- Heat oil in heavy wide pot over medium-high heat. Sprinkle chicken with salt and pepper; add to pot. Cook until browned, about 6 minutes per side. Transfer chicken to bowl. Increase heat to high. Add next 3 ingredients and 1/2 teaspoon paprika to drippings in pot; sauté until vegetables are soft and light brown, about 8 minutes. Return chicken to pot; add broth. Sprinkle chicken with remaining 1/2 teaspoon paprika. Bring to boil. Reduce heat, cover, and simmer 10 minutes. Uncover; simmer until chicken is tender, about 10 minutes longer. Season with salt and pepper. Sprinkle parsley over; serve.

- In a Dutch oven over medium heat, brown chicken in oil and butter; remove chicken. Discard all but 3 tablespoons drippings. Saute mushrooms, onion and peppers in the drippings until crisp-tender, about 2-3 minutes. , Stir in flour until smooth. Gradually add broth, stirring constantly. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in tomato paste, paprika, salt and pepper. , Return chicken to pan; bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until chicken juices run clear. Remove chicken to a platter of noodles; keep warm. , Add sour cream to sauce; stir until smooth (do not boil). Spoon over chicken and noodles.

SMOKY PAPRIKA PEPPERS

- Pour the oil into a medium saucepan. Add the paprika and garlic, heat very gently for 5 mins, then leave to cool. Lay a piece of muslin over a sieve and strain, discarding the garlic and paprika to leave bright orange, scented oil. In another pan, dry-fry the spices for 1 min to release their aromas. Add to the paprika oil and set aside.
- Heat the grill to high. Cut the peppers in half (leave the stalks in place - they'll easily pull out later), and spread over 2 large baking sheets, skin side up. Grill for about 15 mins, until the skins are blackened. Transfer the still-hot peppers to plastic food bags, seal and leave to cool. Once the peppers are cool enough to handle, slip off the skins, pull out the stalks, scrape away the seeds, and tear into large pieces.
- Bring the vinegar and 300ml water to a simmer in a large pan and tip in the peppers. Bring back to a simmer for 3 mins, then drain well and pack into jars or heatproof containers. Gently reheat the spiced oil for a few mins, then pour over the peppers and seal. Add the parsley before you serve the peppers (or add now if you're planning to use them same day) as the parsley will discolour. Keep in the fridge for up to 1 week.
SPANISH PAPRIKA CHICKEN
This is one of our standby chicken recipes that we always seem to come back to because we all enjoy it. I got the recipe from a supermarket flyer once. It has a brothy sauce and the meat is always juicy with Spanish flavors. This goes great with mashed potatoes and a salad.

- Place chicken breasts in a shallow dish.
- Sprinkle with lemon zest and drizzle with lemon juice.
- Turn to coat well, cover and refrigerate for at least 1 hour or up to 4 hours, turning occasionally.
- In a small bowl mix paprika, thyme and half each of the salt and pepper.
- Remove the chicken from the lemon juice, shake off the excess juice and pat dry with paper towel.
- Rub the paprika mixture evenly over chicken breasts and set aside for about 10 minutes.
- In a large non-stick skillet heat half the olive oil (1 Tbsp) over medium high heat and brown the chicken breasts on both sides until golden brown.
- Remove the chicken from the pan, add the rest of the oil, ham, onion and garlic to the pan and cook stirring for about 5 minutes, or until the ham is becoming crisp.
- Add the wine and bring to a boil.
- Cook stirring for about 3 minutes or until the wine is almost evaporated.
- Add the chicken stock and remaining salt and pepper, stir to combine.
- Return chicken breasts to the skill and bring to a simmer. Cover and cook for 20 minutes or until chicken is no longer pink and juices run clear when pierced.
- Sprinkle with parsley before serving.
- Enjoy.

SMOKED PAPRIKA AND RED BELL PEPPER SOUP
I found this very yummy soup whilst looking for recipes to use smoked paprika. I haven't been able to buy it here in town, so I'm pretty excited. The original recipe has more chillies if you wish.Prep time includes blackening, sweating and peeling those peppers! This would be a good vegetarian recipe made with veggie stock, or even vegan if you omit the cream too.

- Peppers:, halved brushed with olive oil, baked in a very hot oven until the skin blisters and blackens.
- Place in a plastic bag 10 minutes, then remove blackened skin, and chop coarsely.
- Heat the 2 tablespoons olive oil in a large saucepan over medium heat.
- Cook the onions, garlic and chillies until soft, but not brown.
- Add the paprika and cook for 1 more minute.
- Add the peppers, stock, potatoes, parsley, thyme sprigs and simmer gently for about 20 minutes or until the potatoes are soft.
- Remove the herb sprigs.
- Puree in a food processor until smooth adding the thyme, vinegar and cream (if you're using it) just before you finish.
- Serve hot with garlic bread, or cold garnished with guacomale.

My whole family, full of picky eaters, loves this dish, and it's great for freezing and reheating on a cold day or for an easy dinner on cold nights. This dish comes out as more like a stew than a meat with a sauce. Serve over egg noodles or hot cooked rice. Goes great with fresh, crusty pumpernickel bread for hearty winter meal. Easy to make and can be kept on low heat on the stove for lengthy parties.

- Mix flour, 2 tablespoons paprika, salt, and pepper on a shallow plate. Dip chicken pieces in mixture to coat.
- Heat vegetable oil in a heavy skillet over medium heat. Cook and stir chicken in hot oil until browned completely, about 5 minutes. Remove chicken with a slotted spoon to a bowl, reserving oil and drippings in skillet.
- Cook and stir onion and garlic in the reserved drippings until tender, about 5 minutes. Return chicken to the skillet. Pour chicken stock over the chicken mixture. Stir tomato paste into the chicken stock until integrated completely.
