8 boneless skinless chicken thighs (1 lb.)
1/4 cup MIRACLE WHIP Light Dressing
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 375ºF.
  • Spread chicken with dressing.
  • Mix stuffing mix and cheese in pie plate. Add chicken, 1 piece at a time; turn to evenly coat. Place on foil-covered baking sheet. Discard any leftover stuffing mixture.
  • Bake 25 to 30 min. or until chicken is done (165ºF).

8 boneless skinless chicken thighs (1 lb.)
1/4 cup Miracle Whip light
1 (6 ounce) package stove-top stuffing mix for chicken
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees F. Cover a baking sheet with foil.
  • Spread chicken with dressing.
  • Mix stuffing mix and cheese in a pie plate. Add chicken, one piece at a time, turn evenly to coat. Place on prepared baking sheet. Discard any leftover stuffing mixture. This is a safety precaution.
  • Bake 25 to 30 minutes or until chicken is done.

"CRISPY-CRUNCHY" CHICKEN



Delicious, crunchy fried chicken. This recipe came from the "AllRecipes" site. I'm sure you could always play around with the spices for a variety of flavors!

4 boneless skinless chicken breast halves (Cut each half lengthwise into 2 pieces to create a total of 8 pieces)
1 (10 3/4 ounce) can condensed cream of chicken soup (undiluted)
1 egg
seasoning salt (to taste)
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon paprika
salt and pepper (to taste)
oil (for frying)

Steps:

  • Combine soup, egg and seasoned salt in a bowl and set aside (soup is already salted so be careful on amount of seasoned salt you add).
  • Mix together flour, cornstarch, garlic powder, paprika, salt and pepper in a resealable plastic bag.
  • Dip chicken pieces into soup mixture and turn so as to coat all over.
  • Place chicken pieces (one at a time) in bag with flour mixture, seal bag and shake to coat chicken (if more flour mixture is needed, add equal amounts of flour and cornstarch to bag).
  • Place coated pieces of chicken on a platter and allow to set until the coating becomes doughy (this is critical to ensure crispiness when fried).
  • Heat oil in a deep fryer or in a skillet over medium heat, using enough oil to cover chicken pieces when fried (you can test oil in skillet by dropping a piece of the doughy coating into the hot oil- oil is ready when dough begins frying immediately).
  • Once chicken is doughy, fry pieces in oil for approx 5-8 minutes or until cooked through and juices run clear.
  • Drain pieces on paper towel and serve.

1/2 cup fat-free buttermilk
1 large egg white
2 teaspoons hot sauce
4 (6 ounce) chicken breast halves, boneless, skinless
1 cup corn flakes, crumbled
2 teaspoons paprika
1 teaspoon thyme, dried
1 teaspoon garlic powder
1 teaspoon kosher salt
cooking spray

Steps:

  • In medium bowl, whisk buttermilk, egg whites and hot sauce until blended; add chicken pieces and turn to coat.
  • Let marinate at room temperature.
  • Preheat oven to 400 degrees Fahrenheit.
  • Meanwhile, line a baking sheet with foil and coat with cooking spray.
  • Combine cornflake crumbs, paprika, thyme, garlic powder and salt in a shallow dish.
  • Lift chicken pieces, one at a time, from buttermilk mixture and coat in seasoned crumb mixture.
  • Place on prepared baking sheet.
  • Lightly spray crumb coating with cooking spray.
  • Bake 16 to 18 minutes, until browned on the outside, chicken is no longer pink in it's thickest part, and crumb coating is crusty.

From "Cook's Country by America's Test Kitchen," episode 106, "All-American Picnic." Brining makes the chicken juicy and flavorful. The baking powder adds lift and makes for a crunchy coating; wetting the flour to make big crumbs does the same.

2 cups buttermilk, divided
2 tablespoons table salt or 4 tablespoons kosher salt
1 (3 1/2 lb) roasting chickens, cut in 8 pieces
3 cups all-purpose flour
3/4 teaspoon dried thyme
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
2 teaspoons baking powder

Steps:

  • Remove 6 tbsp buttermilk and set aside. To remaining buttermilk, add salt and whisk until dissolved. Cut chicken in 8 pieces (2 legs, 2 thighs, cut each breast in half). Submerge chicken in buttermilk brine. Cover and refrigerate for 1 hour.
  • In a bowl, whisk together flour, thyme, pepper, garlic powder and baking powder. Add reserved buttermilk and toss with fingertips to form pea-sized crumbs.
  • Drain chicken and transfer to breading, 2 pieces at a time. Pack breading onto chicken firmly.
  • Heat 4-5 cups vegetable shortening or peanut oil to 375°F It should be about 3/4" deep in the pot. Place chicken into hot fat, skin side down. The temperature will drop to about 300°F; maintain the temperature at 310-315°F Cover pot and cook 8-10 minutes; check chicken after 4 minutes to ensure even browning, and move pieces around if needed. After 8-10 minutes, turn pieces over; cook another 6-8 minutes until the second side is also golden brown.
  • Remove chicken and drain on paper towels. Allow to drain and cool 5-10 minutes before serving.
