ITALIAN STYLE GIBLETS
This is a recipe from an Old Italian Church Cook Book. It was served at Italian weddings as one of the first courses. I've benn making this for over 40 years and is served as a side dish or a main dish with Italian Bread and a salad. If you like giblets, you must try this. Also I add 1/2 to 1 cup frozen peas in the last 15 minutes of cooking. Update: You can serve over small shell pasta.

Steps:
- Boil giblets in salt water for about 1 hour or until giblets are tender. Use about 1 tablestoon salt and enough water to cover. When done, drain and cut in bite-size pieces, Heat oil in frying pan and cut oinions and brown slowly. Add giblets cover and slowly cook for about 15 to 20 minutes. Stir occasionally. Add rosemary leaves, parsley, marjoram, salt and pepper to taste. Cook until it gets a little sticky. Add wine. Cook slow until wine starts to dry up in pan, Add can of tomato sauce and one can of water, Stir well and simmer covered for about 1/2 hour. More water may be added if more juice is wanted, Taste to see if you have enough seasoning,.
- Optional: 1 can of mushrooms and 1 can of black potted olives, slice. Just heat enough and serve with a crusty Italian bread.

SAUTEED CHICKEN LIVERS
This recipe was found in one of the movie fanzines of the 1940s. It was said to be a favorite of actress/pianist Diana Lynn, who usually played the friend of the star during that era. You have to like chicken livers to like this dish and my DH and I certainly do. It is a quick and easy meal, and I hope you enjoy it, too.

Steps:
- Clean the chicken livers by rinsing well, cutting each in half and removing all membranes and any fat. Pat dry.
- Heat oil and butter in a large non-stick skillet. Saute livers, turning frequently, until light brown outside and just pink inside. (Or a little longer, if you like your livers well-done as my DH does.) Remove to a plate and keep warm.
- Stir-fry the onion and green pepper in same skillet until golden and tender. Add soup and vermouth to skillet and stir to blend. Heat until creamy and hot.
- Return livers to skillet. Cook and stir to combine and heat through.
- Serve over hot noodles, garnished with paprika and parsley as desired.
- Note: Mushrooms go well in this dish. You can add them in one of two ways. Saute approximately 1/4 to 1/3 pound sliced fresh mushrooms with the onion and green pepper. An easier way, if desired, is to add a 4-ounce can of drained mushrooms with the livers at the end of the recipe.

SAVOURY GIBLETS
All time favorite for chicken hearts and gizzards.Years ago saw an ole louisiana guy in suspenders cook this up on a tv cooking show.

- Combine everything except meat in saucepan and bring to a boil.
- Add meat and simmer 2 hours til tender.

GIBLET STOCK FROM TURKEY OR CHICKEN OR ?? FOR SOUP OR GRAVY
You can use this recipe for chicken or turkey stock for soup or gravy. I like the extra wing added to my stock. But it's not necessary.Cook time between 1 1/2 -2 hours. If cooked down less then 3 cups add water.I like to leave the skin on the onion it gives it a darker richer color.

Steps:
- In a large saucepan, combine the wing, neck and giblets (excluding the liver), 6 cups water, celery, carrot, onion, sage,garlic, bay leaf and peppercorns.
- Bring mixture to a boil, reduce heat and continue to cook at a simmer, skimming the froth occasionally for 1 hour.
- Add liver and continue to cook at a bare simmer for an additional 30 minutes.
- Strain the stock through a fine sieve into a bowl.
- There should be about 3 cups of stock.
- Reserve the turkey wing, liver, neck and remaining giblets.
- Chop the giblets finely and shred the meat from the wing for the gravy or soup.
GIBLET GRAVY (FOR ROAST TURKEY)
When I make a roasted turkey, this is how I make my giblet gravy. There is never enough giblets when you only use the giblets from the turkey, so here is my WONDERFUL and EASY recipe. If you have a large turkey, you may want to double this recipe. Any left over gravy can be frozen for future use. NOTE: The person who wrote a bad review must have done something wrong or did not include the turkey drippings. Please disregard that review and try this gravy for yourself. Steps:
- In a large skillet, pour in the chicken livers with their juice. A container is approximately 1 lb.
- Sautè the livers, turning them, until they are done.
- Allow to slightly cool, and cut the livers into small, but not too small, pieces.
- Place the gravy into a large pot.
- Add the cut up chicken livers.
- Heat, stirring every so often.
- Add about 3/4 cup of the turkey drippings.
- If you are wondering about seasonings, stop worrying. You do not need any seasonings, other than those already in the canned gravy, and the chicken livers along with the turkey drippings completes the taste.
