PEPPERS STUFFED WITH SPINACH AND GROUND CHICKEN
A simple, tasty meal of bell peppers stuffed with ground chicken. Easily changed up, too!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Slice tops off peppers and wrap peppers in aluminum foil. Dice any pepper flesh surrounding stems; set aside. Discard stems.
- Bake peppers in the preheated oven for 15 minutes. Remove from the oven. Remove and discard foil when cool enough to handle.
- Meanwhile, heat oil in a skillet over medium-high heat. Add onion and cook and stir until soft and slightly browned, about 5 minutes. Add chicken; cook and stir until crumbly and no longer pink, 5 to 7 minutes. Add diced peppers and saute until soft, 2 to 3 minutes. Add cooked rice, tomatoes, and spinach; cook and stir until heated through, 3 to 5 minutes.
- Stuff peppers with chicken-rice mixture. Sprinkle with Italian seasoning, salt, and pepper, then Asiago cheese.
- Return the peppers to the oven and cook until heated through and cheese is melted, about 15 minutes.

PORK STUFFED BELL PEPPERS

Steps:
- Lightly brown ground pork in large frying pan; pour off drippings.
- Sprinkle salt and pepper over meat.
- Add cream of celery soup, corn and onions.
- Simmer for about 10 minutes.
- Cut peppers in half lengthwise and remove seeds and membrane; cook in boiling salted water for 2 minutes; drain.
- Fill pepper halves with meat mixture and place on rack in a roasting pan.
- Bake in a 350 oven for 15 minutes.
- Sprinkle salt on both sides of tomatoe slices and place on top of stuffed peppers and sprinkle with Parmesan cheese; bake 15 minutes longer.

- Slice the capsicums in half lengthwise and scoop out the seeds.
- Mix together all the other ingredients.

- Preheat the oven to 450 degrees F.
- Combine the chicken, chili powder, cumin, 1/2 teaspoon salt and several grinds of pepper in a large bowl and toss to coat.
- Heat 1 tablespoon of the oil in a large cast-iron skillet over medium-high heat until it just begins to smoke. Add the chicken and cook, undisturbed, until it just starts to brown in spots, about 2 minutes. Add the onions and cook, stirring often, until tender, about 3 minutes more.
- Transfer the chicken and onion mixture to another large bowl and rinse and dry the skillet. Add the rice, 1/2 cup of the cheese, half the lime juice, 3/4 teaspoon salt and few grinds of pepper to the chicken and toss to combine. Divide the filling among the peppers.
- Add the remaining tablespoon of oil to the skillet, arrange the peppers on top and turn to high heat. When the oil starts to sizzle, about 2 minutes, transfer to the oven and bake until the filling is hot and the peppers are softened, about 20 minutes. Sprinkle the remaining 1/2 cup cheese over the peppers and bake until melted, about 3 minutes more.
- Drizzle the remaining lime juice over the peppers and top with the cilantro leaves. Serve with the sour cream, guacamole and pico de gallo if desired.

- Preheat oven to 400°F.
- Cut the tops off of the peppers and scrape out the insides.
- Once cleaned out, place peppers in a casserole dish.
- Brown the chicken.
- Drain off excess fat.
- In a bowl, combine the salsa, peanut butter, soy sauce, ginger, lime juice and peanuts.
- Fold into the chicken.
- Spoon the mixture into the peppers.
- Add 4 tablespoons of hot water to bottom of baking dish.
- Cover the baking dish and bake for approximately 30 minutes or until peppers are tender.
HUNGARIAN BEEF & PORK STUFFED BELL PEPPERS

- Prepare rice by rinsing under cold water for a few seconds.
- Put rice in small pot with water and bring to boil uncovered, at medium heat.
- When rice begins to boil, lower heat to medium low and place lid on pot tilted to allow steam to escape.
- Cover tightly when craters appear in rice, lower heat and simmer approx 15 minutes.
- Let sit for 5 minutes, fluff with fork and let cool.
- Prepare green peppers by slicing off tops approximately 1/4" down and remove seeds and membrane.
- Wash peppers and allow to drain upside down on paper towel.
- Prepare filling by placing ground meat in large bowl.
- Saute diced onions in vegetable oil in small saute pan until onion is transparent.
- Add to meat bowl.
- Add salt and pepper.
- Add 1/2 can tomato sauce (reserving remaining 1/2 can) Add rice to bowl and combine ingredients with hands until blended together.
- Add lightly beaten egg and continue to blend mixture.
- Loosly pack each pepper with meat mixture forming small dome on top.
- If you have extra filling, form into individual meat balls.
- In large stock pot, pour remaining 1/2 can tomato sauce and 1/2 can water, swishing around until blended.
- Place stuffed peppers into stockpot, along with extra meatballs (if you made any).
- Add 1 can tomato soup, 1/2 can water to pot.
- Add catsup to pot.
- Add remaining 3 cans tomato sauce, and add about 1/2 can of water to each can to clean up remaining sauce in can.
- Add this to pot also.
- Bring stockpot to boil, lower heat, cover with lid slightly tilted.
- Cook over low heat for about 1 hour.
- Blend flour into sour cream in bowl.
- Slowly blend in about 1/2 cup (or more) hot gravy from pot.
- Add sour cream mixture SLOWLY into pot, stirring constantly until gravy slightly thickens and becomes a deep orangy color, rather than the bright red color of tomatoes.
- Serve peppers in bowls, split open, and generously covered with gravy.
- Have crusty bread available for soaking up the rich gravy.
T.V.P. STUFFED CAPSICUMS/BELL PEPPERS
A veggie alternative to beef stuffed peppers for people who like the taste of meat but can't (or won't) eat it (like me!)

- add the gravy powder, black pepper, and oregano to the T V P. add the boiling water stirring well then add the Worcestershire sauce, balsamic vinegar and stir again. let that sit for at least an hour.
- in a shallow pan heat the olive oil on medium heat, chop the onion and press the garlic and heat both until they soften. don't forget to stir to avoid blackening the garlic! finely chop the mushrooms (i peel mine first) and add to the pan and cook until the mushrooms begin to sweat. Add the T V P to the pan and stir in for 2 minutes reduce heat and add the can of tomatoes. stir again until well mixed and turn off heat. preheat oven to 200°C.
- Prep the capsicums by taking off the tops and removing the seeds then rinse out. place capsicums on baking sheet and stuff with the T V P mixture.
- When the oven is hot enough place the baking tray on middle shelf and cook for 1 hour.
- Serve with mixed green salad and enjoy!
- VEGANS BEWARE. Worcestershire sauce contains anchovies so leave it out when making i don't use salt here because of the Worcestershire so if not using you will want to add to taste.
- PLEASE NOTE ABOUT T V P.
- In America you can get T V P frozen and already hydrated at the supermarket and so you could substitute 3 cups of that (as is) to the 1 cup of dried with the 3 cups of boiling water: here in Australia you can find T V P at the supermarket but its cheaper at the health food store (go figure!) and sadly I've not been able to find the frozen T V P trust me I've looked.
- Btw - in the United Kingdom T V P is sometimes known as soya mince.
CHICKEN MUSHROOM STUFFED BELL PEPPERS
I've been wanting chicken stuffed peppers but can't eat acidic stuff right now (limited tomato). This is quick, light, super easy and tastes great. I think it could be a great make ahead bake later but haven't tried to do it yet, as I just thought this one up today! I really hope you like it as much as we did!

- Preheat oven to 400°F.
- In 11x7-inch or 9x13-inch glass or microwavable pan, microwave pepper halves cut side down in approximately 1/4 to 1/2 inch water, at half power (depends on microwave as they vary) for 4-5 minutes (until tender crisp), drain excess liquid.
- Meanwhile, in a large skillet heat 1 T Olive Oil over Med High heat.
- Season Chicken with salt & pepper to taste.
- Add chicken and mushrooms to skillet, sauté 2-3 minutes, add onion, garlic and 1/2 of chicken stock.
- Sauté uncovered until chicken stock is evaporated/absorbed.
- In same glass pan, line the inside of each pepper half with ham slices to cover, add 1/4 of halved cheese to each pepper, stuff with chicken mixture and top with thin tomato slices.
- Pour remaining chicken stock over top, cover loosely with foil and bake for 15 minutes.
- Remove foil baste each pepper with stock in pan, then cover with remaining cheese.
- Return to oven for 3-5 minutes until cheese is melted.
- While peppers are cooking prepare noodles.
- I like to substitute 1 chicken bouillon cube for the optional salt to the cooking water.
- Prepare according to package directions, drain and toss with remaining olive oil.
- To serve: Place stuffed pepper on bed of noodles and spoon juice from pan over noodles.
- Enjoy!

- Preheat oven to 180°C.
- Cut tops off capsicums and keep aside. Remove seeds and membranes. Cook capsicums 5 mins in boiling water with a little salt, or in microwave for 1-2 minutes Drain.
- Cook rice or pasta.
- Fry garlic and onion in oil until soft.
- Add tomatoes.
- Cook 10 minutes.
- Remove from heat, add rice/pasta, olives, pinenuts, diced and grated cheese, salt and pepper to taste.

- Cut the peppers in half lengthwise, leaving the stems and halving them also.
- Remove the seeds and ribs.
- Saute the beef and pork, the onion, garlic, 1 teaspoon of the bouillon granules, and the salt together, crumbling well, until the onion is transparent.
- Drain off the fat.
- Add the rice, cheese, sour cream, tomatoes, green onions and soy sauce.
- Mix well.
- Stuff this mixture into peppers.
- Mix the hot water and the remaining 1 tsp bouillon granules.
- Pour this into a shallow casserole large enough to hold all the peppers.
- Place the stuffed peppers in the dish.
- (The water in the dish allows the peppers to steam while retaining some of their crispness).
- Cover the casserole with foil and bake at 350 degrees for 25-35 minutes.
- Remove the foil and spoon a little juice over the peppers; bake for an additional 10-15 minutes.
FELICITY'S CHICKEN STUFFED RED BELL PEPPERS
There are lots of recipes for stuffed peppers, this is mine. I served these with my Garlicky Grilled Chicken. If you wanted to serve them as a main course, you could decrease the rice & use more meat in the filling. You could also use lamb or beef as a change from chicken. I have suggested using spices to taste, because you can vary it depending on your mood or the theme of your meal. I used oregano, but you could use harissa or cumin for a middle eastern flavor or chilli for some heat... it's up to you to make my dish yours :-) Enjoy!

Steps:
- Cut the top off the peppers and remove the insides.
- Chop onion, carrot, celery and garlic very finely.
- (I use a food processor) Cook vegetables in butter until soft.
- Combine vegetables, rice, chicken and cheese.
- Season to taste.
- Fill peppers with this mixture, pressing down as you go to ensure they are well stuffed.
- Place peppers in a covered casserole and cook in a 180c oven until peppers are soft, approximately 60-90minutes.
- To speed the cooking process, microwave the peppers for a couple of minutes before filling.
- Once they are soft, sprinkle with additional cheese and broil until tops are golden.
- Serve hot or warm as a side dish, appetiser or light lunch.
