It has happened to all of us: A restaurant closes and just like that, a favorite dish is gone forever. For thousands of fans of the Tex-Mex chain Chi-Chi's, which shuttered its last 65 restaurants in 2004, that dish was the chimichanga: a big tortilla stuffed with beef, seafood or chicken, lettuce, jack cheese and salsa, and topped with a secret "zesty Mexi-sauce." We've seen endless message- board posts from fans pondering the recipe and reminiscing about that unforgettable topping. Now they can taste it again: Chefs in Food Network Kitchens re-created the old favorite from memory.

2 tablespoons unsalted butter
4 tablespoons vegetable oil
1 white onion, chopped
3 cloves garlic, chopped
1 jalapeno pepper, diced (remove seeds for less heat)
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Kosher salt
1 small tomato, chopped, plus more for topping
2 tablespoons chopped fresh cilantro
2 1/2 cups shredded rotisserie chicken
1/4 cup sour cream
1 15-ounce can refried beans
4 10-inch flour tortillas
1 cup shredded Monterey Jack cheese, plus more for topping
Mexi-sauce, for topping (recipe follows)
Shredded lettuce, for topping
Mexican rice, for serving
1/2 cup chopped onion
2 chopped garlic cloves
2 4-ounce cans chopped green chiles (drained and rinsed)
1 cup chicken broth
1/4 cup chopped cilantro

Steps:

  • Preheat the oven to 450 degrees F. Melt the butter with 2 tablespoons vegetable oil in a skillet; transfer to a bowl. Heat the remaining 2 tablespoons oil in the skillet. Add the onion, garlic and jalapeno and cook until soft, about 3 minutes. Add the chili powder, cumin, cinnamon and 1 teaspoon salt; toast 30 seconds. Add the tomato and cilantro and cook until slightly dry, about 2 minutes. Stir in the chicken and sour cream and warm through. Remove from the heat.
  • Brush a rimmed baking sheet with some of the butter-oil mixture. Spread 2 tablespoons refried beans down the center of each tortilla, leaving a 2-inch border on both ends. Top with 1 cup chicken mixture and 1/4 cup cheese. Fold in the ends and roll up.
  • Put the chimichangas seam-side down on the baking sheet; brush with the butter-oil mixture. Bake 8 to 10 minutes per side, brushing again after you flip. Top with the sauce, more cheese, lettuce and tomato. Serve with rice and the remaining beans.
  • Saute onions and garlic cloves in a skillet with vegetable oil. Add a pinch each of chili powder, cumin, sugar and salt; cook 30 seconds. Stir in green chiles; cook 2 minutes. Add chicken broth and simmer until thickened, then puree. Stir in cilantro.

I worked at Chi-Chi's for 16+ years. My favorite sauce over all those years was called Diablo Sauce. My favorite food to eat there was the Soft Taco Enchilada style with Diablo Sauce. A little shredded lettuce and pico de gillo on both sides. Yum!

1 (4 ounce) can diced green chilies, with juice
10 tablespoons la victoria green chili salsa
jalapeno (x-tra hot)
3 cups water
1 (1 1/4 ounce) package Ortega taco seasoning (Hot & Spicey)
2 tablespoons cumin
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup water

Steps:

  • Brown ground pork, onions.
  • Add diced chilis, La Victoria salsa.
  • Add 3 cups water.
  • Add Ortega taco seasoning.
  • Add 1/2 tsp salt.
  • add 2 tbsp cumin.
  • combine 2 tbsp corn starch and 1/4 cup water and add too sauce.
  • continue to simmer till thickened.

This is a spot on copy-cat recipe of our favorite dish from everyone's guilty tex-mex go-to, Chi-Chi's. Sadly, they aren't around my neck of the woods anymore, so I make these Copycat Chi-Chi's Chimichanga's in my own kitchen whenever a craving hits!

2 tbs unsalted butter (melted and cooled)
3 tbsp vegetable oil
1 large onion (chopped, divided (put half in a small cup for later))
5 cloves garlic (minced, divided (put two in a small cup for later))
1 jalapeno pepper (stemmed, seeded and diced)
1 1/2 tsp chili powder (plus 1/8 tsp for sauce)
1/2 tsp ground cumin (plus 1/4 for tsp sauce)
1/4 tsp ground cinnamon
1/4 teas sugar (for saus)
Salt
1 tomato (chopped, plus more for garnish)
Fresh cilantro
2 1/2 cups shredded rotisserie chicken
1/4 cup sour cream
1.15 oz can refried beans
4 10" large flour tortillas
8 oz monterey jack cheese (shredded, plus more for topping)
7.5 oz can chopped green chiles (drained and rinsed)
1 cup chicken broth
Shredded lettuce (for topping)
Mexican rice (for serving)

Steps:

  • Preheat the oven to 450 degrees F. Prep a large baking dish that will fit your chimichangas for baking.
  • In a large skillet, heat 2 tbs vegetable oil over medium heat. Add the onion, garlic, and jalapeno and cook for 3 minutes, just until softened. Add the chili powder, cumin, cinnamon, and salt. Toast for 30 seconds until fragrant.
  • Add the tomato and cilantro and cook about 2 minutes longer, until liquid starts to dry. Stir in the chicken and sour cream and remove from heat.
  • Arrange your tortilla with refried beans in the center, leaving a 2" border around the tortilla edges. Top with some of the chicken mixture and cheese. Fold in the short sides of the burrito, then roll up the long sides.
  • Brush the baking dish with a bit of the melted butter and arrange chimichangas seam side down. Brush the tops with a little more of the butter mix.
  • Bake for 8 to 10 minutes, flip, brush with more butter, sprinkle with cheese and bake for 8 to 10 minutes longer.

One of my wife's favorite side dishes growing up was Chi-Chi's sweet corn cake. Since they've gone out of business, I set out to recreate the sweet and savory side dish that she loves. Makes a great accompaniment to Mexican dishes, chili, and bean soups.

Yield Serves 4-6

Number Of Ingredients 14

1 pound sweet corn, cooked or thawed 1 tablespoon butter 3 cups water ½ cup butter, softened ⅓ cup masa harina (corn flour) ¼ cup reserved hot water reserved sweet corn ½ cup sugar 3 tablespoon yellow cornmeal 2 tablespoon whipping cream or milk ¼ teaspoons baking powder ¼ teaspoons salt reserved hot water
1 pound sweet corn, cooked or thawed
1 tablespoon butter
3 cups water
½ cup butter, softened
⅓ cup masa harina (corn flour)
¼ cup reserved hot water
reserved sweet corn
½ cup sugar
3 tablespoon yellow cornmeal
2 tablespoon whipping cream or milk
¼ teaspoons baking powder
¼ teaspoons salt
reserved hot water

Steps:

  • For this recipe you can use either a pound of corn cooked from fresh ears or one pound of thawed corn from bag of frozen corn. Cook or thaw corn according to your choice and set aside. Preheat oven to 350°F. Grease an 8x8 baking dish with butter and set aside. Bring 3 cups of water to a boil in a small sauce pan. Set aside. In a large bowl, beat butter until fluffy. Gradually beat in masa harina. On low speed, beat in water. Coarsely chop corn in a food processor using pulse speed until it is mostly, but not complete, broken down. Add corn to masa mixture and stir well. In a small bowl, stir together sugar, cornmeal, cream, baking powder, and salt. Stir into corn mixture. Pour mixture into prepared 8x8 baking pan. Level with a spatula and cover with foil. Place in a 9-inch-square baking pan or larger. Pour reserved hot water half way up the side of the smaller pan. Bake at 350°F until center of corn cake has set, about 1 hour. Note that the corn cake will be moist and very crumbly. Remove smaller pan from water, uncover, and let stand 15 minutes before serving.
