2 ounces butter
4 prepared duck breasts, cut in half
3 shallots, peeled and chopped fine
5 tablespoons white wine
2 ounces honey
1/2 small lemon, juice of
1 tablespoon chopped fresh sage
1 slice fresh lemon rind (go once around the lemon with a vegetable peeler)
salt and black pepper
1 cup double cream
1/2 red onion, finely chopped
4 stalks rhubarb, finely sliced
1/4 cup dried currant
1/4 cup sugar
2 tablespoons balsamic vinegar

Steps:

  • For the relish, place the onion, rhubarb, currants, sugar and water into a saucepan and simmer 30 minutes until tender.
  • Stir in the balsamic vinegar and cool.
  • Melt the butter in a skillet and lightly fry the duck pieces on both sides.
  • Add the shallots and cook until soft.
  • Carefully remove the duck pieces and keep warm.
  • Strain off any excess fat.
  • Add the wine to the shallots and bring to the boil; stirring, then add the honey and lemon juice.
  • Stir until the honey has dissolved, then add the sage, lemon rind and seasoning.
  • Stir in the cream and heat through thoroughly.
  • Return the duck pieces to the skillet, cover and simmer very gently for 15 minutes, or until tender.
  • Place the duck pieces on a warm serving dish.
  • Remove the lemon rind from the sauce and spoon over duck pieces.
  • Serve garnished with the rhubarb relish and accompanied by minted new potatoes and green peas.

1small duck , about 1.5kg/3lb 5oz
1 tsp sunflower oil
2 tsp five spice powder
200g clear honey
2 tbsp dark soy sauce
2 tsp dry sherry
2 tsp Dijon mustard

Steps:

  • About an hour before cooking, take the duck out of the fridge to come to room temperature. Heat oven to 140C/ 120C fan/gas 1. Pull out and discard any large lumps of fat from inside the duck, then rub it all over with some salt, the oil and five-spice powder. Sit the duck in a roasting tin, then roast for 2 hrs.
  • For the glaze, mix the honey, soy, Sherry and mustard in a bowl. When the duck has had its time, remove it from the oven, pour off any fat from the tin and baste generously with the glaze. Turn the oven up to 190C/170C fan/gas 5 and roast the duck for a further 20 mins until sticky and bronzed. Remove the duck to a clean dish to catch any juices and allow it to rest for at least 20 mins before serving.
  • To make a simple gravy, pour the juices from the roasting tin into a jug or bowl and leave to settle. Use a ladle to remove the fat from the juices, then tip the juices back into the saucepan and reheat to serve.

1 (4 pound) whole duck, rinsed
1 teaspoon chopped fresh basil leaves
1 teaspoon chopped fresh ginger root

½ orange, quartered
2 cups water
1 cup honey
½ cup butter
1 teaspoon lemon juice
½ cup undiluted, thawed orange juice concentrate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl mix together mix together the basil, ginger and salt and sprinkle mixture on inside and outside of duck. Stuff duck with orange quarters and lay in roaster. Add water.
  • In a small saucepan combine the honey, butter, lemon juice and orange juice concentrate. Simmer together over low heat until syrupy; pour a little of the mixture over the duck, saving the rest for basting. Cover roaster.
  • Bake/roast ducks in preheated oven for 30 minutes. Turn duck breast down, reduce heat to 300 degrees F (150 degrees C) and roast covered for another 2 to 2 1/2 hours, or until very tender. If desired, turn duck breast up during last few minutes of cooking, to brown.

Herb Rub
6 fresh bay laurel leaves, or 2 dried
1/4 cup fresh rosemary leaves
2 tablespoons fresh English thyme leaves
4 teaspoons juniper berries
Thinly sliced zest of 1/2 orange (removed with a zester)
2 teaspoons salt
2 teaspoons freshly ground black pepper
2 whole 5-pound ducks, Peking or Muscovy
Stock
2 tablespoons vegetable oil
1 small onion, coarsely chopped
1 small carrot, coarsely chopped
1 rib celery, coarsely, chopped
6 3-inch sprigs fresh English thyme
2 bay laurel leaves,fresh or dried
Sauce
2 cups full-bodied red wine, such as Cabernet Sauvignon or Merlot
1 medium shallot, finely chopped (about 1/3 cup)
1 cup dried tart cherries (see Note)
2 tablespoons finely chopped fresh sage
1 teaspoon finely chopped fresh English thyme
2 teaspoons balsamic vinegar
Salt and freshly ground black pepper

Steps:

  • 1. Herb rub. If using fresh bay leaves, pull out the center veins. Combine all the ingredients for the herb rub in a spice mill or blender and grind to a coarse paste.
  • 2. Marinating the duck. Cut up the ducks by removing the 2 legs and the 2 boneless breasts (with skin) from each bird. Reserve the necks and carcasses. Score the skin on the breasts by drawing a very sharp knife across the skin in a diagonal crisscross pattern, 4 or 5 lines in each direction. Be careful to cut only into the skin and not into the flesh. This helps render the fat quickly when the breasts are cooked. Rub the duck breasts and legs with the herb paste as evenly as you can, rubbing some inside the scored cuts. Put them in a medium bowl, cover, and let marinate in the refrigerator for at least 3 hours or as long as 24 hours.
  • 3. Stock. Cut the wings off the duck carcasses, remove as much skin and fat as comes off easily, and cut the carcasses in half (you can bend them until they snap, then cut between bones, or use a cleaver). You should now have 4 wings, 4 pieces of carcass, and 2 necks. Heat the oil in a large (6- to 8-quart) heavy-bottomed pot over high heat. Add these 10 pieces to the pot and brown them for 10 to 12 minutes, turning once or twice. This step is important for building flavor in the stock but not all of the surfaces need to be evenly brown. Pour off the fat that has accumulated in the pan, then pour in enough cold water to barely cover the bones. Bring the stock to a boil, turn the heat to very low, and skim off any fat or foam that rises to the surface. Add the onion, carrot, celery, thyme, and bay leaves and gently simmer uncovered for 2 to 3 hours.
  • Sauce. Strain the stock, discard the bones, and return the stock to the pot. Add the wine, shallot, and cherries. Boil the sauce until it is thickened and reduced to about 2 cups, 45 to 60 minutes. (The sauce can be made a day ahead and refrigerated for up to 2 days.)
  • Roasting the legs. Preheat the oven to 425°F. About 45 minutes before serving, heat a large (10- to 12-inch) ovenproof skillet (cast iron works well) over medium-high heat. Pour in a film of vegetable oil and heat. Add the duck legs skin side down and cook until the skin side browns, 4 to 5 minutes. Without turning the legs over, put the pan in the oven and roast for 10 minutes. Turn the duck legs and continue to roast until the skin is very brown and crisp and the meat is tender when pierced with a fork, about 20 minutes longer. Remove them from the oven and let rest on a plate in a warm spot.
  • 6. Sautéeing the breasts. When the legs have been in the oven for 20 minutes, begin to cook the breasts. Pour a thin film of oil into another large (12-inch) skillet and heat it over medium heat until hot. Add the duck breasts skin side down, reduce the heat to medium-low, and let cook slowly and undisturbed. After 5 minutes, about 1/2 inch of fat will have rendered into the pan, which will help render the remaining fat from under the skin. Continue to cook the breasts until the skin is very brown and crisp, another 5 to 10 minutes. If the rendered fat rises above the level of the skin and the duck meat begins to be submerged, pour some of it off into a small bowl. This will prevent the breast meat from overcooking before the skin is crisp. When the skin is crisp but not blackened, turn the breasts over and cook just 1 minute for rare or 2 to 5 minutes for medium-rare to medium. The meat should feel firm but still springy and an instant-read thermometer inserted horizontally into the breast should register 120°F to 125°F for rare, 130°F to 135°F for medium-rare to medium. The temperature will continue to rise about 10° as they rest. Transfer them to the plate with the legs and let them sit on the back of the stove for 4 to 5 minutes before carving.
  • 7. Finishing. Bring the sauce to a simmer and stir in the chopped sage, thyme, and balsamic vinegar. Taste and season with salt and pepper as needed. Arrange the duck legs on a warmed platter or individual plates. Using a sharp thin knife, slice the breasts on a diagonal 3/8 inch thick and arrange the slices in a fan shape leaning against the legs. Pour the sauce over and around the duck.
  • Resembling giant raisins, sweet and sour varieties of dried cherries from Yakima Valley in Washington are exciting and relatively new ingredients. Dried sweet cherries have a prunelike flavor, but the tart (sour or pie) cherries, which are usually processed with sugar, have a brilliant tangy flavor. When simmered with wine and duck stock, they make a balanced, savory, and full-flavored sauce that plays beautifully off the crispy citrus-rubbed duck in this recipe.

ROAST LEMON-PEPPER DUCK WITH HONEY LEMON SAUCE

2 tablespoons minced lemon zest
1 teaspoon minced thyme
1 teaspoon coarsely ground black pepper
1 teaspoon kosher salt
2 5-pound ducks with neck, giblets and livers removed
2 tablespoons unsalted butter
2 shallots, sliced
1 clove garlic, sliced
1/2 jalapeno pepper, with seeds, finely chopped
2 tablespoons chopped thyme
2 tablespoons chopped sage
2 tablespoons chopped rosemary
1/4 cup honey
1/3 cup fresh lemon juice
3 tablespoons flour
2 cups veal stock or chicken broth

Steps:

  • In a small bowl, combine lemon zest, 1 teaspoon minced thyme, black pepper and salt. Using your fingers, loosen the skins of the ducks over the breastbones, legs and thighs. Tuck the lemon-pepper mixture evenly beneath the skin, covering each breast, leg and thigh. Tie legs together with kitchen twine.
  • Preheat oven to 425 degrees. Heat a roasting pan in the oven for 10 minutes. Place the prepared ducks on a rack in the roasting pan and cook 1 hour 10 minutes. Remove ducks from pan, and bring to room temperature. Quarter the ducks, trimming off any excess fat. Cover, and refrigerate for up to 24 hours.
  • To prepare the sauce, place the roasting pan over medium-high heat, and add butter, shallots, garlic and jalapeno. Saute until softened, about 2 minutes. Add the thyme, sage and rosemary, and saute 1 minute more. Add honey and lemon juice. Make a paste of flour and 1 tablespoon water; add to pan. Add veal stock or chicken broth, and reduce until sauce lightly coats the back of a spoon, about 5 minutes. Sauce may be cooled and refrigerated for up to 24 hours.
  • To serve, preheat oven to 450 degrees. In a small pan over medium heat, reheat sauce. Heat an ovenproof skillet over high heat, and add duck pieces skin side down. Cook over high heat until skin begins to sizzle, about 1 minute. Reduce heat to low, and crisp duck skin 5 to 7 minutes. Cover with a lid or foil, and reheat in oven for 10 minutes. Transfer to a warm platter, and serve with sauce.

Honey-roasted duck
4 175g duck breasts, with skin on
Sea salt and freshly ground black pepper
Pinch of Chinese five spice
Olive oil
1-2 tbsp honey
2 tbsp soy sauce
Sautéed potatoes with garlic and shallot confit
4 banana shallots, roots trimmed
2 large garlic cloves, peeled
75ml extra virgin olive oil
1 tsp caster sugar
Rock salt
1 sprig of thyme
1 bay leaf
6 medium potatoes, peeled (King Edwards or Maris Piper)
2 tbsp Duck Fat
Sea salt and freshly ground black pepper

Steps:

  • For the DUCK: Score the skin of the duck breasts in a criss cross pattern with a very sharp knife. Season the duck breast generously with salt and the five spice and rub into the skin thoroughly.
  • Place the duck breasts, skin-side down, on a dry ovenproof pan and cook over very low heat to render down most of the fat. This may take 8-10 minutes, depending on the thickness of the fat.
  • Save some excess fat for the potatoes later.
  • Now turn up the heat and fry until the skin is crisp. Turn the duck breasts over and cook the other side for another 3-4 minutes. Just before the duck is ready, drizzle the honey and soy sauce over. Toss and turn the duck in the honey and soy and cook until the liquid has reduced to a syrupy glaze. Transfer the duck to a warm plate and leave to rest for 5-10 minutes.
  • Slice the duck lengthways and place on top. Drizzle any remaining pan juices over and finish with a small drizzle of the vinaigrette.
  • For the POTATOES: use a large, sharp cook’s knife, chop the shallots and garlic into very fine dice. Place the shallots and garlic into a heavy-based saucepan with the extra virgin olive oil, a light sprinkling of salt, the sugar, herbs and a splash of water
  • Set the pan over high heat. When the oil becomes hot, adjust the heat to a moderate setting, give the shallots and garlic a stir and cover the pan with a lid. Cook for 20-25 minutes, shaking the pan from time to time and stirring every 5 minutes, to stop the shallots and garlic sticking to the bottom. You should be left with a soft, sweet and lightly golden shallot mixture. Set aside.
  • Cut the potatoes into 1 cm thick slices. Boil in salted water for 6 minutes until just tender. Drain well then pat dry between sheets of kitchen paper. Heat the olive oil in a large sauté pan over high heat. Add the potato slices and season with salt and pepper. Fry for about 3 minutes on each side until lightly golden.
  • Add a tablespoon of the confit and sauté for another 1-2 minutes, tossing and turning the potatoes, until golden and crisp at the edges.

RHUBARB-SOY MARINATED DUCK WITH RHUBARB COMPOTE

1 cup thinly sliced rhubarb
1/2 cup low-sodium soy sauce
1 tablespoon grated ginger
2 small boneless, skinless duck breasts, split
1 teaspoon olive oil
1 1/4 cups rhubarb compote (recipe above)

Steps:

  • Place the rhubarb, soy sauce and ginger in a small saucepan over medium-high heat. Bring to a boil. Reduce heat and simmer for 8 minutes. Strain. Place half of the soy mixture in a shallow glass or ceramic dish. Add the duck breasts and marinate for 1 hour, turning the breasts from time to time.
  • Heat the oil in a medium-size cast-iron or nonstick skillet over medium-high heat. Add the duck and sear until well browned but medium rare in the center, about 4 minutes per side. Remove from the skillet and keep warm. Add the remaining soy mixture to the skillet and deglaze the pan.
  • Cut the breasts on the diagonal into thin slices. Fan the slices out on each of 4 plates and spoon the sauce over them. Divide the compote among the plates and serve immediately.

  • Cut off any rhubarb leaves or roots.
  • Chop rhubarb. (I use the slicing attachment on my food processor.).
  • Place rhubarb in large glass bowl. (I use an 8-cup glass measuring cup.).
  • Cover loosely and microwave for 5 minutes.
  • Stir and microwave another minute or two if needed, until the rhubarb pieces are no longer visible.
  • Stir in honey and cinnamon. Taste! Add more honey or cinnamon, if desired.

mild olive oil, for frying
For the rhubarb sauce
285 ml (1/2 pint) red wine
6 sticks forced rhubarb, cut into 1.5 cm (1/2 inch) chunks
55 g (2 ounces) caster (superfine) sugar
1 vanilla pod, cut in half lengthways and seeds scraped out
4 star anise
1 cinnamon stick
140 ml (1/4 pint) reduced duck stock
For the reduced duck stock
Mild olive oil, for frying
4 large carrots, roughly cut into 2.5 cm (1 inch) dice
2 celery sticks, roughly cut into 2.5 cm (1 inch) dice
2 large Spanish onions, roughly cut into 2.5 cm (1 inch) dice
3 cloves garlic, chopped
4 litres (8 pints) water

Steps:

  • 1. Preheat the oven to 180°C / 350°F / gas mark 4. With a sharp knife, cut the breasts and legs from the ducks. Keep the legs for another dish.
  • 2. Put the carcasses in a roasting tin and cook in the oven for 1 - 1 1/2 hours, until brown. Remove the browned carcasses.
  • 3. Put the roasting tin containing the meat juices over a medium heat and stir in the red wine for the rhubarb sauce. Bring to a boil and reduce until the liquid is syrupy.
  • 4. To make the duck stock, heat a little olive oil in a heavy-bottomed pan and fry the carrots and celery until light brown. Add the onions and garlic and cook, stirring, until golden brown, then add the duck carcasses and cover with water. Bring to a boil and simmer for 4 hours, skimming off any scum that rises to the surface.
  • 5. Strain the stock into a clean saucepan. Bring to a boil and reduce until it is thick enough to coat the back of a spoon.
  • 6. Preheat the oven to 200°C / 400°F / gas mark 6. Season the duck breasts. Heat a little olive oil in a very hot frying pan and quickly sear the breasts until golden on both sides, then roast in the hot oven for approximately 10 minutes. Rest the meat for 5 minutes.
  • 7. Meanwhile, to make the rhubarb sauce, poach the rhubarb in 565ml (1 pint) water with the sugar, vanilla seeds, star anise and cinnamon until the rhubarb is tender but still chunky. Remove the whole spices and gently stir in 140ml (1/4 pint) reduced duck stock and the red wine reduction.
  • 8. Thinly slice the duck breasts and spoon around the rhubarb sauce.
