CHICKEN, BACON, AND POTATO BAKE

Steps:
- Preheat your oven to 400 degrees F. Spray a glass baking dish with olive oil spray. (Depending on the size of the dish, you may need two)
- Wash, peel, and chop your potatoes into 1-inch pieces. Place them in the bottom of the sprayed baking dish.
- Trim and chop your chicken breast into 1-inch pieces, and place them in the bottom of the baking dish along with the potatoes.
- In a small bowl, combine the olive oil, pepper, salt, onion power, paprika, garlic powder, and minced onion. Pour the mixture over the chicken and potatoes, and mix until well coated.
- Place the baking dish in the oven and cook for about 40 minutes (or until the potatoes are tender).
- While the chicken and potatoes are cooking, line a baking sheet with parchment paper. Place the raw bacon slices on the baking sheet, making sure they aren't overlapping. In the same 400 degree oven that the chicken and potatoes are baking in, cook the bacon for about 20-25 minutes (depending on the thickness of your bacon). Set aside on a paper towel lined plate. Once it's completely cool, crumble into small pieces.
- Remove the baking dish from the oven and top with the cooked broccoli, crumbled bacon, and cheddar cheese. Place back in the oven for about 5 minutes, or until the cheese has melted.
- Serve immediately, or store in the fridge for up to 5 days.

- Heat the oven to 375 degrees F. Spray a 13x9x2-inch baking dish with the cooking spray.
- Stir the soup, sour cream, 1 cup cheese, milk, garlic powder and black pepper in a medium bowl.

CHICKEN BACON RANCH CASSEROLE WITH POTATOES

- Preheat oven to 450F
- Grease a 9x13 inch casserole dish with oil spray
- Cut potatoes into one-inch dice
- In a large mixing bowl, mix potatoes with ¼ cup ranch dressing. Add salt and pepper to taste
- Transfer potatoes to the greased casserole dish
- Bake potatoes for 30 minutes, mixing one time through cooking to ensure they all cook evenly.
- Meanwhile, mix chicken with ¼ cup ranch dressing and marinate while potatoes cook
- When potatoes are done, place chicken on top of potatoes and bake 20 mins more (covered with aluminum foil) or until chicken is done. Take the casserole dish out of the oven and top chicken and potatoes with crumbled bacon, cheese, and green onions
- Bake for 10 more minutes, uncovered until the cheese is melted and bubbly.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.

- Put the bacon into a small saucepan of cold water and bring to the boil. Simmer for three minutes, drain, and dry the bacon on kitchen paper.
- Heat a frying pan with two tablespoons of olive oil and sauté the blanched bacon until golden and crisp.
- Remove to a casserole, add the chicken pieces to the pan, adding more oil if necessary.
- Saute the chicken until golden, and remove from the casserole.
- Saute the carrots, onions and garlic for a minute or so, in the same oil. Return the bacon and chicken to the pan and pour in the stock, adding a sprig of thyme (or rosemary or sage).
- Simmer in a preheated oven at 160C for about 45 minutes, or until the chicken is tender.
- Skim any fat from the top of the casserole and sprinkle with chopped parsley to finish. Serve with mashed potatoes.

- Put oven rack in middle position and preheat oven to 450°F.
- Peel potatoes and cut into 3/4-inch cubes.
- Transfer potatoes to a 2 1/2-quart shallow baking dish and toss with oil, rosemary, salt, and pepper.
- Arrange potatoes in 1 layer and scatter bacon on top.
- Bake until bacon is crisp and potatoes are cooked through and golden around edges, about 35 minutes.
- Loosen potatoes with a metal spatula before removing from dish.

I threw this together one nite I hadnt been to the grocery store and had just a few items in the fridge that needed to be used so this is what my brain came up and it wasnt to shabby and Im asked to make it quite often now, dont know what to call it,chicken bacon and potato skillet casserole maybe??

- season your chicken however you like (I use montreal chicken, kickin chicken or just any chicken seasoning) and cook in a skillet with a little butter on med low heat till throughly cooked. in a different skillet cook your bacon and drain add to cooked chicken. In another deep skillet add some butter and your potatoes cook potatoes until soft and just a little crisp add your onions when potatoes are slightly browned add your chicken mixture. in a med bowl put your cream of chicken soup and then fill one can with milk and add that to the soup and mix well pour over chicken and stir. continue cooking on med low heat until warm.
- you can also put this mixture in a casserole dish and top with shredded cheese and bake at 350* until cheese is melted

- Preheat oven to 500 degrees.
- In large bowl mix olive oil, salt, pepper, paprika, garlic powder and hot sauce.
- Add potatoes to bowl and allow to marinate for 10 minutes.
- Using a strainer and another bowl, drain the potatoes. Collect all remaining sauce in one bowl and set aside.
- Coat baking dish with cooking spray.
- Spread potatoes evenly in baking dish and bake for 45 minutes, stirring every 15 minutes.
- Fry bacon and set aside to drain.
- Using the bacon grease, brown the chicken cubes and add them to the remaining sauce. Coat the chicken cubes evenly in the sauce.
- Once potatoes are done, spread the chicken on top. Bake for 12 minutes.
- Crumble the bacon, grate the cheese, and chop the green onions.
- Layer the cheese, bacon, and half of the green onions and bake for 3 - 5 minutes more, until the cheese is melted.
- Add fresh green onions before serving.

A recipe I found for Scotland at All British Foods.com., posting for ZWT6. Sometimes also called 'stovies' this Scottish recipe derives from the French etouffer, to cook in a closed pot, and dates from the strong Scottish/French links of the seventeenth century. It makes a filling family dish which can safely be left to its own devices; a little extra cooking time will not spoil the flavour.

- Heat half of the butter and the oil in a large frying pan and fry the chicken and bacon for 5 minutes, until lightly browned.
- Place a thick layer of potato slices, then onion slices, in the base of a large ovenproof casserole. Season well, add the thyme and dot with half the remaining butter.
- Add the chicken and bacon, season to taste and dot with the remaining butter. Cover with the remaining onions and finally a layer of potatoes. Season and dot with butter. Pour over the stock.
- Cover and bake at 150°C (300°F) mark 2 for about 2 hours, until the chicken is tender and the potatoes are cooked, adding a little more hot stock if necessary.
- Just before serving sprinkle with snipped chives.

- 1. Preheat oven to 400 degrees. Grease 9 x 13 dish with cooking spray.
- 2. Place cubed chicken, potatoes, garlic, celery, & onion in dish and toss together.
- 3. Mix water & chicken boullion until dissolved (or you can use 1/2 cup chicken broth).
- 4. Melt butter and add to chicken broth, also add cream of chicken soup, lemon juice, oregano, and italian seasoning, mix well, then pour over top of chicken and potatoes.
- 5. Season with salt & pepper to taste.
- 6. Cover with foil and bake for approximately 45 minutes, then uncover and bake for another 20-25 minutes.
LOW-CARB CHICKEN AND BACON CASSEROLE
I made it the first time because I was craving something that was sort of like a chicken cordon blue, but with bacon, broccoli and provolone, since that's what I had in the fridge! I also wanted it to be a casserole so my wife could make it when she got home from. So I made it in the morning, put it in a baking dish in the fridge and they cooked it up when they got home. If you're not a big fan of mustard, certainly reduce it, or omit it altogether, it should still be just as good.

- Pre-heat oven to 350.
- Cut bacon into 1" pieces and fry until mostly crisp.
- Cut chicken into cubes and cook in a frying pan until it is no longer pink.
- Place chicken and bacon into a bowl, and put in the fridge to cool.
- In a mixing bowl combine broth, cream, mustard, herbs and salt and pepper to taste.
- When chicken and bacon has cooled most of the way, stir in shredded cheese and broccoli.

- Cook and crumble bacon. Set aside for later use. While cooking, cut chicken into bite-sized pieces.
