ELVIS-INSPIRED PEANUT BUTTER "BRUNCH" PARFAIT

Elvis-Inspired Peanut Butter

Provided by Food Network Kitchen

Categories     dessert

Time 5h5m

Yield 6 parfaits

Number Of Ingredients 12

3 cups whole milk
1/3 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon kosher salt
3 large egg yolks, beaten
3/4 cup smooth peanut butter
6 slices bacon
1/4 cup pure maple syrup
1 1/2 cups heavy cream
3 tablespoons confectioners' sugar
15 butter waffle cookies, such as Jules Destrooper, lightly crushed (about 2 cups)
3 small bananas, sliced into rounds about 1/8-inch thick

Steps:

  • Heat 2 3/4 cups of the milk in a large saucepan over medium until hot but not boiling. Whisk the granulated sugar, cornstarch and salt in a large bowl. Whisk in the egg yolks and the remaining 1/4 cup milk. Whisk half of the hot milk into the egg mixture until smooth, and then gradually whisk the egg mixture into the heated milk. Cook over medium heat, whisking constantly, until the mixture boils and thickens, 4 to 6 minutes. Remove from the heat and whisk in the peanut butter until melted. Transfer to a bowl. Press plastic wrap directly onto the surface and chill until set, at least 4 hours.
  • Preheat the oven to 350 degrees F with a rack set on the middle shelf. Line a baking sheet with parchment paper.
  • Place the bacon on a cooling rack set over a baking sheet. Brush both sides of the bacon with the maple syrup. Bake until golden brown and slightly crispy, rotating the baking sheet halfway through, 20 to 25 minutes. Place on the lined baking sheet and cool completely. The bacon will continue to crisp as it cools. Break each piece of cooled bacon in half.
  • Whip the heavy cream and confectioners' sugar in a large mixing bowl with a hand mixer to soft to medium peaks. Refrigerate until ready to use.
  • To assemble, loosen the chilled pudding by whisking it until smooth and creamy. Spoon 1/4 cup of the pudding into the bottom of a 10- to 12-ounce glass. Layer in this order: 1/4 cup crushed waffle cookies, half of a sliced banana, 1/4 cup whipped cream, 1/4 cup pudding and a light sprinkle of additional crushed waffle cookies. Top each parfait with a dollop of the remaining whipped cream and 2 bacon halves.

PEANUT BUTTER & BANANA FRENCH TOAST BAKE

Peanut Butter & Banana French Toast Bake image

This recipe was inspired by Elvis, who had a love for all things peanut butter, bananas, and bacon! We may not be able to perform rock 'n' roll like our good friend, Terry Buchwald, but our Peanut Butter & Banana French Toast Bake is our way of paying tribute to the King. One bite of this and we know you're going to be "all shook up" in the delicious flavors!

Provided by Ginsburg Enterprises

Categories     Pancakes, Waffles, French Toast

Number Of Ingredients 10

1/2 cup sugar
1 teaspoon ground cinnamon
8 eggs
2 1/2 cups half-and-half
1 tablespoon vanilla extract
1/2 teaspoon salt
1 loaf French bread, cut into 2-inch cubes
3 bananas, sliced
4 slices cooked bacon, crumbled
1 cup peanut butter

Steps:

  • Preheat oven to 400 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • In a small bowl, combine sugar and cinnamon, set aside. (This will prevent the cinnamon from floating when combined with the egg mixture.) In a large bowl, combine eggs, half and half, vanilla, salt and the cinnamon-sugar mixture; beat until well combined. Add bread cubes and banana slices; toss until coated.
  • Chill 15 minutes then remove bread mixture from refrigerator, toss again, and chill an additional 15 minutes. Pour into baking dish.
  • Bake 40 to 45 minutes or until the mixture is set and the top is golden. Remove from oven, sprinkle with crumbled bacon, and place back in oven 5 minutes.
  • Meanwhile, in a microwave-safe bowl, warm peanut butter 15 seconds. Stir until smooth and pourable. If necessary, continue to microwave in 10 second intervals until desired consistency. (Make sure you don't over heat it.) Immediately spoon over the French toast bake and serve.

  • Peanut Butter and Banana Sandwich. It comes as no surprise that this sandwich is at the top of the list. Made with a ripe banana, white bread, crunchy peanut butter and butter to fry the whole thing up, this sandwich is sure to become a family favorite.
  • Barbecued Bologna. Mary Jenkins Langston, cook of Elvis for 14 years at Graceland in Memphis, Tennessee, made this dish special. Made by mixing together vinegar, lemon juice, red pepper and salt, and then basting the bologna with the mixture, Langston created a one-of-a-kind dish.
  • Fried Pickles. A Southern snack at its core, fried pickles were always on the table in Elvis' presence. We recommend serving these pickles with a side of ranch or even a spicy hot sauce.
  • Coconut Cake. According to the biography, Last Train To Memphis, author Peter Guralnick shares that Elvis' mother made him coconut cake quite often as a child.
  • Fried Chicken. According to Google Executive Chef Charlie Ayers, this is the tried and true recipe for fried chicken that Elvis ate. After asking a Waldorf-Astoria coworker who happened to have once worked in Elvis' kitchen, Charlie Ayers was able to finally replicate the recipe for Google's headquarters to eat.
