My mother gave me this recipe several years ago, and we have prepared it often ever since. It can be a meal in itself...or serve it along with a Mexican meal. I often take it to potlucks and watch it disappear in no time!

1 can (15 ounces) pinto beans, rinsed and drained
1 bunch green onions with tops, sliced
1 large tomato, seeded and chopped
1 medium ripe avocado, peeled and chopped
1 bottle (8 ounces) Catalina salad dressing, divided
2 cups shredded cheddar cheese
1 medium head lettuce, torn into bite-size pieces
4 cups corn chips

Steps:

  • In a large salad bowl, toss together the beans, green onions, tomato, avocado and half of the Catalina dressing. Top with cheese and then lettuce. Refrigerate. Just before serving, add corn chips to salad and toss. Serve with remaining dressing.

bagged lettuce, preferably hearts of romaine
2 roma tomatoes, chopped
2/3 cup sharp cheddar cheese, GRATED
2/3 cup corn
2/3 cup tortilla chips, crushed
1 cup ranch dressing, from bottle
1/4 cup salsa
1/4 teaspoon chili powder
1/4 teaspoon cumin

Steps:

  • Mix all salad ingredients together in large serving bowl.
  • Mix all dressing ingredients together in a cup or small bowl.
  • Toss with dressing or serve on the side.
  • If preparing ahead of time, wait to add chips so they stay crisp.

1 package Farmland® Cubed Ham
½ cup red peppers, roasted, sliced
½ cup corn
8 cherry tomatoes, halved

2 cups mixed salad greens
¼ cup crispy tortilla strips
¼ cup salsa

Steps:

  • Cook bacon in skillet then crumble on paper towel.
  • Heat oven to 425 degrees F.
  • Spread Farmland Cubed Ham, red peppers and corn on parchment-lined baking tray.
  • Bake for 10 minutes, tossing half way through.
  • Layer roasted corn in the bottom of the mason jar.
  • Top corn layer with halved cherry tomatoes.
  • Layer cubed ham over tomatoes. Add roasted red peppers, shredded cheese, and mixed greens.
  • Top with chopped Farmland Thick Cut Bacon and crispy tortilla strips.
  • Pair with your favorite dressing or salsa.

I made up this recipe one night, and really liked it so thought I would share. I made it for just myself so if you are making it for more than one person I would adjust the measurements. Speaking of the measurements, I apologize if they are off a bit. It's one of those things you have to adjust the amounts of ingredients to suit your individual taste. I just threw together without measuring anything, but the measurements I provided are my best guess for the best taste. Also, I believe this would be good as a coleslaw type dish if you just omit the baby romaine and spinach and add a little more dressing.

1/2 cup baby romaine lettuce
1/2 cup fresh spinach
1 cup red cabbage, shredded
1 roma tomato, sliced
1 -2 mushroom, sliced
1/4 of a cucumber, sliced
1/4 cup sliced black olives
1/2 of an avocado, cut into thin slices
10 -12 peeled shrimp, depending on size
olive oil
chili powder
cayenne pepper
taco seasoning
lime juice
garlic salt
2 tablespoons light sour cream
1 tablespoon light mayonnaise
to taste taco seasoning
chili powder
cayenne pepper
lime juice
garlic powder, and or garlic salt

Steps:

  • Prepare the salad, in any order you like.
  • Drizzle a frying pan with olive oil.
  • Cook the shrimp over medium heat, seasoning it with mostly taco seasoning, and a few dashes of Chili Powder and garlic salt. Allow the cook to shrimp evenly, periodically drizzling with lime juice, and a small dash of cayenne pepper. (That cayenne pepper can be powerful!).
  • While the shrimp are cooking, prepare the dressing. Whisk the sour cream, light mayo and taco seasoning in a small bowl. Sprinkle with the seasonings and lime juice to taste. If you prefer a creamier dressing, use less lime juice.
  • Top the previously prepared salad with the shrimp and then with your desired amount of dressing.

  • Store in the refrigerator until ready to eat, up to 5 days.
  • Give the mason jar a good shake to mix and use a fork or spoon to stir as needed.
