1 package (9 ounces) refrigerated cheese tortellini
2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
2 cups vegetable broth
2 cups 2% milk
2 cups half-and-half cream
1/2 cup chopped oil-packed sun-dried tomatoes
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 cup shredded Parmesan cheese
Additional shredded Parmesan cheese, optional

Steps:

  • Cook tortellini according to package directions., Meanwhile, in a Dutch oven, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired.

1 garlic clove, minced
1/2 onion, chopped
3 cups tomato juice (homemade or canned)
3 tablespoons tomato paste
1 tablespoon sweet chili sauce
0.5 (4 ounce) package cheese-filled egg tortellini, uncooked
2 -3 small yellow squash, sliced
1/4 cup dry red wine
1 1/2 teaspoons italian seasoning
2 tablespoons parmesan cheese, grated
salt & freshly ground black pepper

Steps:

  • In a stock pot, melt butter over MED-HI heat; saute onions and garlic.
  • Add all ingredients except tortellini and Parmesan cheese.
  • Bring to a boil.
  • Reduce heat and simmer, covered, for about 15 minutes.
  • While the mixture simmers, prepare tortellini according to package, undercook, slightly!
  • Drain. Add tortellini to soup mixture and simmer for about 5 minutes.
  • Adjust seasonings.
  • Serve in bowls and top with cheese.

4 to 6 cups broth, chicken or vegetable

One 9-ounce package fresh tortellini or 4 servings dried tortellini
Coarse grained salt and cracked black pepper
10 ounces fresh or frozen spinach, defrosted and chopped
1/4 cup freshly grated Parmesan, very loosely packed

Steps:

  • In a 3-quart soup pot, heat olive oil over medium high heat. Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes. Add broth and tomatoes, turn heat up to high, and bring to a boil. Add the tortellini and cook according to package instructions. When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper. Serve immediately. Garnish each serving with a sprinkling of Parmesan.

1 medium onion, chopped
3 medium carrots, chopped
5 garlic cloves, minced
3 cans (28 ounces each) crushed tomatoes, undrained
1 carton (32 ounces) vegetable broth
1 tablespoon sugar
1 teaspoon dried basil
1 bay leaf
3 packages (9 ounces each) refrigerated cheese tortellini
3/4 cup half-and-half cream
Shredded Parmesan cheese and minced fresh basil

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion and carrots; cook and stir until crisp-tender, 5-6 minutes. Add garlic; cook 1 minute longer. Transfer to a 6- or 7-qt. slow cooker. Add the tomatoes, broth, sugar, basil and bay leaf. Cook, covered, on low until vegetables are tender, 6-7 hours., Stir in tortellini. Cook, covered, on high 15 minutes.
