Showing just how great lentils can be, this dish is always a winner. Here, we're teaming lentils with loads of vibrant fresh veg - try carrots, potatoes, cauliflower, aubergine and more - for extra goodness. It's delicious on its own mopped up with bread, or enjoy it with fluffy rice.

300 g alliums (onions, leeks or a mixture of both)
30 g garlic
3 kg mixed veg (Mediterranean, hard, root)
10 ml vegetable oil
500 g dried lentils (red split, yellow split)
1.5 litres curry base sauce

Steps:

  • Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
  • Peel (or trim) and roughly chop the alliums. Peel the garlic and finely chop.
  • Scrub or peel the veg, then chop into 2cm chunks.
  • Place a pan large enough to hold all the ingredients on a medium heat with the oil.
  • Add the alliums, cook for 4 to 5 minutes until they start to soften, then add the garlic and cook for a further 4 minutes, or until golden, stirring frequently.
  • Tip in the hard and root veg (if using), cook for 15 minutes or until golden and softened, then add the Mediterranean veg (if using) and cook for 10 minutes more.
  • Rinse the lentils, then add to the pan along with the curry base sauce and 600ml water. Cover, then reduce the heat and simmer gently for 45 minutes to 1 hour, or until the lentils are soft and creamy.
  • Season to taste with sea salt and black pepper.

A spicy Indian lentil soup that can be enjoyed with rice or Naan, the Indian bread. A very healthy dish.

1 cup red lentils
2 tablespoons ginger root, minced
1 teaspoon mustard seed
2 tablespoons chopped fresh cilantro
4 tomatoes, chopped
3 onions, chopped
3 jalapeno peppers, seeded and minced
1 tablespoon ground cumin
1 tablespoon ground coriander seed
6 cloves garlic, minced
2 tablespoons olive oil
1 cup water
salt to taste

Steps:

  • Cook the lentils by boiling or pressure cooking until lentils are soft. (Pressure cooking is faster.)
  • In a skillet heat the oil and add mustard seeds. When mustard seeds begin to flutter, add onions, ginger, jalapeno peppers, and garlic. Saute until the onions and garlic are golden brown. Add coriander and cumin. Add chopped tomatoes. Saute the mixture well until tomatoes are well cooked.
  • Add water. Boil 6 minutes. Add cooked lentils, stirring well. Add salt to taste, stirring well. Add finely chopped cilantro and remove from heat. Serve hot.

EASY MASOOR DAL



Easy Masoor Dal image

This Vegan Masoor Dal is a simple and easy lentil recipe made with split pink lentils (dhuli masoor dal). It goes well with roti or rice.

Number Of Ingredients 20

½ cup masoor dal (or pink lentils or dhuli masoor dal )
1.5 to 1.75 cups water for pressure cooking dal
2 tablespoons oil
1 teaspoon cumin seeds
1 medium sized onion, (chopped)
2 to 3 small to medium sized garlic, (crushed or chopped)
1 inch ginger, (chopped)
1 to 2 green chillies, (chopped or slit)
1 to 2 whole dry red chilies,
1 medium sized tomato, (chopped)
¼ or ½ teaspoon red chili powder ((organic or homemade chili powder can be just ¼ teaspoon as they are very strong))
1 generous pinch asafoetida ((hing))
¼ or ½ teaspoon Garam Masala ((homemade garam masala powder can be just ¼ teaspoon))
½ teaspoon turmeric powder
1 to 1.5 cups water ( or add as required)
1 teaspoon kasuri methi ((dry fenugreek leaves) - crushed (optional))
1 to 2 tablespoons chopped coriander leaves ((cilantro leaves))
½ or 1 teaspoon lemon juice or as required
1 tablespoon chopped coriander leaves for garnishing ((optional))
salt as required

Steps:

  • Pick and rinse the pink lentils (dhuli masoor dal) well.
  • Pressure cook the pink lentils in a 2-litre pressure cooker with 1.5 to 1.75 cups water, till they become soft and mushy. Pressure cook for 5 to 6 whistles on medium flame.
  • When the lentils are cooked, beat with a wooden spoon or wired whisk lightly.
  • Keep the cooked pink lentils aside. If lentils are not cooked, then add some more water and pressure cook for a few whistles more.
  • In another pan or pot, heat oil. Fry the cumin seeds till golden.
  • Then add onions and fry till they are light golden.
  • Add chopped ginger and garlic. Stir and fry for 10 to 15 seconds or till the raw aroma of ginger and garlic goes away.
  • Add green chilies and red chilies. Stir.
  • Add all the dry spice powders one by one including asafoetida (hing) and stir.
  • Add the tomatoes and fry till the oil separates and the tomatoes become soft.
  • Add the cooked pink lentils. Pour 1 to 1.5 cups water. You can adjust the quantity of water as required.
  • Add salt and stir. Simmer for 6 to 7 minutes more on a low or medium flame till you get the desired consistency.
  • This dal is neither thick nor thin and has a medium consistency.
  • Lastly add kasuri methi and simmer for 1 minute.
  • Towards the end add lemon juice and 1 tablespoon chopped coriander leaves and stir. Switch off the flame.
  • You can also garnish the dal with coriander leaves if you want while serving. Serve this masoor dal hot with steamed basmati rice or roti or chappati.

SEASONED DHAL (_MASALA DHAL_)



Seasoned Dhal (_Masala Dhal_) image

Often the dhal served at a Sadhya is very plain, but I happen to like interesting dhals, like this recipe. Here I use small orange lentils (called "red" in stores) because they cook down into a creamy texture. I enrich it with coconut milk, and finish it with cilantro, lemon, and whole toasted seeds. This recipe is part of our menu for Sadhya, a South Indian feast.

1 cup masoor dal (small orange, a.k.a. "red," lentils)
3 cups water
1/4 teaspoon ground turmeric
2 tablespoons vegetable oil
1/2 teaspoon brown mustard seeds
1/2 teaspoon cumin seeds
1/8 teaspoon hot red pepper flakes
1/2 cup well-stirred canned unsweetened coconut milk
1/4 cup chopped cilantro
2 teaspoons fresh lemon juice
1 teaspoon salt

Steps:

  • Bring lentils and 3 cups water to a boil with turmeric in a 2-quart heavy saucepan, then gently simmer, partially covered, stirring occasionally, until falling apart, about 20 minutes.
  • When lentils are cooked, heat oil in a small heavy skillet over medium-high heat until it shimmers, then cook mustard seeds, cumin seeds, and red pepper flakes until mustard seeds begin to pop and/or turn gray and cumin seeds brown, about 1 minute. Stir spice mixture into lentils with coconut milk, cilantro, lemon juice, and salt and bring to a simmer.

CREAMY BLACK DHAL WITH CRISPY ONIONS

This super-satisfying, slow cooker curry is packed with iron and fibre. Serve with a choice of tasty garnishes to turn your simple supper into a warming feast

250g black urid beans (also called urid dal, urad dal, black lentils or black gram beans - available from large supermarkets) - yellow split peas also work well
100g butter or ghee
2 large white onions, halved and thinly sliced
3 garlic cloves, crushed
thumb-sized piece ginger, peeled and finely chopped
2 tsp ground cumin
2 tsp ground coriander
1 tsp ground turmeric
1 tsp paprika
¼ tsp chilli powder (optional)
small bunch coriander, stalks finely chopped, leaves reserved to serve
400g passata or chopped tomatoes
1 fat red chilli, pierced a few times with the tip of a sharp knife
50ml double cream
cooked rice, naan bread or baked sweet potatoes
coriander
sliced red chilli
lime wedges
yogurt (or a swirl of cream)
your favourite Indian pickle or chutney
crispy salad onions (to make your own, see recipe below)

Steps:

  • Soak the beans in cold water for 4 hrs (or overnight, if you like).
  • Melt the butter or ghee in a large pan, then add the onions, garlic and ginger, and cook slowly for 10-15 mins until the onions are starting to caramelise. Stir in the spices, coriander stalks and 100ml water. Pour into the slow cooker (or leave in the pan if cooking on the hob). Add the passata and whole red chilli. Drain the beans and add these too, then top up with 400ml water. Season well, set the slow cooker to Low and cook for 5-6 hrs (or cover and cook for 2 hrs over a very low heat on the hob).
  • Once cooked, the dhal should be very thick and the beans tender. Stir in the cream, check the seasoning and serve in bowls with naan bread, rice or in a jacket potato, with your choice of toppings. To freeze the dhal, cool completely, then divide into containers or sandwich bags. Freeze for up to 2 months, defrost and heat thoroughly before eating.
