SHRIMP, WHITE BEAN AND FETA SKILLET



Shrimp, White Bean and Feta Skillet image

In just under 30 minutes you can deliver a delicious shrimp and bean dinner to the table, and there's only one pan to clean up afterwards.

Number Of Ingredients 10

2 tablespoons olive oil
1 small onion, thinly sliced
1 clove garlic, thinly sliced
1 teaspoon Italian seasoning
Kosher salt and freshly ground black pepper
One 14-ounce can diced tomatoes
8 ounces large shrimp, peeled and deveined, tails removed
One 14-ounce can cannellini beans, drained and rinsed
2 packed cups baby spinach (about 2 1/2 ounces)
1/4 cup crumbled feta cheese

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until softened and just starting to turn brown in some spots, 4 to 5 minutes. Stir in the garlic, Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper, and stir until the garlic is softened, about 1 minute.
  • Pour in the tomatoes and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the tomatoes are slightly thickened, 2 to 3 minutes. Add the shrimp and beans and cook, stirring occasionally, until the shrimp just start to turn orange, 2 to 3 minutes. Stir in the spinach and continue cooking, stirring occasionally, until the spinach is just wilted and bright green and the shrimp are cooked through and opaque, 2 to 3 minutes. Remove the skillet from the heat and sprinkle the feta over top. Cover until the cheese is warmed through, 2 to 3 minutes. Serve immediately.

1 pound lean ground beef (90% lean)
1 small onion, chopped
1 package (6 ounces) four-cheese corkscrew pasta mix
2 cups salsa
1 cup hot water
1 tablespoon chili powder
1/2 teaspoon salt
Dash cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded cheddar cheese
Sour cream, optional

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the pasta, contents of seasoning packet, salsa, water, chili powder, salt and cayenne., Bring to a boil. Reduce heat; cover and simmer until pasta is tender, about 15 minutes, adding more water if necessary. Stir in tomatoes; sprinkle with olives and cheese. Cover and simmer until heated through, 3-4 minutes. Serve with sour cream if desired.

2 Tbsp butter
1 Tbsp olive oil
1/2 lb fresh shrimp, peeled and deveined
1/2 poblano pepper (seeded and slivered)
1/2 red bell pepper, sliced
1/4 red onion, thinly sliced
1 garlic clove, minced
2 Tbsp fresh cilantro leaves, chopped
2 Tbsp tequila
1/2 tsp seasoning salt
1/4 tsp chili powder
1/2 tsp ground cumin
1/4 tsp black pepper
1/3 c half and half
2 c angel hair pasta (cooked)

Steps:

  • 1. In a large skillet, heat butter and oil. Add shrimp and cook about 8 minutes or until shrimp are pink and firm. Remove shrimp and set aside.
  • 2. Add peppers, onion, garlic and cilantro to skillet and saute until just barely tender. Remove vegetables and set aside.
  • 3. Off flame - add tequila to skillet and swirl around pan. Add all seasonings and cream and simmer. Allow sauce to thicken slightly.
  • 4. Return shrimp and vegetables to skillet and toss until mixture heats well and coats the shrimp with cream. Serve immediately over hot, cooked pasta. Garnish with parmesan chees and extra cilantro leaves.
