CARAMEL POPCORN BALLS



Caramel Popcorn Balls image

These caramel popcorn balls are made in the microwave in just 15 minutes! Covered in sweet, gooey caramel and perfectly chewy and crunchy.

10-12 cups popped popcorn (, I used skinny pop)
1/2 cup butter (, cut into pieces )
1 cup light brown sugar (, packed )
1/4 cup light corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Pinch salt

Steps:

  • Lay a piece of wax or parchment paper on the counter or on a baking sheet. Place popped popcorn in a large bowl. Set aside.
  • Place butter, brown sugar and corn syrup in a microwave safe bowl. Cook for one minute. Stir and cook two additional minutes for chewy popcorn balls. If you like crunchy popcorn balls, cook an additional minute. Remove from microwave. Stir in vanilla and baking soda.
  • Pour caramel over popcorn and stir until well coated. Allow to cool slightly.
  • Grease hands with butter (or use wax paper or gloves) and shape the popcorn into 2-inch balls. Wrap each ball with plastic wrap or store in a zip top bag or airtight container for up to 2 weeks.

Nonstick cooking spray, for the baking dish
1/2 cup creamy peanut butter
3 tablespoons unsalted butter
One 10-ounce bag marshmallows
7 to 8 cups lightly salted popcorn, freshly popped or your favorite store brand
One 7.25-ounce bottle hardening chocolate sauce, such as Magic Shell

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Set aside.
  • Melt the peanut butter and butter together in a medium saucepan over low heat, then stir in the marshmallows. Continue to stir until the marshmallows are melted.
  • Remove the pan from the heat and stir in the popcorn to coat evenly in the melted marshmallow mixture. Pour the popcorn mixture into the coated baking dish and spread out into an even layer. Drizzle the popcorn with the chocolate sauce. Allow the popcorn treats to cool for 30 minutes, then cut into bars.

I have tryed many recipes over the years for popcorn balls when my son was small, these *are* the best and easy to make, they remain soft and chewy --- they are perfect for a children's Halloween party or for the holidays, I usually get about 25-30 good-sized balls with this recipe :)

3/4 cup light corn syrup
1/4 cup butter or 1/4 cup margarine
2 teaspoons cold water
2 1/2 cups confectioners' sugar, plus
2 tablespoons confectioners' sugar
1 cup mini marshmallows, packed (can use large marshmallow, chopped into small pieces)
5 quarts plain popped popcorn

Steps:

  • Line a large baking sheet/s with waxed paper.
  • Place the popped popcorn into a large heat-proof bowl.
  • In a saucepan over medium heat combine the corn syrup, butter or margarine, cold water, 2-1/2 cups plus 2 tablespoons confectioners sugar and marshmallows; heat and stir until the mixture comes to a boil; remove from heat then carefully pour the hot mixture in with the popped popcorn.
  • Mix with a wooden spoon to combine, carefully coating each kernel.
  • Grease your hands with vegetable shortening.
  • Working as quickly as possible shape the coated popcorn mixture into balls.
  • Make certain that the balls are completely cooled then wrap each ball with cellophane or plastic wrap and store at room temperature (use coloured wrap for the holidays).
  • Place on a baking sheet.

Steps:

  • Melt margarine in a large saucepan over medium heat.
  • Add in marshmallows and stir continuously until smooth.
  • Add in food coloring until desired color.
  • Add in vanilla (be careful it doesn't splash on you when it hits the hot marshmallow mixture).

  • Bring to a boil and cook just till jello and sugar are dissolved.
  • Pour over popcorn and mix well and fast.
