Tomato & Cabbage Salsa

1 gallon ripe tomatoes, peeled and cut up
1 small head cabbage, chopped
6 medium onions, chopped
6 jalapeños, chopped
3 bell peppers, chopped
3 tablespoons ground black pepper
3 tablespoons salt
4 tablespoons prepared mustard
3 cups apple cider vinegar
2 cups sugar

Steps:

  • Combine all ingredients in large pot. Cook until well done, about 45 minutes. Use an immersion blender to preferred consistency. Put in sterile pint jars with 1/2 inch head space. Process in water bath canner for 15 minutes. Makes about 14 pints. Note: Sometimes I use my "stovetop smoker" to smoke about 1/4 of the tomatoes; just wash, cut out the stem, and stack in the smoker! This adds a little smokey flavor to the salsa.

Grilled Mahi Mahi Tacos With Red Cabbage Slaw, Tomato And Avocado Salsa And Pineapple Hot Sauce is the whole name for this lovely recipe. Created by Bobby Flay for a wedding on FoodNetwork, and it was a big hit with all the guests at the wedding. I wanted to share this lovely recipe with you all. It took me about 3 hrs. to make this dish, but it is well worth it! Be careful when making the Charred Pineapple-Habanero Hot Sauce using the the habanero chiles, as it is HOT with 2! I would suggest only 1 if you don't like real hot and spicy.

2 tablespoons canola oil
salt & freshly ground black pepper
8 (6 inch) flour tortillas, cut into 2 1/2-3-inch circles, and deep fried
3/4 cup orange juice
1/4 cup lime juice
1 cup fresh basil leaf, chopped
1 cup fresh cilantro leaves
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 tablespoon honey
1/2 cup canola oil
1/4 cup rice vinegar
1 tablespoon sugar
2 tablespoons canola oil
1/4 head red cabbage, finely shredded
1 large carrot, cut into fine julienne
1/4 cup cilantro leaf, chopped
salt and pepper
4 plum tomatoes, chopped
2 ripe Hass avocadoes, peeled, pitted, and diced
1/2 small red onion, finely chopped
1 serrano chili, finely diced
1 -2 lime, juice of
2 tablespoons canola oil
1 -2 teaspoon honey

  • For Tacos:.
  • Preheat grill.
  • Brush fillets with oil and season with salt and pepper. Grill for 3-4 minutes per side.
  • Remove from grill, and drizzle with some of the Citrus Vinaigrette. Let rest 5 minutes, and then flake with a fork.
  • Fill each fried tortilla with some of the mahi, top with the Red Cabbage Slaw, Tomato And Avocado Salsa, and drizzle with Charred Pineapple-Habanero Hot Sauce.
  • For Citrus Vinaigrette:.
  • Combine all ingredients in a blender, and blend for 1 minute.
  • For Red Cabbage Slaw:.
  • Combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • For Tomato And Avocado Salsa:.
  • Gently combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • For Charred Pineapple-Habanero Hot Sauce:.
  • Heat a grill to high or preheat the broiler. Place the whole pineapple (do not peel it) on the grill, and grill until the entire surface is completely black and charred. Remove from grill, and let cool slightly.
  • Peel the pineapple, remove the core, and coarsely chop the flesh.
  • Heat oil in a medium saucepan over med-high heat.
  • Add the onion, and cook until soft.
  • Add the pineapple, pineapple puree, habanero, and vinegar, and cook until the mixture is completely soft, about 25-30 minutes.
  • Transfer to a blender, and blend until smooth.
  • Season with salt, pepper, and honey, to taste.
  • Strain the mixture into a bowl.
  • *Note: If you can't find the Pineapple Puree, heat up 1 20 oz. can of pineapple chunks in unsweetended pineapple juice along with 6 tablespoons of sugar. Simmer until the liquid has reduced by 1/2. Puree the mixture in a blender.

1 small green cabbage, halved, cored, and cut lengthwise into 1/2-inch wedges
1/2 cup water
Coarse salt and ground pepper
1 pint cherry tomatoes, halved
2 tablespoons red-wine vinegar
1/4 cup roughly chopped fresh parsley

Steps:

  • In a large skillet, melt butter over medium-high. Add cabbage and cook, stirring occasionally, until it begins to soften and brown around edges, 4 minutes. Add water, cover, and cook until cabbage is crisp-tender, 5 minutes. Uncover and season with salt and pepper. Add tomatoes and cook, uncovered, until they soften, 3 minutes. Stir in vinegar. Season to taste with salt and pepper and top with parsley.

Good homemade salsa; if you can make it with your own home-grown tomatoes it will be even better. I don't think cilantro processes well, so I usually add 1 tablespoon of fresh, minced cilantro to each pint of salsa once I open it. However, if you'd like to add the cilantro prior to processing you can - just add 1/2 cup chopped cilantro after you cook down the tomatoes, when you add the rest of the vegetables. For the green bell peppers, you can use anaheim or poblano chile peppers, or just regular green bell peppers. "Cooking Time" includes processing time. Depending on how quick you are at peeling and seeding tomatoes, this recipe may take longer than the stated amount of time.

7 lbs ripe tomatoes
3 cups diced green bell peppers
1/3 cup minced jalapeno pepper
2 cups diced white onions
1 cup distilled white vinegar
1/3 cup tomato paste
5 garlic cloves, minced
1 teaspoon ground cumin
1 tablespoon canning salt
1 teaspoon black pepper

Steps:

  • Peel, seed, core, and chop the tomatoes (you should have about 14 cups). Place the tomatoes in a large colander and let them drain for 15 minutes. Discard the tomato juice drained off, or save for another purpose.
  • Place the drained tomatoes in an 8 quart stainless steel pot. Bring to boiling; reduce heat. Simmer, uncovered, about 1 1/4 hours until thickened, stirring frequently. Add the green bell pepper, jalapenos, onion, vinegar, tomato paste, garlic, cumin, salt, and pepper (if you have chosen to add cilantro to the recipe, now is the time to add it). Return mixture to boiling; reduce heat. Simmer, uncovered, for 10 minutes.
  • Ladle the hot salsa into hot canning jars, leaving 1/2 inch headspace. Wipe the rims of the jars with damp paper towels to remove any salsa which got on the rims or the threads. Place the lids and the bands on the jars, just tightening the bands fingertip tight.
  • Process in a boiling water bath for 15 minutes, then remove and let sit, undisturbed, for at least 12 hours before checking seals. It is important to let them sit undisturbed for 12 hours because the sealing compound on the lids is still cooling and hardening, completing the seal. While the jars cool, you will hear a "plink" type sound from each jar - this is the jars completing the vacuum seal as the final air escapes the jar. After 12 hours have passed, remove the bands and check the lids - press down in the center of the lid. If you cannot push the lid down any further, the jar is sealed. If the lid "gives" a bit, and you can push it down, the jar did not seal. You can either put the band back on the jar, and reprocess it for another 15 minutes, or you can just put it in the fridge and use it within 3 months.

Cabbage in salsa... who knew?! This recipe is a delicious combination of flavors and we were all thrilled with the result.

1 large head of cabbage
1 bunch green onions
1 bunch cilantro, fresh
6 jalapenos, fresh
1/4 c lemon juice
1 1/2 Tbsp garlic power
1 tsp cumin, ground
1 tsp salt
1 tsp white pepper
1 Tbsp red wine vinegar
6 roma tomatoes
2 avocados

Steps:

  • 1. Chop the cabbage to the desired size (I like mine a little chunky). Finely chop the cilantro by hand and add to the cabbage (Make sure to rinse the cilantro under water really good). I use a chopper to chop the green onions and jalapenos. The jalapenos need to be cleaned and sliced in half and all the seeds and membranes removed. Do not add any of the seeds or membranes until after you sample and see how hot the salsa is naturally. If the salsa is not too hot go ahead and add some of the seeds and membranes as needed.
  • 2. Add all the spices, lemon juice, and red wine vinegar. Mix together really well.
  • 3. Dice the tomatoes and avocados and fold them in last. If I make this recipe the night before I do not add the tomatoes and avocados until about one(1) hour before I serve the salsa. Do not mix to much as the tomatoes and avocados will become mushy. Serve with white corn chips. Enjoy!

Easy to make salsa that is great for dipping. Pretty healthy stuff with just a little salt and sugar. You need to like garlic and cilantro if you prepare as posted.

1 (28 ounce) can crushed tomatoes
3/4 medium yellow onion
1 cup cilantro
1 tablespoon sugar
1/2 tablespoon kosher salt
3 garlic cloves (or 3 tbsp prepared minced garlic)
1/2 cup jalapeno (pickled)
1 teaspoon black pepper
1 lime (juice of)

Steps:

  • Put everything into the blender or food processor, chunkier items first. Don't worry about chopping everything too much as the blender takes care of that.
  • For smoother salsa use crushed tomatoes and let the blender run as long as needed.
  • For chunkier salsa use whole tomatoes and give all the ingredients a nice rough chop so you do not have to leave the blender running very long. Carefully pulse for a couple of seconds.
  • Flavor improves over time but this should be used within a few days.
  • Refrigerate unused portions.
