Ingredients

1 (15 ounce) can seasoned black beans, undrained
1 (15 ounce) can small red beans, drained
1 tablespoon tomato paste
2 tablespoons water
1 (1 ounce) package taco seasoning
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
salt & pepper, to taste
low-fat sour cream
shredded sharp cheddar cheese
Fritos corn chips (Scoops are better)

Steps:

Mix the first 8 ingredients together in a sauce pan. Heat until hot.
Pour into bowls then top with sour cream & cheddar cheese.
Use Fritos to scoop out the beans.

Set a large cast iron or oven proof skillet over medium heat and add the ground beef. Cook 6 to 7 minutes or until brown, drain excess grease. Add the taco seasoning and 2/3 cup water. Cook a few more minutes and remove from heat.
Add to the skillet half the bag of Fritos, corn, salsa, 1 cup of the cheese, kosher salt, and pepper. Stir until evenly mixed. Top with remaining cheese and bake in a 400 degree oven 15 to 20 minutes.Note: If your skillet is not oven proof, transfer this to a 9x13 casserole dish before topping with the cheese. Once it's in the casserole dish top with remaining 1 cup cheese and bake.
Serve with the remaining Fritos over top along with additional toppings such as lettuce, sour cream, and hot sauce.
