STRAWBERRY CLAFOUTIS: THE FRENCH RECIPE
The French have delivered many delicious dishes to our menus, and the clafoutis is one of those. Clafoutis (pronounced kla-foo-tee) is a rustic dessert consisting of an egg-rich thick batter studded with fruit. The traditional Clafoutis is made with un-pitted black cherries. As the desserts baked in the oven, the cherry pits released a subtle almond flavor.

- For such a fancy dessert, this recipe is rather easy. Just a few simple steps to create a delicious masterpiece!
- Cut the strawberries in half and set aside.
- In a small bowl, beat the eggs and the sugar with a hand mixer until smooth.
- Add the lemon peel and flour.
- Add the milk and beat with the hand mixer until fully combined.
- Grease a springform tin and line with parchment paper. Layer the strawberry halves on the bottom of the pan.
- Pour the mixture over strawberries and bake at 180°C/350°F for 35-40 minutes.
- Sprinkle with powdered sugar and serve!

Steps:
- Heat oven to 350°F.
- Whisk gelatin mix, 2 Tbsp. flour and water in large bowl until blended. Add strawberries; toss to coat. Spoon into bottom of 2-qt. casserole dish sprayed with cooking spray.
- Beat eggs, milk, sour cream, dry pudding mix and remaining flour in medium bowl with mixer 1 min. or until blended. Pour over strawberries.
- Bake 45 to 50 min. or until center is set and top is puffed. Serve warm.

- Lightly grease a 25cm/10in round or a 25x20cm/10x8in rectangular pan (ceramic or metal) with softened butter.
- Rinse the strawberries, leaving them a little wet.
- Toss with 1/3 of the caster sugar, then spread them evenly in the bottom of the dish.
- Sift the flour, salt and the remaining sugar into a mixing bowl.
- Make a well in the middle and pour in the beaten eggs.
- Mix well, drawing in the flour from the sides.
- Stir in the milk gradually until you have a smooth batter (You can use a food processor to make the batter).
- Pour the batter into the dish over the strawberries, and bake in a preheated oven at 180°C/350°F for about 35 minutes until lightly browned and puffed up.
- Clafouti is at its best eaten lukewarm; dust with the icing sugar just before serving.
- Serve plain or with some lightly sweetened whipped cream if you're feeling decadent.

STRAWBERRY CLAFOUTI
Easy, French, Comfort Food! The batter is much like a crepe mixture and is simply poured over berries and baked until puffed and golden brown. As the berries rise to the top, the bottom layer is in between a cake and custard. I used two, 16 ounce ramekins, but you could also use a baking dish or cast iron pan. Put a sheet of tin foil underneath your baking dish(es) in case the juices from the berries bubble over (so you don't have to clean your oven). In addition to dusting the Clafouti with powdered sugar you can add whipped cream, ice cream, crème fraiche, Reddi-wip®, you name it!

Steps:
- Preheat oven to 350°.
- Spray Pam on two, 16 oz baking dishes.
- Rinse, hull and slice strawberries in an egg slicer (leave them a little wet); toss strawberries with cornstarch and 1 tsp sugar until evenly coated; evenly distribute strawberries in bottom of dishes and set aside.
- Whisk eggs, milk and vanilla. Then whisk in ¼ cup sugar, salt, cinnamon, baking powder and flour until frothy and lumps are gone. You can use your blender/food processor.
- Pour batter over strawberries.
- Bake until puffed, golden brown, about 40 minutes.
- Let stand for 10 minutes.
- Dust with powdered sugar and serve warm.
