So easy to make yet special enough for your next cocktail hour or dinner party appetizer, all you need for this Blue-Cheese Spread is two ingredients, cream cheese and a creamy blue cheese such as Roquefort. Whizz them together in the food processor to create a smooth, spreadable consistency then season with salt and pepper and you're ready to serve. Try the spread with our Olive-Oil Toasts or your favorite crackers.

4 ounces cream cheese until smooth
4 ounces creamy blue cheese, such as Roquefort
Kosher salt and freshly ground pepper

Steps:

  • In a regular or mini food processor, pulse cream cheese until smooth. Add blue cheese and process until fully combined. If needed, pulse in water, 1 teaspoon at a time, to reach a spreadable consistency. Season with salt and pepper.

1/2 cup sour cream
1/2 cup mild hot sauce, such as Frank's
2 tablespoons whole milk
One 8-ounce package cream cheese, at room temperature
1 cup chopped chicken (from about 1/2 rotisserie chicken)
1 tablespoon vegetable oil
8 ounces bacon (about 9 slices)
3 stalks celery, finely diced (about 1 cup)
1 1/2 cups shredded iceberg lettuce (from about 1/4 head)
2 medium carrots, shredded (about 1 cup)
1/2 cup store-bought blue cheese dressing
2 scallions, thinly sliced (about 1/4 cup)
Tortilla chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the sour cream, hot sauce, milk and cream cheese in a food processor and process until smooth. Toss the chicken and hot sauce mixture together in a bowl and spread with a spatula in the bottom of a glass 8-inch square baking dish. Cover the baking dish with foil and bake until warmed through, 25 to 30 minutes.
  • Meanwhile, heat the oil in a large nonstick skillet. Add the bacon and cook over medium heat, turning a few times, until evenly browned, 7 to 8 minutes. Transfer the bacon to a paper towel-lined plate to drain; let cool, then crumble.
  • Let the baking dish sit at room temperature, 10 minutes. Uncover the baking dish and scatter over the celery, then the lettuce, then the carrots. Drizzle with the blue cheese dressing and sprinkle with the bacon and scallions. Serve with the tortilla chips.

2 tubs (8 oz. each) whipped cream cheese
1 medium tomato, seeded and finely chopped (about 3/4 cup)
1 cup firmly packed fresh basil leaves
3/4 cup finely shredded parmesan cheese
1/2 cup firmly packed fresh parsley leaves
1/4 cup pine nuts or slivered almonds*
2 cloves garlic, chopped
3 tablespoons olive oil
Keebler® Town House Toppers® Original Crackers
- or -
Keebler® Town House® Original Crackers

Steps:

  • Line 3-1/2-to 4-cup bowl or mold with plastic wrap, allowing excess wrap to extend over sides. Set aside.
  • In medium bowl gently stir together cream cheese and tomato. Set aside.
  • In food processor bowl combine basil, parmesan cheese, parsley, pine nuts and garlic. Cover and process until very finely chopped. With food processor running, slowly add oil through feed tube. Process until mixture is consistency of soft butter.
  • Spread one-third of cream cheese mixture in prepared bowl. Top with one-half of basil mixture. Repeat layers. Spread remaining cheese mixture on top. Cover and refrigerate at least 4 hours.
  • On serving plate invert bowl. Remove plastic wrap. Garnish with tomato and fresh basil, if desired. Serve with crackers.

2 lbs tomatoes, cored, halved and seeded
1 cup blue cheese, crumbled, at room temperature (aged Gorgonzola preferred)
1/2 cup feta cheese, crumbled
1 -3 tablespoon vodka (or white rum) (optional)
1/3 cup extra-virgin olive oil
2 tablespoons chopped of fresh mint

Steps:

  • Preheat oven to 375°F.
  • Arrange tomatoes on a baking sheet in a single layer, cut side up.
  • Bake for 1 hour, until they shrink to half their original size.
  • Let cool, then puree.
  • Just before serving, mash cheeses together with a fork.
  • Stir in tomatoes; mixture should be somewhat coarse.
  • Add vodka or rum.
  • Drizzle with oil and stir to mix; oil should not be completely incorporated.
  • Place in a serving bowl and sprinkle with mint.

3 shallots, finely chopped
2 teaspoons butter
2 cups (8 ounces) crumbled blue cheese
2 packages (8 ounces each) cream cheese, softened
1/2 cup sour cream
2 tablespoons Cognac or brandy
1/4 teaspoon salt
1/4 teaspoon white pepper
1/2 cup chopped walnuts, toasted
Assorted crackers

Steps:

  • In a small skillet, saute shallots in butter until tender. Remove from the heat; cool. , Meanwhile, in a large bowl, combine the cheeses, sour cream, Cognac, salt and pepper. Add shallots and mix well. Line a 3-cup bowl with plastic wrap. Spread cheese mixture into prepared bowl. A recipe that sounded good, but I altered to my personal taste! I like this with crackers, or those soft bread squares. Heck, cut up plain bagels might work also! Since my Dad loves blue cheese, that drew me to this recipe right away!

24 oz cream cheese, softened (3 packages)
4 oz blue cheese, crumbled
1 Tbsp minced cilantro
1/4 c sour cream
1 Tbsp sour cream
2 Tbsp minced parsley
1 Tbsp minced chives
1/2 tsp black pepper (i omit)
1/2 c chopped walnuts (i use chopped pecans, i like it better in this recipe)
onion flakes or chopped fresh onion to taste (one of my additions)
accent if needed (one of my additions)

Steps:

  • 1. On serving plate spread 2 packages cream cheese into 8 inch circle. Combine blue cheese, 1/4 c sour cream, parsley, cilantro, chives and pepper until blended. Spread over cream cheese layer to 1/2 inch of edges. Beat remaining cream cheese and sour cream until smooth, spread over blue cheese to 1 inch of edges. Sprinkle with walnuts just before serving. Serve with breads and crackers.
