Rum Cake image

Not sure where the recipe is originally from, but it is very intoxicating. Great for a Carribean or Tropical theme...Good for potlucks (not church or job related ones). Best if made the day before and refrigerated. Guessed on prep time and servings...depends on how big you slice the bundt cake and how long you wait between applications of the glaze.

1 (18 ounce) box yellow cake mix
1 (3 3/4 ounce) box jello instant vanilla pudding
4 eggs
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup Bacardi dark rum (80 proof)
1/2 cup butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum (80 proof)

Steps:

  • Cake: Preheat oven to 325 degrees.
  • Grease and flour a 12c.
  • Bundt pan.
  • Mix all cake ingredients together.
  • Pour batter into prepared Bundt pan.
  • Bake for 1 hour and cool completely.
  • Make the glaze while cake is cooling.
  • Glaze: Melt butter in sauce pan.
  • Stir in water and sugar.
  • Bring to a boil for 5 minutes stirring constantly.
  • Remove from heat.
  • Stir in the Rum.
  • Invert the cake onto a serving plate or cake stand.
  • Prick the top of the cake with a toothpick to allow the glaze to soak in.
  • Drizzle and smooth the glaze evenly over the top and sides.
  • Allow the cake to absorb the glaze.
  • Repeat until all of the glaze is used up.
  • (This will take several applications).

1 cup plus 2 tablespoons all-purpose flour
1 teaspoon baking powder
1 cup plus 3 tablespoons sugar
1/2 teaspoon salt
1/4 cup vegetable oil
3 large egg yolks
1 teaspoon almond extract
1 teaspoon lemon zest
5 large egg whites, at room temperature (about 2/3 cup)
1/4 teaspoon cream of tartar
1 cup brewed coffee
1 cup sugar
1 pound cream cheese
3 14 cups heavy whipping cream
1 1/2 cups confectioners' sugar
2 teaspoons vanilla extract
2 cups heavy whipping cream
1 tablespoon confectioners' sugar
Unsweetened cocoa powder, for garnish
Confectioners' sugar, for garnish
Chocolate shavings or chocolate chips, for garnish

Steps:

  • For the chiffon cake: Preheat the oven to 325 degrees F. Spray a baking sheet with nonstick cooking spray and line with parchment paper.
  • Sift together the flour and baking powder into a large mixing bowl. Add 1 cup sugar and the salt and whisk to combine.
  • In a separate mixing bowl, whisk together the oil, egg yolks, 1/3 cup water, almond extract, and lemon zest. Make a well in the middle of the flour, add the wet mixture, and then whisk quickly until very smooth, about 1 minute.
  • Place the egg whites in a large mixing bowl. Using a mixer fitted with a whisk attachment, beat on medium speed until froth forms. Add the cream of tartar and beat on medium-high speed until the whites hold soft peaks. Slowly add the remaining 3 tablespoons sugar and beat on medium speed until the whites hold firm, shiny peaks.
  • Using a rubber spatula, scoop about 1/3 of the whites onto the batter and fold in gently to lighten the batter. Gently fold in the remaining whites just until combined.
  • Pour the batter into the prepared pan, smoothing the top with an offset spatula. Bake until set to the touch, 20 to 30 minutes.
  • For the coffee syrup: In a saucepan, add the brewed coffee and sugar and place over medium-high heat. Bring to a boil and let cool.
  • For the tiramisu filling: Place the cream cheese, heavy cream, confectioner's sugar, and vanilla extract in a large mixing bowl. Mix until well incorporated.
  • For the whipped cream: In a mixing bowl, whip the cream and sugar together until light and fluffy.
  • To assemble the cakes: Cut out individual cakes with large 3-inch cookie cutter rounds. Brush each cake layer with coffee syrup. Stack 2 to 3 cakes on top of each other and pipe tiramisu filling in between each of the layers. Garnish with a dusting of unsweetened cocoa powder and a dusting of powdered sugar, grated chocolate shavings or chocolate chips, and the sweetened whipped cream.

1 (18 ounce) box Duncan Hines yellow cake mix
1/2 cup water
1/2 cup oil
1/2 cup walnuts, chopped
1 cup rum
4 eggs
1 (3 1/2 ounce) box instant vanilla pudding

1 cup sugar

Steps:

  • Preheat oven 350 degrees.
  • Grease and lightly flour one bundt pan, and evenly distribute the the nuts on the bottom of the pan.
  • In a large mixing bowl blend the cake mix, water, oil, 1/2 cup rum, eggs, and the instant vanilla pudding.
  • Pour batter into the greased bundt pan and bake for 1 hour or until a toothpick is instered into the center and it comes out clean.
  • 5-10 minutes before the cake is removed from the oven, combine the remaining 1/2 cup rum, butter, and sugar into a sausepan. Heat on stove until th butter melts and the sugar has dissolved.

1/2 pound unsalted butter
1/2 pound light brown sugar
1 teaspoon vanilla extract
2 teaspoons lime juice
1 teaspoon lime zest
6 eggs
6 ounces bread crumbs
6 ounces flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon cloves, ground
1 1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup with rum
1 pint Port
4 cups mixed marinated fruit, recipe follows, squeezed
1 pound black raisins
1 pound golden raisins
1 pound prunes, cut in quarters or eighths, depending on size.
4 cinnamon sticks
2 vanilla beans, split
5 ounces Jamaican White rum
5 ounces Jamaican Spiced Rum
5 ounces Port wine

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, cream the butter and sugar till light and fluffy. Mix in the vanilla, lime juice, and lime zest. Add the eggs, 1 at a time, and incorporate well.
  • In a separate bowl, combine the bread crumbs, flour, all the spices, baking powder, and salt.
  • In another bowl, combine rum and port. Add flour mixture alternately with rum/port mixture into the batter.
  • Prepare a 9-inch cake or spring form pan by lining bottom and sides with parchment paper. Fill the pan 3/4 of the way and bake until a skewer comes out of the center of the cake clean, about an 1 hour and 10 minutes.
  • Put raisins, prunes, cinnamon sticks, and vanilla beans in a glass jar and cover with mixture of equal parts Jamaican white rum, Jamaican spiced rum, and Port. Cover with a tight fitting lid, label, and date the jar. Put in a cool, dry cupboard. From time to time, check the fruits to see if more liquor is needed, as the fruits will plump and soak up the liquid. Keep the fruit covered in liquor. It is best to allow the fruit to marinated for at least a month for best flavor.

1/3 cup vegetable oil
3 eggs, room temperature
1 (20 ounce) can crushed pineapple in juice
1 cup granulated sugar
1 (3 1/2 ounce) box French vanilla instant pudding
2 cups nonfat milk, cold
2 cups heavy whipping cream
1/2 cup granulated sugar
1 cup sweetened flaked coconut, toasted if you would like

Steps:

  • Preheat the oven to 350 degrees.
  • Prepare at 13 x 9 x 2 inch baking dish with baking spray.
  • Prepare the cake mix as directed on the box.
  • Pour into the prepared baking dish and bake for approximately 32 minutes, or until a toothpick inserted comes out clean.
  • Meanwhile, pour the pineapple along with its juice into a saucepan along with the 1 cup of sugar. Bring this mixture to a boil over medium heat while stirring constantly. Remove from heat and allow it to slightly cool.
  • When the cake is done, remove it from the oven and pierce holes into the cake using the prongs of a fork. Pour the pineapple mixture over the hot cake and set it aside.
  • Prepare the instant pudding according to the package directions. Spread the pudding over the cake/pineapple and refrigerate until it is thoroughly chilled.
  • Whip the heavy whipping cream with the 1/2 cup sugar until it is stiff. Cover the top of the cake with the whipped cream.

2 cups (400 g) granulated sugar
3 large eggs, at room temperature
2 large egg yolks, at room temperature
1 tablespoon vanilla extract
3/4 cup (180 ml) canned Thai coconut milk
Coconut-Rum Syrup
3/4 cup (180 ml) canned Thai coconut milk
6 tablespoons (75 g) granulated sugar
1/2 cup (125 ml) dark rum
Glaze
4 tablespoons (2 ounces/60 g) unsalted or salted butter, cut into pieces
6 tablespoons (90 ml) heavy cream
6 tablespoons (90 g) dark brown sugar
Pinch of salt
1 tablespoon dark rum
1/2 cup (40 g) dried large-flake coconut (unsweetened or sweetened), toasted

Steps:

  • Preheat the oven to 350°F (175°C). Coat a 10-cup (2.5-liter) Bundt cake or tube pan with butter or nonstick cooking spray, dust it with flour, and tap out any excess.
  • To make the cake, into a medium bowl, sift together the flour, baking powder, baking soda, 3/4 teaspoon salt, and the nutmeg.
  • In a stand mixer fitted with the paddle attachment (or in a bowl by hand), beat together the 1 cup (8 ounces/225 g) butter and 2 cups (400 g) granulated sugar on medium speed until light and fluffy, 3 to 5 minutes.
  • In a small bowl, beat together the eggs, egg yolks, and vanilla. With the mixer running, slowly dribble the egg mixture into the butter mixture, stopping the mixer and scraping down the sides of the bowl as needed, until the eggs are completely incorporated. (The mixture may look curdled, which is normal.) Gently stir in one-third of the flour mixture, then about half of the 3/4 cup (180 ml) coconut milk. Mix in about half of the remaining flour mixture, followed by the remaining coconut milk. Finally, gently stir in the remaining flour mixture just until combined.
  • Scrape the batter into the prepared pan and bake until the cakes feels just set in the center, 55 to 60 minutes.
  • While the cake is baking, make the coconut-rum syrup. In a medium saucepan, warm the 3/4 cup (180 ml) coconut milk and the 6 tablespoons (75 g) granulated sugar, stirring until the sugar dissolves. Remove from the heat and add the 1/2 cup (125 ml) rum.
  • When the cake comes out of the oven, leave it in the pan and poke it with a wooden skewer about 60 times. Spoon about two-thirds of the coconut-rum syrup over the cake, letting it soak in gradually. Let the cake cool completely.
  • Invert the cake onto a cake plate. Brush or spoon the remaining coconut-rum syrup over the cake.
  • To make the glaze, in a small saucepan over high heat, bring the 4 tablespoons (2 ounces/60 g) butter, the cream, brown sugar, and pinch of salt to a boil. Cook, stirring to dissolve the sugar, for 1 1/2 minutes. Remove from the heat, stir in the 1 tablespoon rum, and let cool completely. Once cool, stir in the toasted coconut.
  • Spoon the glaze over the top of the cake, encouraging it to run down the sides of the cake (if the glaze seems too thick, rewarm it slightly).
  • Storage
  • The cake can be stored at room temperature for up to 4 days, preferably under a cake dome.
