It's finally blueberry season in Texas. On June 10th, the 17th annual festival will be held in Nacogdoches. This recipe courtesy of the Texas Co-op Power magazine.

- Preheat oven to 375º.
- Cake:.
- Sift flour, baking powder & salt together; set aside.
- Cream butter & gradually beat in sugar. Add egg & milk; beat until smooth.
- Add dry ingredients slowly & stir till just moist. Gently fold in blueberries. (batter will be very stiff).
- Spread batter in greased and floured 8" square pan.
- Sprinkle with crumb topping & bake for 40-45 minutes.
- Crumb topping: Mix brown sugar, flour & cinnamon. Cut in butter till it forms coarse crumbs (smaller than a pea).
BLUEBERRY TEA

BLUEBERRY ANGEL FOOD CAKE
Inspired by Recipe#3794. I found that the blueberries and juice get more evenly distributed than peaches do, for more fruit flavor in every bite! Note: This works best if you have the "1-packet" type of angel food cake mix. If you have the "2-packet" kind, you can empty both packets into the bowl together, but you may end up with a slightly denser cake. Feel free to try this with other kinds of fruit in juice. I'd like to know how it turns out! I've already made it with pineapple, peaches, and blueberries. I might try strawberries next....

- Dump the angel food cake mix into a mixing bowl. Add the can of blueberries, juice and all.
- Do NOT add the water specified on the box -- just cake mix and fruit/juice.
- Mix with electric mixer on low speed and then bake as directed on the cake mix box.
- Top with whipped cream and fresh berries if desired.
BLUEBERRY LOAF CAKE

- Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
- Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
- Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
- Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
- Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
- Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
- Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.
HEALTHY BLUEBERRY AND BANANA CAKE
This is based on another recipe which I modified for our taste. It's very moist with a great banana flavour (as long as you use really overripe ones). Because there is not a lot of sugar, most of the sweetness comes from the bananas; it is not intended to be an overly sweet cake so please don't give this recipe a poor review simply because you are expecting it to be sweeter. Having said that, it still makes a really nice afternoon tea while being quite low in saturated fat for a cake and full of fruit. You can try adding more sugar if you like but of course then it won't be as healthy. :)

- Preheat your oven to 180°C Line the bottom of a 20cm deep round cake pan with baking paper, then grease it.
- Mash bananas with a fork.
- Sift baking powder and flour into a bowl and then stir in the sugar.
- Mix the oil (or butter, if using), milk, bananas and eggs in another bowl, then mix with the flour-sugar mixture.
- Pour half of the batter into the cake pan, spinkle half the blueberries over the top, then top with the rest of the batter.
- Decorate the cake with the remaining blueberries and then bake in the oven for 50-55 minutes.
- Allow the cake to cool in the pan for 10-15 minutes, then gently turn out onto a rack to finish cooling.
- Serve with sweetened cream or ice cream for a yummy afternoon tea!

- Preheat oven to 350-degrees F.
- Butter a 8x8- inch baking pan.
- Mix first 4 ingredients (2 tablespoon sugar- 1 tablespoon butter) together in a small bowl until crumbly.
- Set aside.
- Combine next 5 ingredients (blueberries- mace) in prepared baking dish.
- Cut butter in pieces and place over blueberries.
- Bake for 10 minutes.
- While blueberries are cooking, prepare cake mixture.
- Sift next five ingredients (flour- salt) in a medium bowl.
- Set aside.
- Cream butter in a seperate bowl using an electric mixer.
- Add sugar and beat for 1 minute until light and fluffy.
- Beat in eggs, 1 at a time.
- Blend in lemon peel and vanilla.
- Add sour cream alternately with dry ingredients, beginning and ending with dry ingredients.
- Drop batter by large spoonfuls on top of berries.
- Spread to sides of dish.
- Sprinkle with topping.
- Bake for 40-45 minutes or until toothpick comes clean when inserted in center of cake.
- Cool for 25 minutes before serving.
- Sprinkle with powdered sugar, if desired.

- Preheat oven to 350 degrees. Butter nine 2 1/2- by-4-inch baking pans, and dust with flour, tapping out excess.
- Combine 1/2 cup sugar and 1/2 cup lemon juice in a small saucepan over medium heat. Simmer, stirring occasionally, until sugar dissolves and syrup is thickened, about 4 minutes. Let stand while making cakes.
- Meanwhile, combine heavy cream, remaining 2 tablespoons lemon juice, and the vanilla in a bowl. Whisk together flour, baking powder, baking soda, and 1/4 teaspoon salt in another bowl.
- Beat butter, lemon zest, and remaining cup sugar with a mixer on medium speed until pale and fluffy. Reduce speed to low, and add eggs, 1 at a time, beating well after each addition. Beat in flour mixture in 3 additions, alternating with cream mixture, beginning and ending with flour. Gently fold in blueberries using a rubber spatula.
- Divide batter evenly among pans. Bake on a rimmed baking sheet until a toothpick inserted into the center of each comes out clean, about 30 minutes.
- Transfer pans to wire racks, and brush tops of cakes with lemon syrup. Let stand for 15 minutes. Turn out cakes from pans, and brush all over with remaining syrup. Let cool completely on wire racks.
LEMON BLUEBERRY TEA CAKE
I found this recipe in an old loose-leaf cookbook owned by my great-aunt. I've enjoyed making it for teas and afternoon get-togethers.

- Toss blueberries with 1 tablespoon flour; set aside. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Combine remaining flour with baking powder and salt; add alternately with milk to creamed mixture. Fold in lemon zest and berries. , Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 60-65 minutes. , Meanwhile, combine glaze ingredients in a small saucepan. Heat to boiling, stirring until sugar dissolves. Cool cake in pan 10 minutes before removing to wire rack. Brush glaze on top and sides of cake. Cool. To serve, cut into 1/2-in. slices.
