BEST EVER BANANA CAKE WITH CREAM CHEESE FROSTING

Best Ever Banana Cake With Cream Cheese Frosting image

This is one of (if not) the BEST banana cake I have ever tasted! I thought the oven temp of 275° sounded a little low, but this cake baked up (and rose) beautifully in my oven at this temp after pretty much exactly one hour. I do not know if the little "freezer trick" to this recipe is what ensured its moistness or not, but I did it, and it was exceptionally moist & delicious. Would be interesting to see if it still came out as great if this step was skipped. All I know is that I followed this recipe EXACTLY as stated (except that I had no buttermilk, so I subbed with a mix of lemon juice & milk) and I got exceptional results. So moist and yummy...a dense cake, similar in texture to a carrot cake... I personally would not call this frosted banana bread :o) Depending on the amount of frosting you like you can decide whether to half the recipe or not. I used the full recipe and had some leftover. I sprinkled on the chopped walnuts and threw this baby in the fridge and cut it the next day...TO DIE FOR! I really liked it slightly chilled, but great at room temp too! It got better each day it sat, I always make this cake at least the day before I need or want it. I was extremely pleased with this cake and will be making it over & over again!! So glad I came across this one!! (on another website). (* * Just to update the recipe, (based on some of the reviews), the baking time may vary based on individual ovens. It was RIGHT ON for my oven, but some others have stated it has taken 1 hour 10 minutes, 1 hour 20 minutes, and my sister just informed me that it took 1 hour 30 minutes in her oven!!!!!)

1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk

  • Spread on cooled cake.

Banana Cake with Coconut Frosting image

Categories     Fruit     Dessert     Bake     Banana     Coconut     Gourmet     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 8 to 10 servings

Number Of Ingredients 18

For cake
1 stick (1/2 cup) unsalted butter, softened, plus additional for greasing pan
1 1/2 cups all-purpose flour plus additional for dusting pan
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed light brown sugar
1 large egg
3/4 cup well-mashed very ripe bananas
1/4 cup sour cream
1/2 teaspoon vanilla
For coconut frosting
3 oz cream cheese, softened
3 tablespoons unsalted butter, softened
1/3 cup confectioners sugar
3 tablespoons well-stirred canned cream of coconut such as Coco López (not coconut milk)
1 teaspoon dark rum (optional)
1/3 cup sweetened flaked coconut

Steps:

  • Make cake:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Lightly butter and flour a 9-inch round cake pan, knocking out excess flour.
  • Whisk together flour (1 1/2 cups), baking powder, baking soda, and salt in a small bowl.
  • Beat together butter (1 stick) and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy. Beat in egg until combined, then add bananas, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, mixing until just incorporated.
  • Spread batter in cake pan and bake until pale golden and a wooden pick or skewer inserted in center comes out clean, 20 to 25 minutes.
  • Cool in pan on a rack 10 minutes. Run a thin knife around edge of pan, then invert rack over cake and invert cake onto rack to cool completely.
  • Make frosting while cake cools:
  • Beat together cream cheese and butter in a bowl using cleaned beaters at medium speed until smooth. Reduce speed to low, then add confectioners sugar, cream of coconut, and rum (if using) and mix until combined. Increase speed to high and beat until light and fluffy, about 2 minutes.
  • Frost top of cooled cake and sprinkle with coconut.

BANANA CAKE WITH RUM ICING

Banana Cake With Rum Icing image

I knew I wanted to combine bananas with rum in a cake and could never find a recipe I liked, so I came up with one on my own and it is scrumptious! The icing is a little tricky to make but well worth the effort, it melts in your mouth! There are several reasons why I use baby food instead of mashing bananas 1. It's a lot less work. 2. It gives the cake a clean look without all the black spots. 3. No sitting around waiting for bananas to ripen. In my house bananas never go ripe, my kids love them to much.

Time 1h

Yield 24 Cupcakes, 20 serving(s)

Number Of Ingredients 18

1/2 cup margarine
1 cup sugar
1 (3 1/2 ounce) package banana cream instant pudding
1 teaspoon vanilla
3 large eggs
2 (6 ounce) jars banana baby food
1/4 cup milk
2 cups cake flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup heavy cream
1 cup whole milk
1 teaspoon real vanilla
7 tablespoons all-purpose flour
1 1/2 cups unsalted butter, at room temperature
2 cups powdered sugar
2 -4 tablespoons rum

Steps:

  • Preheat oven to 350°F.
  • Bring margarine to room temp and cream (beat) for a minute or two on medium speed. Slowly start adding the sugar followed by the pudding mix and vanilla. Cream for at least two minutes on medium speed and give the bowl a couple of scrape downs.
  • Sift together flower, baking powder, soda and salt in a separate bowl. In another bowl mix the bananas and milk.
  • On low speed start adding the flour mixture to the sugar mixture in four additions, alternating with the banana mixture until everything is mixed together and smooth.
  • Blend in eggs one at a time until mixed, don't over mix.
  • To bake in a 9x13" spray pan with Pam non stick cooing spray and bake approximately 35 to40 minutes or until it is slightly firm to the touch, it should have a nice golden yellow color to it, if it turns brown you've burned it. You may also use two 9" rounds or make cupcakes.
  • Icing: Combine the cream, milk and vanilla in a small saucepan and bring to a simmer over medium-high heat. Add the flour and cook, whisking constantly, until thickened to a paste, about 2 minutes. Make sure the milk is hot enough to dissolve the flour or you will get chunks. You will also get chunks if you are not whisking hard enough. Scrape into a bowl, cover and refrigerate until very cold, at least 2 hours.
  • Combine the butter and sugar and beat until the mixture is very fluffy, about 3 minutes. Add the cold paste, a few tablespoons at a time to the butter mixture and whip until light and fluffy. Add 2 to 4 tablespoons of spiced rum depending on how strong you like it. I like a lot of rum in mine.
  • Spread on cooled cake and enjoy!
