1/4 cup chicken broth
1/4 cup water
1/4 cup white wine
1 tablespoon milk
1 teaspoon lemon juice
salt, to taste
pepper, to taste
2 lbs boneless skinless chicken breasts, sliced width-wise into 1/2-inch strips
2 small rosemary sprigs
1 garlic clove, finely chopped
1/2 lemon, juice of
1/4 cup extra virgin olive oil
1/2 bunch fresh asparagus (remove bottom inch of stem, cut remainder into 1-inch pieces)
1 zucchini, julienne cut
1 summer squash, julienne cut
2 roma tomatoes, cut into 1/2-inch pieces
1/2 red bell pepper, julienne cut
1 cup broccoli floret, blanched
1/2 cup frozen peas
1 cup spinach, cut into 1/2-inch pieces
1/2 cup carrot, julienne cut
1 lb farfalle pasta, cooked according to package directions (bow ties)

Steps:

  • SAUCE PREPARATION:.
  • MELT butter in a sauce pan over medium heat. Stir in thyme, garlic pepper and rosemary. Whisk to thoroughly blend and cook for 1 minute.
  • COMBINE chicken broth, water, wine, milk, and lemon juice in a mixing bowl. Add cornstarch and whisk until cornstarch has dissolved and there are no lumps.
  • ADD liquid mixture to sauce pan. Whisk all ingredients together and bring to a boil. Season with salt and pepper to taste, then remove from heat.
  • CHICKEN & VEGETABLES PREPARATION:.
  • COMBINE all chicken ingredients in a mixing bowl and blend well.
  • MARINATE for 30 minutes.
  • HEAT a saute pan over medium-high heat. Add 1/4 cup extra virgin olive oil.
  • SAUTE chicken strips until internal temperature reaches 165°F.
  • ADD all vegetables and saute until cooked through.
  • ADD cooked, drained pasta and sauce to saute pan. Stir until pasta is thoroughly coated with sauce.
  • TRANSFER to a serving platter and garnish with chopped parsley.

1/4 teaspoon freshly ground Black Pepper (to taste)
1/2 teaspoon Salt (to taste)
8 Cherry Tomatoes (halved)
1/4 cup Spinach (chopped)
8 roasted Garlic Cloves (minced (about 4 tablespoons))
One 20-ounce package Tortelloni or Tortellini (cooked according to package directions)
Chicken
4 boneless (skinless Chicken Breasts)
1/2 cup Flour
3 large Eggs
1/4 cup Milk
1 cup Panko Breadcrumbs
1/2 cup Parmesan Cheese (grated)
3 teaspoons fresh Parsley (chopped)
1 1/2 teaspoons Italian Seasoning
1 tablespoon chopped Garlic
1/4 teaspoon freshly ground Black Pepper (to taste)
4 tablespoon Extra-Virgin Olive Oil
4 Lemon Wedges

Steps:

  • Flatten chicken breasts between 2 sheets of plastic wrap by pounding gently until chicken is approximately 1/2-inch thick.
  • Whisk eggs and milk together in a flat-bottom bowl.
  • Mix breadcrumbs, cheese, fresh parsley, Italian seasoning, garlic and pepper. Transfer to a flat plate.
  • Dredge chicken in flour, coating both sides. Dip chicken pieces in egg mixture, coating both sides. Dredge in breadcrumb mixture, coating completely on both sides. Set aside.
  • Melt butter in sauce pan over medium heat.
  • Add minced garlic and sauté for 1 minute. Add flour and stir well until well-blended.
  • Add white wine, chicken broth, heavy cream and cheese. Bring to a boil. Reduce heat and simmer until mixture starts to thicken.
  • Add roasted garlic, pepper and salt. Stir until well blended.
  • Add tomatoes and spinach to sauce and allow to simmer over low heat for about 5 minutes, stirring frequently.
  • Heat olive oil in frying pan over medium-high heat. Add breaded chicken to pan and cook until both sides are golden brown and internal temperature reaches 165ºF.
  • Add cooked, drained tortelloni pasta to sauce and blend well.
  • Transfer chicken to a large platter and serve with hot, creamy tortelloni.
  • Garnish with fresh parsley and lemon wedges.

1 lb Italian sausage, mild
1 pint cherry tomatoes
3 lemons, cut in half

Steps:

  • MARINADE:.
  • MIX pepper oil, rosemary, lemon juice, salt, bay leaves and pressed garlic in a large baking dish.
  • SKEWER:.
  • CUT each piece of chicken in half lengthwise. Thread each chicken piece onto a skewer; add a cherry tomato to the end of each skewer. Place chicken skewer in the marinade and marinate for at least 3 hours.
  • BAKE sausage at 350°F for 20 minutes. Cut each link into three pieces and set aside.
  • GRILL chicken until juices run clear and pieces are completely cooked.
  • THREAD sausage pieces on skewer. Grill until sizzling and juices are running clear.
  • PLACE cooked skewers on large platter. Garnish with rosemary sprigs, lemon halves and any remaining cherry tomatoes.

1 teaspoon garlic, chopped

1 1/2 cups heavy cream
1 1/2 cups milk
1 ounce cornstarch
1/4 cup parmesan cheese, grated
1/2 cup smoked gouda cheese, chopped
1/4 teaspoon salt
1 tablespoon fresh rosemary, chopped
8 1/2 ounces mushrooms, diced
1 1/2 lbs pasta, of choice cooked according to package directions
1 1/2 lbs boneless skinless chicken breasts, cut in 1 1/2 inch pieces

Steps:

  • SAUCE:.
  • SAUTE pancetta (or bacon) in a 3-quart sauce pan or large pot, over medium-high heat until crisp and golden brown. REduce heat, add butter and allow it to melt. Add garlic and sun-dried tomatoes. Saute for approximately 1 minute, stirring frequently (do not brown).
  • WHISK in cream, milk and cornstarch. Raise heat to medium-high. Whisk in Parmesan and Gouda cheeses. Once cheese melts, add remaining ingredients and bring to a boil, stirring continuously.
  • REMOVE from heat and let stand uncovered.
  • CHICKEN:.
  • MIX flour with salt and pepper. Coat chicken in seasoned flour, shaking off excess flour.
  • HEAT olive oil in large saute pan. Add chicken in a single layer and cook until golden brown on both sides (approximately 7 minutes total). Juices should run clear.
  • ADD wine to chicken in pan (caution: there will be a low flame in the pan). Toss gently until wine is evaporated. Add sauce and bring to a boil on medium-high heat.
  • TRANSFER drained, cooked pasta to large platter. Evenly distribute chicken and sauce over pasta.
  • GARNISH with chopped parsley and serve.

I made this recipe up after not finding very many recipes for chicken milanese to go with my pasta. It is quick and delicious.

2 eggs
kosher salt to taste
ground black pepper to taste
¾ cup all-purpose flour
1 cup Italian seasoned bread crumbs
2 skinless, boneless chicken breast halves, thinly sliced
¼ cup vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Beat eggs with salt and pepper in a shallow dish. Spread flour in another dish and bread crumbs in a third dish.
  • Working with one piece at a time, gently press chicken into the flour to coat and shake off the excess flour. Dip into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded chicken onto a plate while breading the rest; do not stack.
  • Heat vegetable oil in a large skillet over medium heat. Pan-fry chicken in batches of 2 or 3 pieces until golden brown and no longer pink in the center, about 2 to 4 minutes per side. Transfer cooked chicken to a baking sheet and keep warm in preheated oven while cooking remaining chicken.
  • Serve with lemon wedges.

This recipe calls for chicken, but veal, pork, and turkey work just as well.

1 1/2 baguettes
2 boneless, skinless chicken breasts
3 large eggs
2/3 cup all-purpose flour
Coarse salt and freshly ground black pepper
1 cup extra-virgin olive oil
Lemon juice

Steps:

  • Make the breadcrumbs: Cut crust from baguettes. Cut bread into 1-inch cubes; pulse in a food processor in batches to form coarse crumbs (this should yield 5 to 6 cups). Spread on a rimmed baking sheet; dry at room temperature for at least an hour or as long as overnight.
  • Prepare the chicken: Preheat oven to 200 degrees. Working with one at a time, place chicken breasts on a cutting board, flat side down. Press down on chicken with the palm of one hand, and cut in half horizontally to make 2 cutlets.
  • With the flat side of a meat pounder, pound chicken between pieces of plastic wrap until about 1/4 inch thick.
  • Lightly beat 3 large eggs in a medium bowl. Place 2/3 cup all-purpose flour and breadcrumbs in 2 separate wide, shallow dishes. Season eggs, flour, and chicken with coarse salt and freshly ground black pepper. Working with 1 cutlet at a time, dip into flour, turning to coat and shaking off excess. Dip into egg, and lift out, letting excess drip off. Dip into breadcrumbs, pressing firmly to help them adhere. Transfer to a plate or pan, and refrigerate at least 30 minutes and up to 2 hours. If needed, separate layers with wax paper or parchment paper.
  • Heat oil in a 12-inch skillet (oil should be between 1/4 and 1/2 inch deep) over medium-high heat until shimmering; a breadcrumb should sizzle instantly when dropped into oil. Gently place 2 cutlets 3/4 to 1 inch apart in skillet, and fry until undersides are golden brown, 3 1/2 to 4 minutes. Flip cutlets, and fry until cooked through and golden brown on other side, about 2 1/2 minutes more (chicken should feel firm).
  • Cutlets less than 1/4 inch thick will take 1 to 2 minutes less. Transfer to a paper-towel-lined baking sheet, and pat off excess oil. Lightly sprinkle with coarse salt, and keep warm in oven. Repeat with remaining cutlets, skimming brown bits and adding more oil if necessary. Aside from a squeeze of fresh lemon, a simple salad is all you need with chicken Milanese.
