1 package (12 ounces) frozen pitted dark sweet cherries, thawed
1 cup water
2-1/2 cups sugar
2 tablespoons butter
1/2 teaspoon almond extract
Dash ground cinnamon

Steps:

  • Bring cherries and water to a boil in a small saucepan. Reduce heat; simmer, uncovered, for 20 minutes., Add sugar and butter; cook and stir until sugar is dissolved. Remove from the heat; stir in extract and cinnamon., Cool leftovers; transfer to airtight containers. Store in the refrigerator for up to 2 weeks.

3 cups chokecherry juice (see first step)
6 1/2 cups sugar
1/4 teaspoon almond extract

Steps:

  • Wash chokecherries, place in a large kettle, barely cover with water and cook, covered, for about 30 minutes till the cherries are soft.
  • Mash gently and strain the chokecherry juice through a sieve or cheesecloth.
  • Pour 3 cups juice into a large kettle; stir in the sugar.
  • Cook on high, stirring constantly.
  • Boil hard for 1 minute.
  • Remove from heat and skim foam.
  • Add extract if using (almond extract gives a stronger cherry taste).
  • To can: Pour hot syrup into sterilized hot jars to within 1/8th inch from top.

1 pound cherries (stems and pits removed)
1 cup sugar
1/2 cup water
pinch salt
rind of 1 lemon

Steps:

  • Combine the cherries, pinch of salt and sugar in a medium sauce pot. Allow to rest for 20 minutes.
  • Add the 1/2 cup water and lemon rind to the cherries and sugar. Over medium heat, dissolve the sugar in the cherry syrup.
  • Optional step: with an immersion blender, carefully pulse the cherries a few times to make a smoother, thicker syrup. Temporarily remove the lemon rind if you choose to blend. Return the lemon rind to the syrup for the thickening boil.
  • Bring to a rolling boil, stirring every few minutes until a boil is achieved.
  • Reduce heat to medium. Cook 10 minutes while stirring frequently to prevent scorching. Remove lemon rind.
  • Syrup will thicken slightly when cooled.
  • Cool completely and store in air tight containers in the refrigerator.

4 cups sweet cherries ((fresh or frozen), pitted* )
1/4 to 1/3 cup water
1 Tbsp cornstarch
1 Tbsp lemon juice
2 Tbsp sugar

Steps:

  • In a medium saucepan (off the heat), add water (use 1/3 cup for fresh cherries and 1/4 cup water for frozen cherries). Whisk in 1 Tbsp cornstarch, 1 Tbsp lemon juice, and 2 Tbsp sugar.
  • Place over medium heat and whisk constantly until the mixture starts to thicken.
  • Add cherries and cook stirring occasionally until sauce is at a light boil (about 6-10 minutes for fresh cherries and 12-15 minutes for frozen). The sauce should be thickened and uniformly bubbling, not just at the edges, then remove from heat.
  • Cool to room temperature then cover and store in the refrigerator in a glass mason jar or Tupperware container until ready to use. It will thicken more as it stands.

fresh thyme sprigs or basil sprig, for some extra flavor

Steps:

  • Combine the water, sugar, cherries (and herbs if using) in a saucepan over medium heat. Use the back of a spoon or a muddler to smash the cherries as much as possible. Bring the mixture to a boil and then lower the heat. Let simmer until the sugar is dissolved. Remove from the heat and let cool. Once cooled for about an hour, strain through a fine mesh strainer into a glass jar with a lid. Place in the refrigerator. This can be stored for about one week. Enjoy!
