This spinach-stuffed chicken breast recipe is special to me because it has so much flavor, yet not too many calories. I love Italian food, but most of the time it is too heavy. This is a healthy twist on an Italian dish! -Nicole Stevens, Mount Pleasant, South Carolina

1-1/2 cups fresh spinach, chopped
1/3 cup julienned soft sun-dried tomatoes (not packed in oil), chopped
1/4 cup crumbled goat cheese
2 garlic cloves, minced
1/2 teaspoon pepper, divided
1/4 teaspoon salt, divided
2 boneless skinless chicken breasts (6 ounces each)
1 tablespoon olive oil, divided
1/2 pound fresh asparagus, trimmed
Aged balsamic vinegar or balsamic glaze, optional

Steps:

  • Preheat oven to 400°. In small bowl, combine the spinach, sun-dried tomatoes, goat cheese, garlic, 1/4 teaspoon pepper and 1/8 teaspoon salt., Cut a pocket horizontally in the thickest part of each chicken breast. Fill with spinach mixture; secure with toothpicks., In an 8-in. cast-iron or ovenproof skillet, heat 1-1/2 teaspoons oil over medium heat. Brown chicken on each side. Place in oven; bake 10 minutes., Toss asparagus with remaining 1-1/2 teaspoons oil, 1/4 teaspoon pepper, and 1/8 teaspoon salt; add to skillet. Bake until a thermometer inserted in chicken reads 165° and asparagus is tender, 10-15 minutes longer. If desired, drizzle with vinegar. Discard toothpicks before serving.

4 chicken breasts, skinless and boneless
1/2 cup plain goat cheese (cream cheese can also be used)
2 cups frozen broccoli florets
2 tablespoons vegetable oil
455 ml vh sweet and sour sauce

Steps:

  • Place 1 chicken breast between 2 large pieces of plastic wrap, carefully pound chicken breast with the flat side of a meat tenderizer or rolling pin. Flatten breast to a thickness of 1/2 cm (1/4 inch), taking care not to tear the chicken. Repeat with remaining chicken breasts.
  • Place broccoli in a small glass and add just enough water to cover the florets, microwave for 4 minutes. Drain and chop finely. Stir warm broccoli into goat cheese until well combined.
  • Place 1/4 of the cheese mixture at the base of the first piece of chicken, carefully roll the meat over the cheese, tucking in the sides to enclose the cheese. Use 2-3 toothpicks to secure. Repeat with remaining 3 breasts.
  • In a large sauté pan heat oil over medium-high, brown chicken on all sides, about 7 minutes. Add sweet & sour sauce to the pan along with 1/4 cup (60 mL) water. Cover and simmer until chicken is cooked through, about 12 minutes.
  • Slice chicken and serve with sauce poured over top.

1 cup Miracle Whip light
10 ounces fresh broccoli, steamed and chopped (you can use frozen, I prefer FRESH)
1 cup of grated parmesan cheese
1/2 cup of shredded reduced-fat mozzarella cheese
1/2 cup shredded colby-monterey jack cheese
4 boneless skinless chicken breasts (cleaned)
2 garlic cloves, finely chopped
1 tablespoon extra virgin olive oil
1 teaspoon paprika
1 teaspoon italian seasoning

Steps:

  • Preheat oven to 350°F.
  • To prepare broccoli stuffing, combine broccoli, Miracle Whip, parmesan and mozzarella cheeses in a bowl.
  • Lightly mix and place in a baking dish that has been sprayed with non-stick cooking oil.
  • Place in oven and bake for 15 minutes.
  • To prepare chicken, cut a slit down the middle of the breast almost all the way through.
  • Take your extra virgin olive oil, garlic, and spices and place them in a frying pan (heat on medium).
  • You will want to cook the chicken in the pan for at least 10-12 minutes on each side until the breast are no longer pink.
  • Let chicken breast and stuffing cool (KEEP OVEN AT 350°F).
  • Stuff chicken breast with the broccoli and cheese stuffing (heaped).
  • Place in a baking dish that has been sprayed with non-stick cooking oil, and sprinkle the Colby-Jack cheese over them.
  • Cover with foil and place in oven for 35-40 minutes.

Chicken Breasts Stuffed With Olives and Goat Cheese image

Stuffing chicken breasts with a tangy cheese mixture is a great way to add flavor. And it couldn't be easier: simply mix together a few ingredients, slit the chicken breasts, push the filling in with your fingers, and saute. To meet the challenge of keeping chicken breast moist, this recipe uses a technique called pan-steaming. After browning one side of the chicken breasts, I turn them over and rest a pot lid that fits inside the frying pan right on top of the chicken. The lid prevents the steam from evaporating completely, keeping the chicken moist, yet because I'm not covering the entire pan, the chicken continues to brown rather than steam. The chicken can be served either with a reduced pan sauce or a ROASTED CHILE-CILANTRO SAUCE. This recipe is fun to play with. Try sun-dried tomatoes added to (or in place of) the olives. In the summer, flavor the goat cheese with fresh herbs such as basil, chives, and mint.

3 ounces fresh goat cheese
1 tablespoon milk
1 clove garlic, minced
1 tablespoon chopped flat leaf parsley
1 pinch crumbled dried oregano
1 pinch dried chili pepper flakes
1 tablespoon chopped kalamata olives or 1 tablespoon other good-quality black olives
salt & freshly ground black pepper
4 boneless skinless chicken breast halves (about 6 oz. each)
2 tablespoons olive oil
1/2 cup dry white wine (or serve with SMOKED CHILE-CILANTRO SAUCE)
2 poblano peppers, Roasted, peeled and seeded
1/4 cup red onion, coarsely chopped
2 tablespoons fresh lime juice
3/4 cup olive oil
1/4 cup spinach leaves
1/4 cup cilantro leaf
2 teaspoons honey
salt & freshly ground black pepper

Steps:

  • In a small bowl, mash the goat cheese and milk together until smooth.
  • Mix in the garlic, parsley, oregano, and chile flakes.
  • Stir in the olives and season with salt and pepper.
  • On the thickest side of each breast, cut a deep, 3-inch-long pocket.
  • Using your fingers, stuff the goat cheese mixture into each pocket.
  • Close by pressing the flesh together, securing with a toothpick if necessary.
  • In a large frying pan, heat the oil over medium-high heat.
  • Have ready a lid that's too small for the pan but will cover all the breasts.
  • Cook the chicken on one side until golden brown, 5 to 6 minute Turn the breasts over, season with salt and pepper, and set the small lid on top of them.
  • Continue to sauté until the chicken is cooked through, about another 10 minute Transfer the chicken to a warm serving plate.
  • Pour the wine into the pan and cook, scraping up the flavorful brown bits stuck to the pan, until it's reduced to a glossy syrup.
  • Drizzle the reduction over the chicken and serve.
  • If you choose to serve with the ROASTED CHILE-CILANTRO SAUCE: In a blender or food processor, combine the poblanos, onion and lime juice and blend until smooth.
  • While the blender is running, add the oil slowly until emulsified.
  • Add the spinach and cilantro and blend until smooth.
  • Add the honey and season to taste with salt and pepper.
  • Serve at room temperature.

1 small finely diced onion

4 tablespoons mined garlic
6 whole cloves
1 lb prego ricotta and parmesan sauce

Steps:

  • Grease a 9 x 11 in casserole dish.
  • Preheat oven to 350 degrees.
  • Flatten chicken breasts by using rolling pin to get membranes out. Make thin.
  • Combine onion, 2 tbl garlic, broccoli, mild chz, sharp and almost all of mozzarella cheese n large bowl and stir together.
  • Place salt and pepper with beaten eggs in bowl.
  • Mix bread crumb and 1/2 of the parmesian cheese in seperate bowl.
  • Coat chicken with eggs and then dip into bread crumb mixture.
  • Lay each chicken breast stretched out seperatly.
  • Spoon broccoli mixture onto flattened chicken and roll up like a burrito and pin shut with 1 clove.

1 tablespoon unsalted butter, at room temp
1/4 teaspoon thyme

1 shallot, minced
1 garlic clove, minced
