4 bone-in, skin-on chicken thighs, cut in 1/2 through the bone
Salt and freshly ground black pepper
1/2 pound slab bacon, sliced into large lardons
1 large onion, chopped
3 celery stalks, chopped
2 carrots, chopped
4 cloves garlic, minced
1/2 cup white wine
2 cups cooked Northern white beans
1 bay leaf
2 teaspoons dried thyme
1/2 cup chicken stock
1 tomato, sliced very thinly
Garlic Bread Crumbs, recipe follows
1 baguette, sliced, for serving
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
3 slices slightly stale or dried bread, pulsed into crumbs in food processor
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Rinse and dry the chicken well and season with salt and pepper. Let sit at room temperature for 15 minutes.
  • In a large Dutch oven, over medium-low heat, add the bacon and slowly render the fat. Remove the bacon to a plate when crispy, leaving the fat in the pan. Raise the heat to medium-high and add the chicken, skin side down. Brown the chicken on both sides and then remove to a plate. Add the onion, celery, carrots and garlic and saute until soft, about 5 minutes. Deglaze the pan with white wine and reduce by half. Stir in the beans, bay leaf and thyme. Nestle the chicken thighs and bacon into the pot. Add the chicken stock, cover and bake in the oven for 20 minutes. Remove from the oven, remove the lid and top the cassoulet with sliced tomatoes and the Garlic Bread Crumbs. Return to the oven and bake, uncovered, 15 minutes longer. Serve the cassoulet with baguette slices.
  • In a small saute pan over low heat, add the oil and the garlic. Stir until the oil is fragrant, about 1 minute. Toss in the bread crumbs and cook until the bread crumbs start to turn golden, about 2 to 3 minutes. Season with salt and pepper, to taste, and remove from heat.

This is a southwest France classic. It's a rich, hearty stew. Traditional cassoulets can take days to make. Here, Sara Moulton created an easier version for the regular home cook.

2 tablespoons extra-virgin olive oil, divided
8 bone-in chicken thighs (2 to 2 1/2 lbs)
kosher salt & freshly ground black pepper
1 medium onion
1 tablespoon fresh rosemary leaf (or 1/2 t dried)
1 tablespoon fresh thyme leave (or 1/2 t dried)
4 garlic cloves
2 (15 1/2 ounce) cans white beans
1/2 lb kielbasa (or bratwurst)
1/2 cup dry red wine
1 cup chicken stock
2 tablespoons Dijon mustard
1 cup panko breadcrumbs

Steps:

  • Heat 1 T olive oil in a large skillet with an ovenproof handle, over high heat until hot. Reduce the heat to med-high. Season the chicken with salt and pepper to taste and add it to the skillet, skin side down; cook for 3 to 4 minutes or until browned. Turn the chicken and cook the other side for 3 to 4 minutes or until browned.
  • Meanwhile, finely chop the onion (about 1 C). Finely chop the rosemary (about 1 1/2 t) and the thyme (about 1 1/2 t). Combine the rosemary and thyme in a bowl. Press the garlic (about 1 T plus 1 t) into the bowl. Rinse and drain the beans then mash 1 C of the beans into a separate small bowl with a fork.Set the rest of the whole beans aside. Cut the kielbasa in half lengthwise and then crosswise into 1/2 inch thick pieces.
  • Remove the chicken to a plate and drain off all but 1 T of the fat from the skillet. Reduce heat to med-low and add the onions and cook for 5 minutes or until it has softened. Add the herb and garlic mixture and cook for 2 minutes. Add the red wine and simmer over low heat until it has reduced by half.
  • Return the chicken to the skillet along with any juices that have accumulated on the plate. Add the kielbasa, chicken stock, both the mashed beans and the whole beans and the mustard. Bring the mixture to a simmer. Cover the pan and simmer for 15 minutes, or until the chicken has just cooked through. While the chicken is cooking, preheat the broiler.
  • Toss the bread crumbs with the remaining 1 T olive oil. Remove the lid from the skillet and season the mixture with salt and pepper to taste. Sprinkle the bread crumbs evenly over the top. Put the skillet under the broiler, about 4 inches from the heat source, and broil for 45 to 60 seconds, or until the crumbs are golden. When you serve the cassoulet, sprinkle the toasted bread crumbs over each serving.

2 tablespoons olive oil
4-6 boneless higher-welfare chicken thighs with skin on, (depending on the age and appetite of your children)
100 g higher-welfare bacon lardons or chopped bacon
1 large onion, chopped
2 small sweet potatoes, peeled and cut into cubes
16 button mushrooms, cut into quarters
500 ml fresh chicken stock
3 sprigs of thyme

Steps:

  • Heat the oil in a heavy-based pan over a medium to high heat and fry the chicken, skin side down, until it becomes crispy. It will take about 5 minutes to get a lovely golden colour. You may need to cook the chicken in batches if you have a small pan. Use a slotted spoon to remove the chicken pieces and set aside.
  • Pour away any excess fat and then, in the same pan, cook the bacon lardons and onions for about 5 minutes until they have taken on some colour.
  • Add the sweet potato and mushrooms and then return the chicken pieces to the pan, placing them on top, skin side up.
  • Pour over the stock until it just reaches the chicken skin, add the thyme and cover with a lid.
  • Leave to simmer very gently for about 10-15 minutes until the chicken is cooked through. The cooking time will depend on the size of the chicken pieces so do check by removing a piece of chicken and cutting into it with a sharp knife.
  • If you end up having more sauce than you'd like in the pan, simply strain into a clean saucepan, bring to the boil and reduce down and thicken by boiling it.

1 pound dried white beans (soaked and rinsed)
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pound lardons ( bacon strips )
2 large white onions (diced)
1 pound bulk pork sausage
1 1/2 pounds boneless chicken breast (cut into 1-inch pieces)
1 pound chicken legs
2 pounds tomatoes (seeded and chopped)
1 cup dry white wine
1 quart chicken stock
1 bouquet garni
3 cloves garlic (chopped)
1 tablespoon tomato paste
3/4 teaspoon salt
1/4 teaspoon black pepper
2 carrots (peeled and cut crosswise into 1/4-inch slices)
1/2 cup bread crumbs
1 teaspoon fresh parsley (finely chopped)
1/2 teaspoon fresh thyme (finely chopped)
4 teaspoons butter (melted)

Steps:

  • Gather the ingredients.
  • Place the beans in a large saucepan and cover them with cold water. Bring the beans to a gentle simmer over medium heat. Cover and cook them until they begin to turn tender, about 1 hour and 15 minutes.
  • Add 1 teaspoon salt and 1/4 teaspoon ground black pepper to the beans and cook until the liquid has absorbed, about 25 additional minutes.
  • Remove the beans from the heat, drain and discard any other liquid, and set the beans aside.
  • In a large skillet over medium-high heat, cook the lardons for 5 minutes, until they turn brown. Transfer them to a plate.
  • Add the onions to the pan and sauté them for 10 minutes, until they turn light golden brown. Transfer them to the plate with the lardons.
  • Brown the sausage and transfer it to a bowl. Preheat the oven to 350 F.
  • Drain all but 4 tablespoons of the fat from the skillet. Add the chicken breast pieces to the fat and brown them over medium-high heat. Transfer the chicken to the bowl with the sausage.
  • Brown the chicken legs in the skillet. Then transfer them to the bowl.
  • Combine the lardons, onions, sausage, chicken pieces and legs, tomatoes, wine, chicken stock, bouquet garni, garlic, tomato paste, 3/4 teaspoon salt, and 1/4 teaspoon ground black pepper in a large casserole dish.
  • Cover with a lid or foil and bake the casserole for 25 minutes.
  • Add the carrots to the pan, cover, and bake for an additional 20 minutes.
  • Add the reserved white beans to the hot casserole and gently stir the mixture.
  • In a small bowl, toss the breadcrumbs, parsley, and thyme with the melted butter. Sprinkle the seasoned breadcrumbs over the casserole.
  • Bake it, uncovered, for 1 hour.
  • Discard the bouquet garni and serve the cassoulet hot.

Cassoulet is one of my favourite dishes. This simple home-style version is closer to baked beans and sausages than fine French fare, but I'm okay with that. If using dried beans you'll need to start soaking them the night before.

400g dried great northern beans, cannellini beans or navy beans
2 tbsp olive oil
4 chicken drumsticks
4 good-quality pork sausages
4 thick slices speck or 200g bacon pieces
1 onion, peeled and diced
1 small carrot, peeled and diced
1 stick celery, diced
1 cup tomato passata
2 cups chicken stock
2 bay leaves
5 sprigs thyme
1 tsp salt
2 tbsp chopped parsley, to serve

Steps:

  • 1. Place the beans in a bowl, cover them with water - about 3 centimetres above the beans - and add a teaspoon of salt. Allow to stand at room temperature overnight. Drain the beans and rinse with clean water, then place in a medium saucepan and cover with water again. Bring to a simmer and simmer for 40 minutes then drain. 2. Heat your oven to 150C fan-forced (160C conventional). Heat a large, wide, oven-proof frying pan (or use a heavy baking dish) over medium heat. Add the oil and fry the chicken drumsticks, sausages and speck or bacon until browned. Remove from the pan (if using bacon pieces you can leave these in the pan). Add the onion, carrot and celery and fry for about 10 minutes until fragrant. Add the beans to the pan and stir to coat and combine. Add the passata, chicken stock, bay leaves, thyme and salt and stir. 3. Arrange the chicken, sausages, and speck back in the pan, pressing them into the mixture until halfway submerged. Bake for 90 minutes, then remove from the oven and allow to stand for 10 minutes. Scatter with parsley and serve. Tip: I prefer to use dried beans as I think they have a better flavour and soaking overnight takes no effort at all, but if you're pressed for time then use canned and skip the soaking. 1 pound dried white beans (Tarbais, canellini or northern), soaked overnight
3 carrots, peeled and cut into chunks
4 cloves of garlic, peeled
1 large onion, peeled
15 cloves
1 smoked ham hock
Bouquet garni (suggestion: rosemary, thyme, bay leaves)
8 cups water
1 pound bacon, diced
4-6 links (about 1 pound) andouille sausage
4 bone-in skin-on chicken thighs
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 cup Pomì chopped tomatoes
1/2 cup dry white wine
2 cups breadcrumbs
1/3 cup chopped parsley
Salt and freshly ground pepper

Steps:

  • Start by studding the onion with the cloves. Combine the beans, carrot chunks, garlic, onion with cloves, smoked ham hock and bouquet garni in a large pot or stockpot. Add the water and mix well. Heat over high heat until boiling and then lower the heat to a simmer and cook for 1 hour to 1.5 hours OR until the beans are almost al dente.
  • When the beans are done, drain, reserving the water and getting rid of the veggies, ham hock and bouquet garni.
  • Preheat oven to 350F degrees.
  • While the beans are cooking, in a large casserole pan, cook the bacon over medium heat until golden brown, about 10 minutes. Using a slotted spoon, remove the bacon to a plate and reserve. Then, working in batches, brown the sausage and the chicken, about 2-3 minutes per side. You can add olive oil as needed. Remove the cooked chicken and sausage to the plate with the bacon.
  • Add a few tablespoons of olive oil, if needed, and sauté the onion and garlic, over medium heat, until fragrant and translucent. Add the drained beans, reserved bacon, chopped tomatoes and white wine and cook until the wine reduces slightly. Taste for seasoning and adjust salt and pepper.
  • Ladle the bean broth into the casserole dish and add the meat and chicken, distributing evenly. The meat and beans should level with the liquid. If you have too much liquid, just remove some.
  • If you want to add the breadcrumb topping, combine breadcrumbs, chopped parsley, salt and pepper in a medium bowl. Spread the topping evenly over the cassoulet and bake, uncovered, until bubbling and golden, about 1 hour.
  • Serve immediately

TRADITIONAL FRENCH CASSOULET RECIPE

To make traditional French cassoulet at home, substitute fresh chicken for duck confit, build flavor in the beans, and add gelatin to form a crisp crust.

1 pound dried cannellini beans
3 tablespoons kosher salt; for table salt, use half as much by volume
1 quart homemade or store-bought low-sodium chicken stock
3 packets (3/4 ounce) unflavored gelatin, such as Knox (see note)
2 tablespoons duck fat (optional)
8 ounces salt pork, cut into 3/4-inch cubes
6 to 8 pieces of chicken thighs and drumsticks, or 4 whole chicken leg quarters
Freshly ground black pepper
1 pound garlic sausage (2 to 4 links, depending on size)
1 large onion, finely diced (about 1 cup)
1 carrot, unpeeled, cut into 3-inch sections
2 stalks celery, cut into 3-inch sections
1 whole head garlic
4 sprigs parsley
2 bay leaves
6 cloves

Steps:

  • In a large bowl, cover beans with 3 quarts water and add salt. Stir to combine and let sit at room temperature overnight. Drain and rinse beans and set aside.
  • Adjust oven rack to lower-middle position and preheat oven to 300°F (150°C). Place stock in a large liquid measuring cup and sprinkle gelatin over the top. Set aside. Heat duck fat (if using) in a large Dutch oven over high heat until shimmering. Add salt pork and cook, stirring occasionally, until browned all over, about 8 minutes. Using a slotted spoon, transfer to a large bowl, leaving rendered fat in Dutch oven, and set aside. (If not using duck fat, cook pork with no additional fat.)
  • Season chicken pieces with pepper (do not add salt) and place skin side down in now-empty pan. Cook without moving until well-browned, 6 to 8 minutes. Flip chicken pieces and continue cooking until lightly browned on second side, about 3 minutes longer. Transfer to bowl with salt pork.
  • Add sausages and cook, turning occasionally, until well-browned on both sides. Transfer to bowl with salt pork and chicken. Drain all but 2 tablespoons fat from pot.
  • Add onions to pot and cook, stirring and scraping up browned bits from the bottom of the pot. Cook until onions are translucent but not browned, about 4 minutes. Add drained beans, carrot, celery, garlic, parsley, bay leaves, cloves, and stock/gelatin mixture. Bring to a simmer over high heat. Reduce to low, cover Dutch oven, and cook until beans are almost tender but retain a slight bite, about 45 minutes.
  • Using tongs, remove carrots, celery, parsley, bay leaves, and cloves and discard. Add meats to pot and stir to incorporate, making sure that the chicken pieces end up on top of the beans with the skin facing upwards. Beans should be almost completely submerged. Transfer to oven and cook, uncovered, until a thin crust forms on top, about 2 hours, adding more water by pouring it carefully down the side of the pot, as necessary, to keep beans mostly covered.
  • Break crust with a spoon and shake pot gently to redistribute. Return to oven and continue cooking, stopping to break and shake the crust every 30 minutes until you reach the 4 1/2 hour mark. Return to oven and continue cooking undisturbed until the crust is deep brown and thick, about 5 to 6 hours total. Serve immediately.

Steps:

  • Turn the oven to 170C. Heat 1 tbsp of the oil in a non-stick frying pan and fry the bacon until just crisp. Tip into a shallow, flameproof casserole with a lid. Add the onion and garlic to the pan and fry for 5 mins, until softened. Tip into the casserole.
  • Heat the remaining oil in the pan and fry the chicken thighs until golden brown all over, then add to the casserole. Fry the sausages until brown and add to the casserole with the beans. Pour the stock into the pan, scraping any bits from the bottom, and bring to the boil. Add the tomato puree, tomatoes and herbs, stir well, then pour intion the casserole and season.
  • Remove from the heat and sprinkle the breadcrumbs over the surface in a thick, even layer. Bake uncovered for about 30 mins, until a golden crust is formed. Serve warm.
  • Make the dish to the end of step 2, Cool, then transfer to a freezerproof container, cover and freeze for up to 1 month. To reheat from frozen: turn the oven to 160C. Transfer the cassoulet to a casserole and sprinkle with breadcrumbs. Cook for 1 hour 25 mins or until hot and bubbling and a crust has formed.

4 ounces thick-cut bacon, cut into 1-inch pieces
4 bone-in, skin-on chicken thighs (about 1 1/2 pounds)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 sweet Italian pork sausages (about 12 ounces)
2 tablespoons olive oil, divided
1 yellow onion, finely chopped
3 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes
2 (14.5-ounce) cans great northern or navy beans
1 small handful fresh thyme, tied together with kitchen twine
1 1/2 cups coarse fresh breadcrumbs
2 teaspoons chopped fresh parsley, plus more for garnish
Baguette, for serving

Steps:

  • Prep the chicken and sausages: Pat the chicken dry with a paper towel and season both sides with salt and black pepper. Prick each sausage with the tip of a paring knife in a couple of places. This will prevent them from bursting as they cook.
  • Cook the onions and garlic: Pour off and discard all but a thin layer of fat from the skillet. Return the skillet to the stove over medium heat. Add the onions and garlic and cook for 3 to 4 minutes, until the onions soften.
  • Turn on the broiler: Set a rack about 8 inches from the broiler element and turn on the broiler.

I have not had this in years. It was a popular recipe in the mid 1970's, when I was such a young child (?). I found the recipe in a Better Homes and Gardens recipe booklet. It is a very hearty meal, definitely comfort food!!! It makes me wish for cold weather. Prep time includes simmering method for beans. I hope you enjoy!!!!

1 cup dry navy beans (7-8 oz.)
2 1/2-3 lbs chicken pieces, skinned
1/2 lb cooked Polish sausage
1 cup tomato juice
1 tablespoon Worcestershire sauce
1 teaspoon instant beef bouillon granules or 1 teaspoon chicken bouillon granule
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried oregano, crushed
1/2 teaspoon paprika
1/2 cup chopped carrot
1/2 cup chopped celery
1/2 cup chopped onion

Steps:

  • Rinse the beans and place in medium saucepan.
  • Add enough water to cover by 2 inches.
  • Bring to a boil, reduce heat and simmer for 10 minutes.
  • Remove from heat and let sit for 1 hour.
  • OR, soak beans overnight in a cool place, drain and rinse.
  • Rinse chicken,pat dry and set aside.
  • Halve the sausage lengthwise and cut into 1 inch pieces.
  • In a medium mixing bowl, combine drained beans, sausage, tomato juice, Worchestershire sauce, bouilion granules, basil, oregano and paprika.
  • Set this mixture aside.
  • In a 4 quart crockpot, combine celery, carrot and onion.
  • Place chicken pieces on top.
  • Pour the bean mixture on top of chicken.
  • Cook on low heat for 9-11 hours or high heat for 4 1/2 to 5 1/2 hours.
  • Remove Chicken and sausage with slotted spoon.
  • Mash the bean mixture slightly.
  • Serve chicken, sausage and beans in soup bowls.
  • Serve with crusty bread and enjoy!

  • Brush a large non-stick frying pan with the sunflower oil, using the tip of a pastry brush. Add the sausages to the pan and cook over a medium heat for 10 minutes, turning every now and then until nicely browned on all sides.
  • Meanwhile, trim the celery and peel the carrots and cut them into diagonal slices about 1.5cm/½in thick.
  • Add the onions to the frying pan and cook with the sausages for 6-8 minutes, stirring regularly until softened and lightly browned.
  • Trim the chicken thighs of any visible fat - we find a good pair of kitchen scissors does the job well - then cut the thighs in half.
  • Add the garlic and chicken pieces to the pan with the sausages and onions and cook for 3-4 minutes, turning the chicken twice until coloured all over.
  • Stir in the gammon, celery, carrots, tomatoes, red wine and 300ml/½ pint cold water, then sprinkle over the caster sugar and chilli flakes. Stir in the bay leaf and thyme and season with lots of ground black pepper.
  • Bring the cassoulet to a simmer on the hob, then cover with a lid and transfer to the oven. Cook for 45 minutes.
  • Take the casserole out of the oven and stir in all the beans. Cover with the lid again and put the dish back in the oven for another 30 minutes.
