each half, then cram the cavities with the Boursin (don't worry if a bit of cheese oozes out). Season, scatter over the lemon zest then fold the edges of the pastry in to the centre and pinch shut. Flip each parcel over so the seal is on the bottom. Brush with a little oil, then bake for 30 mins until deep golden.
- About 10 mins before your parcels are ready, steam or boil the greens until tender. Toss in the oil and season. Serve alongside your chicken parcels with lemon wedges for squeezing over.

- Defrost puff pastry in fridge according to box instructions. Let sit at room temperature for 1/2 hour before beginning recipe. Defrost chicken tenders. Preheat oven to 400 degrees.
- Roll out sheet of puff pastry on cutting board. Slice each sheet into four equal squares, making eight squares altogether.
- Lay tenders diagonally across each square. Spoon two tablespoons cheese spread on top of each tender.
- Cut each stalk of asparagus in half and lay two halves on top of each tender.
- Fold two opposite corners of pastry over chicken, asparagus, and cheese, sort of like pigs in a blanket. Chicken should be exposed at each end.
- Lay on greased cookie sheet (use parchment if you like), spacing by at least one inch. Use pastry brush to coat tops with butter. Sprinkle delicately with parmesan.
- Bake 20 minutes or until chicken is fully cooked. Optional: broil for a minute or two to make pastry even crisper.

- Preheat oven to 400°. Cut a lengthwise slit in each chicken breast half to within 1/2 in. of the other side; open meat so it lies flat. HERBED CHICKEN IN PUFF PASTRY
Though this recipe took a bit of time to prepare, I thought it was pretty simple to do. Especially since you can buy puff pastry already made.

Steps:
- Clean and remove the stems from the mushrooms.
- Chop fine and saute in the margarine.
- Take the puff pastry out of the freezer and set to thaw for about 30 minutes.
- Soon as the mushrooms are slightly soft, add the chicken breasts and saute until browned on either side.
- Remove the chicken and set on a plate. Add the marsala to the mushrooms in the saute pan and reduce until most of the wine is gone.
- Pour the wine and mushrooms over the chicken and refrigerate for at least 15 minutes to cool down. Note: You can store these for about 24 hours in the fridge also.
- Open the puff pastry and take one sheet and on a floured board roll the dough to a 14" x 14" square. Cut evenly into four pieces.
- Place 2 tablespoons of the cream cheese on each of the squares. Sprinkle with about 1 tablespoon of the parsley and put a chicken breast on top of each prepared square.
- Brush the edges of each square with the soy creamer and fold the pastry over the chicken to form a packet. Seal the edges well. Place seam side down on a parchment lined pan and brush with the soy creamer.
- Bake 25 minutes or until the top is golden.
- Serve with your favourite veggies or salad.
