PORK SATAY WITH PEANUT LIME DIPPING SAUCE



Pork Satay With Peanut Lime Dipping Sauce image

This is incredibly easy to make and a delicious addition to any Asian-themed meal! I got this recipe from my Dad; I think he got it from a LCBO magazine about 10 years ago. The preparation time includes marinating time. The peanut lime dipping sauce can be made up to 3 days ahead, but grill the satays just before serving. You can also substitute beef, chicken or shrimp, for the pork, with equally delicious results!

1 small onion, chopped
1 inch gingerroot, chopped
2 garlic cloves, chopped
1 teaspoon chili sauce (sambal oelek works well) or 1 dried red chili
1 lime, juice and zest of, grated
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon peanut oil or 1 tablespoon vegetable oil
12 ounces pork tenderloin
1/4 cup peanut butter (either chunky or smooth)
1/4 cup soy sauce
1/4 cup lime juice
1 tablespoon rice vinegar
3 tablespoons coriander, chopped (cilantro)
1 tablespoon brown sugar
1/2 teaspoon chili sauce (sambal oelek) or 1/4 teaspoon dried chili pepper flakes

Steps:

  • Combine all marinade ingredients in food processor or blender and puree. Set aside.
  • Cut pork into 6-inch lengths and slice each length into 1/2-inch long strips. Thread pork strips onto bamboo skewers.
  • Place skewers into 9x13-inch pan (or a zipper bag) and pour marinade over all. Turn skewers to ensure they are evenly coated. Cover, refrigerate and marinate for 2 to 3 hours.
  • Grill pork for 2 minutes on each side or until cooked through.
  • Peanut Lime Sauce:.
  • Put peanut butter in a medium size bowl. Slowly whisk in remaining ingredients. The peanut butter will "seize" after each liquid addition, but keep whisking and it will smooth out.

Savory skewers and creamy peanut sauce make a great appetizer combination, but this dish is great for heartier meals, too.

1/2 cup canned coconut milk (not cream of coconut)
1 clove garlic, finely chopped
1 tablespoon packed brown sugar
1 teaspoon grated gingerroot
1 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 lb boneless skinless chicken breasts, cut into 1-inch strips
Bamboo skewers
Lime wedges, if desired
1 tablespoon vegetable oil
1 small onion, finely chopped
2 cloves garlic, finely chopped
2 teaspoons grated gingerroot
1/2 cup creamy peanut butter
1 tablespoon sesame oil
1/2 cup canned coconut milk (not cream of coconut)
3 tablespoons fresh lime juice
1/4 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons sherry
1/4 teaspoon crushed red pepper flakes
1/2 cup chopped fresh cilantro leaves

Steps:

  • In large bowl, stir together 1/2 cup coconut milk, 1 clove garlic, 1 tablespoon brown sugar, 1 teaspoon gingerroot, the curry powder, salt and pepper. Add chicken; stir to coat. Cover; refrigerate at least 1 hour to marinate, stirring occasionally. Meanwhile, soak skewers in water at least 30 minutes before using to prevent burning.
  • In 2-quart saucepan, heat vegetable oil over medium heat. Cook onion in oil about 5 minutes, stirring frequently, until soft. Add 2 cloves garlic and 2 teaspoons gingerroot. Cook 1 minute longer, stirring constantly. Add remaining sauce ingredients except cilantro. Stir until sauce is smooth and thoroughly heated, about 3 minutes. Remove from heat; stir in cilantro. Pour into small bowl for dipping; set aside.
  • Heat gas or charcoal grill. Remove chicken from marinade; discard any remaining marinade in bowl. Thread chicken strips on skewers. Place skewers on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning once, until chicken is no longer pink in center.
  • Serve chicken with lime wedges and dipping sauce.

1 cup plain yogurt
2 tablespoons onion, minced
1 clove garlic, minced
Cayenne
1/2 lemon
1 pound chicken breast, cut into 1'' pieces
3/4 cup smooth peanut butter
1/4 cup soy sauce
1/2 cup boiling water
1 lime

Steps:

  • In a large bowl combine yogurt, onion, garlic, a dash of cayenne, and juice of half a lemon. Add chicken breast. Toss to coat and refrigerate overnight or for at least 6 hours. Remove chicken from bowl and place on skewers. Grill chicken on grill or in a grill pan. In separate bowl combine peanut butter, soy sauce, and water. Whisk until smooth. Add additional cayenne pepper and lime juice. Flip chicken and grill until cooked through. Serve with peanut butter sauce.

These are scrumptious! So easy to make, as is the sauce, and they always go down a real treat at parties, BBQs, or as an appetizer - just so versatile!

500 g minced beef (ground beef)
1 onion, finely chopped
2 garlic cloves, crushed
1 teaspoon beef stock powder
1 1/2 cups stale breadcrumbs
1 egg
1/2 teaspoon ground nutmeg
2 tablespoons of fresh mint, finely chopped
1 bunch parsley, finely chopped
flour (for dredging)
oil (for frying meatballs)
3/4 cup unsalted dry roasted peanuts
1 tablespoon brown sugar
1 tablespoon light soy sauce
1/4 cup water
1/2 cup coconut cream
1 teaspoon chopped fresh lemongrass (optional)

Steps:

  • Combine beef, onion, garlic, beef stock powder, breadcrumbs, egg, nutmeg, mint and parsley and mix well.
  • Roll mixture into small bite-size meatballs.
  • Roll meatballs in a little flour.
  • Gently fry meatballs.
  • Roll them around in the frying pan until they are browned.
  • Drain on absorbent kitchen paper.
  • Serve with the delicious Satay Sauce!
  • Method for SATAY SAUCE:
  • Process peanuts until finely chopped and add to to a saucepan with all other ingredients.
  • Stir but do not boil. Just heat through.
  • Voila!

2 tablespoons (30 ml) vegetable oil
1 tablespoon (16 g) red curry paste, plus more if desired
2 cups (490 ml) coconut milk
2 tablespoons (30 g) chunky peanut butter, plus more if desired
2 tablespoons (30 ml) fish sauce
2 tablespoons (30 g) sugar, plus more if desired
1/2 teaspoon rice vinegar
1/4 cup (60 ml) coconut milk
1 tablespoon (15 g) curry powder
1 tablespoon (15 g) kosher salt
1 tablespoon (15 g) sugar
1 1/2 teaspoons (8 g) freshly ground black pepper
1 teaspoon garlic powder, plus more if desired
2 pounds (900 g) boneless, skinless chicken breast
Ten to fifteen 6-inch bamboo skewers, soaked in water for at least 20 minutes and up to overnight
Vegetable oil or nonstick cooking spray, for greasing

Steps:

  • Make the Peanut Sauce: Heat the oil in a small saucepan over high heat until hot. Add the curry paste and cook, stirring, until very fragrant and thick, about 1 minute.
  • Stir in the coconut milk; bring to a boil and cook, stirring constantly, for 2 minutes. Be careful not to let it boil over. Add the peanut butter and cook, stirring constantly, until the sauce begins to thicken and come together, 2 to 3 minutes.
  • Reduce the heat to a simmer and add the fish sauce, sugar and rice vinegar. Cook, stirring, until the ingredients are incorporated, about 1 minute more; remove from the heat. An oily film will rise to top; skim it off, if you wish. Keep the sauce warm while you make the chicken satay. (See Cook's Note.)
  • Make the Chicken Satay: Place the coconut milk, curry powder, salt, sugar, pepper and garlic powder in a medium bowl; whisk to combine the marinade.
  • Slice the chicken against the grain into 2-inch square tiles about 1/4-inch thick. Transfer to the marinade and massage to coat the chicken evenly. You can cover and marinate the chicken overnight in the refrigerator for better flavor and tenderness or cook it immediately.
  • Thread the chicken onto the bamboo skewers, stopping 2 inches from the bottom of each skewer.
  • Heat a grill or grill pan to high and preheat for at least 5 minutes. Rub a little oil on the grill grates or spray with nonstick cooking spray. Working in batches if necessary, grill the chicken on one side until you get nice char marks, 3 to 5 minutes. Flip and cook until the chicken is just cooked through, another 3 to 5 minutes. Serve the chicken satay with the peanut sauce on the side for dipping.
